Cannellini and Lentil Soup with Caramelized Onions image

Yield Makes about 9 cups, serving 4 as a main course

Number Of Ingredients 12

3/4 cup dried cannellini beans (about 5 ounces), picked over
12 cups water
3/4 cup dried lentils
1/3 cup bulgur
1/3 cup long-grain white rice
2 teaspoons ground coriander
1 teaspoon ground cinnamon
2 medium onions, halved lengthwise and sliced thin
2 tablespoons olive oil
2 teaspoons salt
cayenne to taste
1/2 cup packed fresh parsley leaves, washed, dried, and minced

Steps:

  • In a 4-quart heavy saucepan simmer cannellini beans in water 10 minutes. Stir in lentils, bulgur, rice, coriander, and cinnamon and simmer until cannellini are very tender and lentils fall apart, about 45 minutes. (Old beans may take longer to cook.)
  • Preheat oven to 450°F.
  • In a shallow baking pan toss together onions, oil, salt, and cayenne and roast in middle of oven, stirring occasionally, until golden brown, about 20 minutes. Stir onions and parsley into soup and simmer 1 minute.

4 strips bacon, chopped
1 cup shredded carrots
1 large onion, chopped
1 teaspoon olive oil
6 cups chicken broth
3 cups water
1 cup salsa
16 ounces dried lentils, rinsed
1 bay leaf
1 teaspoon ground cumin
1 teaspoon dried rosemary
salt and ground black pepper to taste
1 (10 ounce) package fresh spinach, torn
1 cup cubed potatoes

Steps:

  • Place bacon in a large skillet or Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Stir in carrot, onion, and olive oil cooking until tender, about 5 minutes.
  • Cover bacon mixture with chicken broth, water, and salsa; mix in lentils, bay leaf, cumin, rosemary, salt, and pepper. Bring to a boil over high heat; reduce heat to low, cover, and simmer until lentils are tender, 40 to 50 minutes. Stir in spinach and potatoes; simmer until spinach is wilted and potatoes are cooked, 10 to 15 minutes longer.

1 tablespoon extra-virgin olive oil
1 large yellow onion, thinly sliced
2 cans (15 ounces each) lentils, rinsed and drained
2 1/4 cups low-sodium chicken or vegetable broth
Coarse salt and ground pepper
1/4 cup plain low-fat yogurt, for serving
2 tablespoons chopped fresh herbs, such as parsley, chives, marjoram, or a combination, for serving

Steps:

  • In a medium saucepan, heat oil over medium-high. Add onion and cook, stirring occasionally, until soft and edges are browned, about 15 minutes. Add lentils and broth and season with salt and pepper. Bring to a boil; reduce to a medium simmer and cook, gradually smashing some lentils against the side of pan with a spoon to thicken soup, 10 minutes. Serve topped with a dollop of yogurt and herbs.

  • To caramelize the onion, heat the olive oil in a pan over moderate heat. Throw in the onion and cook until beginning to brown. Continue to cook until onions are brown, sweet, and sticky.
  • While the onions are caramelizing, in a medium saucepan, combine lentils with water, broth, cayenne, turmeric, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer until lentils are soft and beginning to break down. You could smash some of the lentils against the side of the pan with a spoon to thicken the soup. Add the caramelized onions to the soup. If lentils look too dry, you could add more water or broth.
  • Turn off heat, and stir in chopped parsley and lemon juice. Ladle into bowls and serve with the low-fat yogurt (use soy for vegan) and the chopped fresh herbs.
