JELL-O LAYERED MARGARITA BITES



Jell-O Layered Margarita Bites image

Margarita Jell-O is not an easy find, so we improvised by using two boxes of lime Jell-o and 1 cup of boiling margarita mix in place of 1/2 the boiling water called for in the recipe. We loved the way it turned out - the perfect light bite for your next adult party. Be sure to garnish with salt... It really makes the dish!

2 c boiling water
2 pkg jell-o brand margarita flavor gelatin
1/2 c tequila
1 grated peel and juice from lime
2 c thawed cool whip topping

Steps:

  • 1. STIR boiling water into dry gelatin mixes with wire whisk in a large bowl at least 2 mins. Stir in tequila and 2 tbs of lime juice. Add whipped topping and 1 tsp of the lime peel; stir until whipped topping is completely melted and well blended.
  • 2. Pour into an 8 inch square pan.
  • 3. Refrigerate 3 hours or until firm. Cut into 36 pieces to serve. Garnish with additional lime peel and coarse salt, if desired. For non-alcoholic substitute cold water for tequila.

Blend, blend, blend! These margaritas are great for hot summer days, as they melt slowly staying nice and COLD! Serve with or without salt. If too tangy for your taste, cut back on the limeade.

8 (1.5 fluid ounce) jiggers gold tequila
4 (1.5 fluid ounce) jiggers triple sec
¾ (12 fluid ounce) can frozen limeade concentrate
4 cups ice

Steps:

  • In a blender, combine tequila, triple sec and limeade concentrate. Fill blender to the top with ice. Blend, adding additional ice while blending, until thick and smooth. Pour into glasses and serve.

2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mixes in large bowl; stir with whisk 2 min. until completely dissolved. Stir in tequila and 2 Tbsp. lime juice. Add COOL WHIP and 1 tsp. lime zest; stir until COOL WHIP is completely melted and mixture is well blended.
  • Pour into 8-inch square pan.
  • Refrigerate 3 hours or until firm. Cut into 36 pieces to serve.
