LAURA'S TICKLE YOUR TASTEBUDS CHICKEN NOODLE SOUP
This is the best that (in over 50 years) I have EVER tasted. Please don't leave out the spices---makes the soup.

Steps:
- In stock pot, cook onions and celery in olive oil until tender.
- Add 5 cans of chicken broth, carrots, corn and seasonings.
- Bring to boil, reduce heat to simmer, and cook for 2 hours.
- Add remaining can of broth, chicken and noodles, stir to combine and cook until noodles are tender.
- Variation: CROCKPOT.
- Lightly spray inside of crock pot with cooking spray.
- Follow instructions above; cooking for 6 hours on LOW or 3 hours on HIGH; add chicken and uncooked noodles and cook on HIGH for 1 ½-2 hours until noodles are tender.

- Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. Discard drippings, reserving 2 tablespoons., Add onion to drippings; cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Add broth, stirring to loosen browned bits from pan. Bring to a boil. Return chicken to pan. Add celery, carrots, bay leaves and thyme. Reduce heat; simmer, covered, until chicken is tender, 25-30 minutes., Transfer chicken to a plate. Remove soup from heat. Add noodles; let stand, covered, until noodles are tender, 20-22 minutes., Meanwhile, when chicken is cool enough to handle, remove meat from bones; discard bones. Shred meat into bite-sized pieces. Return meat to stockpot. Stir in parsley and lemon juice. If desired, adjust seasoning with additional salt and pepper. Discard bay leaves.

HEARTY CHICKEN NOODLE SOUP
A broth developed from an Edna Lewis recipe makes full-flavored chicken noodle soup possible in less than ninety minutes. So good to have on those cold winter days!!

Steps:
- Heat oil in a large soup kettle. When oil shimmers and starts to smoke, add chicken breast halves; sauté until brown on both sides, about 5 minutes. Remove and set aside,.
- Add half of chopped onions to kettle;sauté until colored and softened slightly, 2-3 minutes. Transfer to medum bowl; set aside.
- Add half of chicken pieces; sauté until no longer pink, 4-5 minutes. Transfer to bowl with onions.
- Sauté remaining chicken pieces. Return onions and chicken pieces (excluding breasts) to kettle. Reduce heat to low, cover, and simmer until chicken releases its juices, about 20 minutes. Increase heat to high; add boiling water along with both breast halves, 2 teaspoons salt, and bay leaves. Return to a simmer, then cover and barely simmer until chicken breasts are cooked and broth is rich and flavorful, about 20 minutes.
- Remove chicken breasts from kettle; set aside. When cool enough to handle, remove skin from breasts, then remove meat from bones and shred into bite-size pieces; discard skin and bone. Strain broth; discard bones. Skim fat from broth, reserving 2 tablespoons (broth can be covered and refrigerated up to 2 days).
- Return soup kette to medium-high heat, Add reserved chicken fat. Add remaining onions, along with carrot and celery; sauté until softened, about 5 minutes. Add thyme, along with broth and chicken; simmer until vegetables are ender and flavors meld, 10-15 minutes. Add noodles and cook until just tender, about 5 minutes. Adjust seasonings; sir in parsley, and serve.

COLD-BLASTING CHICKEN NOODLE SOUP
This is the favorite soup at our house whenever anyone has a cold. We invented it over time, adding more spices as we went! The combination of the garlic, onion, ginger, chili pepper and cilantro really seems to give the immune system a boost. (But if you don't like one of these ingredients -- or don't have it on hand -- just leave it out; the soup will still taste good!) I prefer using leftover roast chicken for this recipe, but you can also use uncooked chicken -- just let it simmer in the broth until it cooks. And note: if you don't have lemon pepper, just use plain black pepper.

Steps:
- Heat the chicken broth with the bay leaf until broth boils.
- Add pasta; return broth to boil.
- Add chicken and lemon pepper; return broth to boil.
- Let mixture cook until pasta is done, about 10 minutes (if you're using uncooked chicken, test the chicken for doneness-- but it should be cooked by the time the pasta is done).
- Add ginger, garlic and onion; cook a few more minutes until onion pieces start to turn translucent.
- Stir in cilantro and chili; cook one more minute, then serve.

- 1) Heat the oven to 425 degrees. Drizzle a tiny bit of oil in the bottom of a roasting pan, add the chicken to the roasting pan, drizzle a little oil over the top, season with salt and pepper and place the piece of rosemary in the cavity.
