3/4 cup graham cracker crumbs
2 tablespoons sugar
3 teaspoons ground cinnamon
2 tablespoons butter, melted
FILLING:
5 packages (8 ounces each) cream cheese, softened
1-2/3 cups sugar
1/8 teaspoon salt
1/4 cup lemon juice
1-1/2 teaspoons vanilla extract
5 large eggs, room temperature, lightly beaten
Thin lemon slices, optional

Steps:

  • Preheat oven to 325°. Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan., In a small bowl, mix cracker crumbs, sugar and cinnamon; stir in butter. Press onto bottom of prepared pan; refrigerate while preparing filling., In a large bowl, beat cream cheese, sugar and salt until smooth. Beat in lemon juice and vanilla. Add eggs; beat on low speed just until blended. Pour over crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake 70-80 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool cheesecake on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. If desired, top cheesecake with lemon slices.

Several of my friends have joined together to create a group called the Loozin Floozies. We get together ever Monday night to weigh in and cook some healthy and lower calorie meals. We have come up with some very delicious alternatives and have fun to boot.

2 pkg sugar free lemon jello
1 c warm water
2 pkg 1/3 fat cream cheese
1 1/2 c stevia or splenda
24 oz fat free cool whip
1 1/2 pkg graham crackers, crushed
1 stick real butter

Steps:

  • 1. 9x13 glass casserole dish Mix graham cracker crumbs with melted butter and press into casserole. Refrigerate while you prepare the filling.
  • 2. In a small bowl warm the water in the microwave and empty both packages of jello into the water, dissolve thoroughly.
  • 3. In a large bowl with mixer cream the cheese and the sweetener together until light an fluffy. Mix the jello into the cream cheese mixture then fold in the cool whip.
  • 4. Spread evenly over refrigerated crust. You can sprinkle some graham cracker crumbs on top if desired....put back into refrigerator for about 2 hours before slicing and serving.

3 cups graham cracker crumbs
½ cup butter, melted
1 tablespoon confectioners' sugar
1 (3 ounce) package lemon flavored Jell-O® mix
1 cup boiling water
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and confectioners' sugar. Mix well and press into the bottom of a 10 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool. Turn off oven.
  • Dissolve lemon gelatin in boiling water. Let cool until thick, but not set. In a large bowl, beat cream cheese, white sugar and vanilla until smooth. Set aside.
  • In a separate bowl, whip evaporated milk until thick and stiff peaks form. Pour in lemon gelatin and keep mixing until well blended. Fold in cream cheese mixture.
  • Pour filling into crust. Chill in refrigerator for at least 3 hours before serving.

Steps:

1-1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine, melted
3/4 cup sugar, divided
1 tsp. ground cinnamon
1 env. KNOX Unflavored Gelatine
3/4 cup cold water, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 Tbsp. grated lemon zest
3 Tbsp. lemon juice
1 cup whipping cream, whipped

Steps:

  • Mix graham crumbs, butter, 1/4 cup of the sugar and the cinnamon until well blended. Remove 1/2 cup of the crumb mixture; set aside for later use. Press remaining crumb mixture firmly onto bottom of 9-inch springform pan. Sprinkle dry gelatine over 1/4 cup of the water in small saucepan. Let stand 1 minute. Cook on low heat 5 minutes or until gelatine is completely dissolved, stirring occasionally.
  • Beat cream cheese and remaining 1/2 cup sugar in large bowl with electric mixer on medium speed until well blended. Gradually add gelatine mixture, remaining 1/2 cup water, the lemon peel and juice. Refrigerate until slightly thickened. Gently stir in whipped cream; pour over crust. Sprinkle with the reserved crumb mixture.
  • Refrigerate several hours or until firm. Run small knife or metal spatula around rim of pan to loosen cake; remove rim of pan. Store leftover cheesecake in refrigerator.

1 1/2 cups shortbread cookie crumbs (about 18 cookies)
1/3 cup butter, melted
2 (8 ounce) packages cream cheese, softened
1 cup whipping cream
1/2 cup sweetened condensed milk
1 tablespoon finely grated lemon zest
1 tablespoon finely grated lime zest
1/4 cup lime juice
1 tablespoon granulated sugar
lemon rind, curls and lime rind curls to garnish (see tip at end of recipe)

Steps:

  • Stir cookie crumbs with butter in a bowl until moistened; press into the bottom and up the sides of a 10-inch pie plate. Refrigerate until firm, about 30 minutes.
  • Beat together cream cheese, HALF of the cream, the condensed milk, lemon and lime rinds, lime juice and sugar in a bowl until fluffy. Scrape into prepared crust, smoothing top. Cover loosely and refrigerate until firm, about 4 hours. (Make-ahead: Refrigerate for up to 2 days.).
  • In bowl, whip remaining cream. Using piping bag or spoon, pipe rosettes or dollop onto top of cake. Top each with 1 each lemon and lime curl.
  • Tip: To make lemon and lime rind curls, use a channel cutter to cut long strands of rind, pressing gently to avoid cutting into the white pith. Roll around handle of wooden spoon; refrigerate for 30 minutes or until curls hold shape.

