When I was young, my family grew our own cabbages. It was fun to put them to use in the kitchen, just as I did with this comforting side. With potatoes, deviled eggs and cornbread, fried cabbage tastes like home. -Bernice Morris, Marshfield, Missouri

2 tablespoons butter
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
6 cups coarsely chopped cabbage
1 tablespoon water

Steps:

  • In a large skillet, melt butter over medium heat. Stir in the sugar, salt, pepper flakes and pepper. Add the cabbage and water. Cook for 5-6 minutes or until tender, stirring occasionally.

Warming Indian spices kick up cabbage a few notches for a quick, easy, and healthy side dish. I like to serve this with garlic naan bread, placing a bit of cabbage between the naan, to make a sandwich.

1 tablespoon coconut oil
1 cup sliced red onion
1 large clove garlic, minced
½ teaspoon cumin seeds
½ head green cabbage, thinly sliced
1 teaspoon salt
1 teaspoon curry powder
½ teaspoon garam masala

Steps:

  • Heat coconut oil over medium-high heat in a large nonstick pan or wok. Add red onion and saute for 1 minute. Stir in garlic and cumin seeds and stir-fry for 1 minute. Add cabbage and toss until coated with oil. Season with salt, curry powder, and garam masala. Cook and stir until cabbage is tender, about 5 minutes.

2 tablespoons oil
1/2 teaspoon mustard seeds
1 lb green cabbage, sliced very thinly
1/2 teaspoon ground turmeric
2 garlic cloves, minced
1/2-1 teaspoon salt
1/2 teaspoon cayenne

Steps:

  • Heat oil in a large wok over high heat. When the oil begins to smoke, add the mustard seeds, covering the wok with a lid or spatter screen. After the seeds stop sputtering, add the cabbage. Add the turmeric, garlic, salt and cayenne and toss well.
  • Reduce the heat to medium and stir occasionally until crisp-tender. (The original recipe suggests you cover and steam the cabbage for 5 minutes but I don't have a cover so just mixed it around for 5 to 10 minutes.) Serve hot.

1 (4.5 ounce) can mushrooms, with liquid
1 onion, chopped

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Stir in butter, cabbage, celery, green pepper, salt, pepper, mushrooms and onions. Cover skillet and steam for 15 to 20 minutes. Stir several times during the course of steaming.
