Krispie Rice

I wanted to make something fun for one of my boys special helper day at preschool and scoured the internet for ideas. Found this one and loved it. I should have done it the night before but left it til the day of and I just didn't have enough time to get it done so they just got plain old rice krispies squares. :( Anyhow, I made it the next day for my family and they all loved it. You can put anything in the middle... licorice, gummy worms, icing... whatever you like, I just used chocolate chips and dried cranberries. Fruit by the foot works like a charm but for some reason this site just kept putting in fruit leather.. they are totally different.

Number Of Ingredients 5

1/4 cup margarine (I use a bit less) or 1/4 cup butter, - (I use a bit less)
40 -50 large marshmallows
1/2 teaspoon vanilla
7 -8 cups krispy crispy rice cereal
4 fruit leather

Steps:

  • In a large pot over low heat, melt margaring or butter.
  • Add marshmallows, stir until melted and well blended.
  • Remove from heat.
  • Stir in Vanilla.
  • Add cereal and stir until well coated.
  • With greased hands, press onto cookie sheet lined with parchment paper into a thin rectangle. Trim edges to make nice neat lines.
  • starting at one end line up your center filling along the edge and fold over krispy rice. Cut the length and then cut that length into aprox 1 inch sections. cut fruit roll up to appropriate lengths and wrap around the outside.
  • Enjoy!

Crispy Rice Sushi Bites (Copycat Nobu Recipe) image

With this copycat Nobu recipe, you don't need to visit the acclaimed Japanese restaurant to get your hands on this trendy, tasty appetizer. Crispy fried rice bites are piled high with rich spicy tuna, creamy avocado, and kick of hot chili sauce for a vibrant and crave-worthy bite. This light, yet decadent, dish has a gorgeous presentation and delicious combination of flavors that will make you feel like a gourmet chef in your very own kitchen.

2 ½ cups prepared sushi rice
½ cup neutral-flavored oil, such as grapeseed or canola
1 pound sushi grade tuna, finely diced
3 tablespoons Japanese mayonnaise (such as Kewpie®)
2 tablespoons Sriracha, plus more for serving
1 tablespoon soy sauce
2 teaspoons sesame oil
1 teaspoon lime juice, or more to taste
1 avocado, thinly sliced
½ jalapeno pepper, thinly sliced
sesame seeds, for garnish

Steps:

  • Tightly pack the sushi rice into a square 8x8-inch cake pan lined with plastic wrap. Chill for 2 to 3 hours in the refrigerator or 30 minutes in the freezer.
  • Heat 1/2 cup oil in a large skillet over medium heat. Cut the rice into thick, rectangular shapes, about 2 to 3 inches in length and 1 inch in width. Carefully move the pieces to the hot oil and fry until they reach a deep golden brown color, 2 to 3 minutes on each side. Drain on paper towels.
  • Combine diced tuna with mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice in a medium bowl until thoroughly mixed.
  • To assemble, place fried sushi rice on a serving platter. Top with 1 to 2 tablespoons of the spicy tuna mixture. Layer a few slices of avocado on top of each piece. Garnish with a thin drizzle of Sriracha, a jalapeño slice, and a sprinkle of sesame seeds.

  • 1. Rinse and drain the rice 10 times, or until the water runs clear. Drain well and transfer to a rice cooker or small saucepan and add 1 cup water. Cook according to the rice cooker’s manual. If using a pan, bring to the boil over medium-high heat, cover, reduce the heat to low, and cook for 10 minutes, or until tender and the water is absorbed. Remove from the heat and leave, covered, for 5 minutes. Transfer to a large shallow bowl.
  • 2. Meanwhile, place the vinegar, sugar, and salt in a small saucepan and heat over medium-low heat, stirring for 1 to 2 minutes until just dissolved. Sprinkle over the rice and fluff with a rice paddle or a wooden spoon. Cool to room temperature.
  • 3. Slice the fish into 20 pieces, about ¼-inch thick and about 1½x1½-inch pieces or similar. Chill until ready to assemble. Mix the soy and wasabi or lemon juice to taste. Set aside.
  • 4. Lightly oil a small piece of plastic wrap. With wet hands, divide the rice into 20 portions (about 2 tablespoons each) rewetting hands as needed to prevent sticking. One at a time, wrap the rice in plastic, form in a tight ball and press down lightly to form a ½-inch thick disc, about 2 inches wide.
