This rich and indulgent no bake dessert recipe, frozen Cappuccino Pie, is the ultimate summer treat! It's an easy pie recipe that's always a crowd pleaser!

Chocolate Cookie Crust:
20 chocolate sandwich cookies
4 tablespoons unsalted butter,, melted

Cappuccino Pie:
½ cup 2% or whole milk
¾ cup strong brew coffee
1 5.1-ounce instant vanilla pudding mix
2 cups heavy cream,, divided
3 tablespoons confectioners' sugar
1 teaspoon pure vanilla extract
8-10 chocolate sandwich cookies,, for topping

Steps:

  • For Chocolate Cookie Crust: Place cookies in food processor and blend until fine cookie crumbs are formed. Add melted butter, and pulse food processor 3-4 additional times. Spray a 9-inch deep dish pie plate with baking spray and press the cookie crumb mixture into the bottom and up the sides of the pie plate. Place pie plate in freezer to chill for 10-15 minutes.
  • For Cappuccino Pie: Chill a large metal or glass bowl and wire whisk in the freezer for 15 minutes.
  • Meanwhile, in a large bowl, whisk together milk, coffee, pudding mix and ½ cup heavy cream. Set aside.
  • Add remaining 1½ cups heavy cream, powdered sugar and vanilla to chilled bowl. Using a large hand-held whisk or an electric mixer, whip cream until it begins to thicken. Continue to whip cream until soft peaks begin to form. Use caution and do not over mix.
  • Fold half of the whipped cream mixture into the pudding mixture, being careful not to over mix. Pour pie filling into prepared pie crust and store remaining whipped cream in refrigerator until ready to serve.
  • Place pie in freezer and freeze for 4-6 hours, or until frozen. When ready to serve, remove pie from freezer and let sit at room temperature for 15 minutes.
  • Meanwhile, place 8-10 chocolate sandwich cookies in food processor and blend until large cookie crumbs are formed.
  • Right before slicing, spread remaining whipped cream on top of pie and top with large cookie pieces. Slice and serve immediately.

2 (4 ounce) packages instant white chocolate pudding and pie filling mix
2 tablespoons instant coffee
8 ounces whipped topping
1 9-inch chocolate pie crust

Steps:

  • Pour the milk into a medium bowl.
  • Add the pudding mixes,coffee and hlaf the whipped topping.
  • Whisk for 1 minute (the mixture will be thick).
  • Spread in the pie shell.
  • Spread the remaining whipped topping over the top.
  • Chill.

8 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk (Eaglebrand)
6 tablespoons chocolate syrup
1 tablespoon instant coffee
1 tablespoon hot water
1 1/2 cups frozen whipped topping (like Cool-Whip)
6 ounces chocolate wafer pie crust

Steps:

  • Beat the cream cheese with an electric mixer on medium speed until fluffy. Add condensed milk and 4 tablespoons of the chocolate syrup. Beat on low speed until well blended.
  • In a separate bowl, dissolve the coffee powder in the hot water, then stir into cream cheese mixture. Fold in the whipped topping, and pour this mixture into the crust.
  • Cover and freeze overnight. Before serving let stand in the refrigerator for 30 minutes, then drizzle with the remaining chocolate syrup.

2 tablespoons instant espresso powder or dark-roast coffee granules
1 tablespoon boiling water
15 chocolate wafers cookies
6 fat-free devil's food cookies cakes, cut up
1 quart (4 cups) frozen nonfat vanilla yogurt
1/4 cup powdered sugar
dash nutmeg or cinnamon, if desired

Steps:

  • 1. Heat oven to 375°F. Spray 9-inch pie pan with nonstick cooking spray. In small bowl, dissolve espresso powder in boiling water. Set aside to cool.2. Place wafer cookies in food processor bowl with metal blade process 10 to 15 seconds or until fine crumbs form. Add cut-up cookie cakes process 10 to 15 seconds or until fine. Place crumbs in sprayed pan. With spoon, press in bottom and up sides of pan. Bake at 375°F. for 5 minutes. Cool in freezer or refrigerator.3. Meanwhile, spoon frozen yogurt and powdered sugar into food processor bowl with metal blade process 10 to 15 seconds or until yogurt is slightly softened. While machine is running, gradually pour dissolved espresso through feed tube and process an additional 10 seconds or just until blended.4. Quickly spoon mixture into cooled crust spread evenly. Sprinkle with nutmeg. Freeze at least 1 hour or until firm. 1/2 cup hot fudge ice cream topping
1 chocolate cookie crumb crust (6 oz.)
1-3/4 cups cold milk
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 Tbsp. MAXWELL HOUSE Instant Coffee, any variety
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Heat fudge topping as directed on package; pour into crust. Tilt crust to evenly cover bottom with sauce. Freeze until ready to use.
  • Add milk to combined pudding mixes and coffee in large bowl; beat with whisk 2 min. Stir in COOL WHIP. Pour into crust.
  • Freeze 4 hours or until firm. Remove from freezer about 10 min. before serving; let stand at room temperature to soften slightly before cutting into pieces.
