Linguine Casserole is a casserole recipe that everyone will love for a quick and easy weeknight meal. Linguine pasta tossed with a creamy cheese sauce and diced ham.

8 oz uncooked linguine (broke in half)
3 cloves garlic (crushed)
2 c. cubed fully cooked lean ham
1 3/4 c. shredded Swiss Cheese (divided)
1 can reduced-fat reduced sodium condensed cream of mushroom soup, undiluted (10 3/4 oz )
1 c. reduced-fat sour cream
1 medium onion (chopped)

Steps:

  • Cook linguine according to package directions.
  • Meanwhile, in a bowl, combine the ham, 1 1/2 c. cheese, soup, sour cream, garlic and onion. Drain pasta; add to ham mixture and stir to coat.
  • Transfer to a 13 in x 9 in baking dish coated with cooking spray. Cover and bake at 350 degrees for 35 minutes. Uncover; sprinkle with remaining cheese. Bake 10-15 minutes longer or until cheese is melted.

1 pound Ground beef
1 teaspoon Garlic Minced
24 oz Pasta Sauce
8 oz Linguine
16 oz Sour cream
8 oz Cream Cheese Softened
1 bunch Green Onion Chopped
6 oz Mozzarella Shredded

Steps:

  • Brown beef with garlic in Dutch oven coated with spray, until beef is crumbly & no longer pink. Drain. Stir in pasta sauce; simmer 30 min. Set meat sauce aside. Cook pasta and then place in 13 x 9 inch dish coated with spray. Combine sour cream, cream cheese & green onions. Spread over linguine & top with meat sauce. Bake @ 350o for 20 - 25 min until heated. Sprinkle with mozzarella & bake 5 min more to melt cheese. Let stand 5 min before serving.

olive oil
3 garlic cloves, chopped
1 onion, chopped
1/2 cup celery, chopped
1 cup mushroom, rough chop (I use a medley of Oyster, Kikurage, Shitake and Champignon)
8 ounces kraft brand neufchatel cheese
1 (10 1/2 ounce) can cream of mushroom soup
3/4 cup milk
1/4 cup cheddar cheese, shredded
1/4 cup parmesan cheese, shredded
1 lb linguine, cooked and drained
12 ounces canned albacore tuna, drain and rough chunk
1/2 cup shredded medium sharp cheddar
1/2 cup jalapeno potato chips, crumbled (I use Lay's Bistro Gourmet )

Steps:

  • Heat oven to 350°F.
  • Lightly oil a 13 x 9 baking dish, set aside.
  • Sauté garlic, onion and celery in olive oil till translucent, stir in mushrooms, set pan aside.
  • In a large microwave safe bowl combine Neufchatel cheese, soup and milk, heat to warm, whisking till smooth.
  • Add sauté mixture and the next two cheeses to bowl, stirring to combine.
  • Into the same large bowl add the linguine and tuna, add these in small increments to coat evenly. Pour into prepared baking dish. Top with remaining cheddar cheese and potato chips.
  • Bake 20- 25 minutes until hot and golden. Ovens vary.