110g digestive biscuits
50g butter
25g light brown soft sugar
350g mascarpone
75g caster sugar
1 lemon, zested
2-3 lemons, juiced (about 90ml)

Steps:

  • Crush the digestive biscuits in a food bag with a rolling pin or in the food processor. Melt the butter in a saucepan, take off heat and stir in the brown sugar and biscuit crumbs.
  • Line the base of a 20cm loose bottomed cake tin with baking parchment. Press the biscuit into the bottom of the tin and chill in the fridge while making the topping.
  • Beat together the mascarpone, caster sugar, lemon zest and juice, until smooth and creamy. Spread over the base and chill for a couple of hours.

I got this recipe in 1980 when I worked at University of Michigan hospital. The ward secretary on our unit always brought this to our potluck lunches. Everyone loves it because of its great cheesecake flavor without the heaviness of regular cheesecake. Easy to make, easier to eat!

2 cups graham cracker crumbs
2 tablespoons sugar
6 tablespoons butter, melted
6 ounces lemon Jell-O gelatin
2 cups boiling water
8 ounces cream cheese
12 ounces evaporated milk, chilled

Steps:

  • Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
  • Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
  • Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
  • Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
  • In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
  • Add Jello mixture to evaporated milk and continue to beat until well blended.
  • Pour over Graham cracker crust.
  • Chill until firm.

1/2 cup butter, melted
3/4 cup sugar
2 cups Zwieback Toast Crumbs, finely crushed
2 teaspoons ground cinnamon
2 tablespoons gelatin
1 cup water
3 eggs, separated
16 ounces cream cheese, softened
1 lemon, juice and zest of, finely grated (3 tablespoons juice and 1 tablespoon zest)
1/4 teaspoon salt
1/2 cup heavy cream

Steps:

  • Blend butter, 1/4 cup of the sugar, crumbs and cinnamon.
  • Press 3/4 of this mixture on the bottom of a 9-inch springform pan.
  • Soak gelatin in 1/2 cup cold water for five minutes.
  • Cook egg yolks, remaining 1/2 cup sugar and remaining 1/2 cup water in a double boiler, stirring constantly, until mixture coats the spoon.
  • Remove from heat; add softened gelatin and stir until dissolved.
  • Mix with cream cheese gradually; add lemon juice, rind and salt and beat thoroughly.
  • Cool; when mixture begins to congeal, beat for several minutes with a mixer.
  • Whip cream; beat egg whites and fold both into gelatin mixture.
  • Pour into crumb lined pan and sprinkle remaining crumbs over the top.
  • Chill until firm.

10 lemon cream sandwich cookies, broken into pieces (about 1 1/4 cups)
2 tablespoons butter, melted
1 teaspoon lemon zest, grated
1 large egg
1 egg yolk
1/4 cup sugar
1 pinch salt
2 tablespoons lemon juice
1 tablespoon unsalted butter
1 tablespoon heavy cream
1/4 cup lemon juice
2 3/4 teaspoons unflavored gelatin (1 envelope)
1 1/2 lbs cream cheese, cut into 1-inch pieces and softened
3/4 cup sugar
1 pinch salt
1 1/4 cups heavy cream, room temperature

Steps:

  • MAKE CRUST; Adjust oven rack to middle position and heat oven to 350 degrees. Process cookies in food processor until finely ground. Add butter and zest and pulse until combined. Press mixture into bottom of 9-inch springform pan. Bake until lightly browned and set, about 10 minutes. Cool completely on wire rack, at least 30 minutes.
  • MAKE CURD; While crust is cooling, whisk egg, egg yolk, sugar, and salt together in small saucepan. Add lemon juice and cook over medium-low heat, stirring constantly, until thick and puddinglike, about 3 minutes. Remove from heat and stir in butter and cream. Press through fine-mesh strainer into small bowl and refrigerate until needed.
  • SOFTEN GELATIN: Combine lemon juice and gelatin in small bowl and let stand until gelatin softens, about 5 minutes. Microwave until mixture is bubbling around edges and gelatin dissolves, about 30 seconds. Set aside.
  • MAKE FILLING: With electric mixer on medium speed, beat cream cheese, sugar, and salt until smooth and creamy, scraping down sides of bowl, about 2 minutes. Slowly add cream and beat until light and fluffy, about 2 minutes. Add gelatin mixture and ¼ cup curd, increase speed to medium-high, and beat until smooth and airy, about 3 minutes.
  • CHILL CHEESECAKE: Pour filling into cooled crust and smooth top. Pour thin lines of remaining curd on top of cake and lightly drag paring knife or skewer through lines to create marbled appearance. Refrigerate until set, at least 6 hours. Remove sides of pan. Serve. (Cheesecake can be covered in plastic wrap and refrigerated for up to 3 days.).
