5 flour tortillas
½ red bell pepper, sliced
½ green bell pepper, sliced
½ orange bell pepper, sliced
½ red onion, sliced
1 lb shrimp
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic powder
1 teaspoon cumin
1 lime, juiced
salsa
guacamole
fresh cilantro
lime wedge

Steps:

  • Preheat oven to 400°F (200°C).
  • Wrap the tortillas in foil and place on the corner of a baking sheet.
  • Add the bell peppers, red onion, and shrimp to the sheet and season with olive oil, salt, pepper, garlic powder, cumin, and lime.
  • Toss to coat.
  • Place in the oven and bake for 10 minutes, flipping the shrimp halfway through.
  • Serve with warm tortillas, salsa, guacamole, cilantro, and lime.
  • Enjoy!

1 (1 ounce) package fajita seasoning
1 tablespoon olive oil
1 ½ pounds raw shrimp, peeled and deveined
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 red onion, sliced into strips
1 jalapeno pepper, sliced into rings

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix fajita seasoning and olive oil together in a large bowl. Add shrimp; toss to coat.
  • Lay out seasoned shrimp in a single layer on a baking sheet. Add red bell pepper, yellow bell pepper, red onion, and jalapeno pepper; mix with shrimp and spread out evenly.
  • Roast in the preheated oven until shrimp are opaque, 8 to 10 minutes. Transfer shrimp to a serving plate.
  • Broil pepper mixture until lightly blackened, 2 to 3 minutes. Transfer to the serving plate with shrimp.

Served with warm tortillas and a 3-minute homemade salsa, this is a mostly hands-off meal that's a real crowd-pleaser.

3 bell peppers, assorted colors, stemmed, seeded and cut into strips
2 medium red onions, halved and sliced vertically
2 jalapeños, 1 sliced into matchsticks, 1 coarsely chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons chili powder
3 teaspoons ground cumin
Kosher salt and freshly ground black pepper
Half 28-ounce can whole peeled tomatoes
1/2 small yellow onion, coarsely chopped
4 tablespoons fresh lemon juice
1 cup packed cilantro leaves
1 pound frozen large tail-off, peeled and deveined raw shrimp, such as Good & Gather, thawed
Warm corn tortillas, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • On a large rimmed baking sheet, combine the bell peppers, red onions and sliced jalapeño. Sprinkle with 1/4 cup of the oil, 2 teaspoons of the chili powder and 1 1/2 teaspoons of the cumin. Season generously with salt and pepper and toss well, then spread in an even layer. Roast the vegetables until slightly softened and beginning to brown, about 8 minutes.
  • Meanwhile, in a food processor, combine the tomatoes, yellow onion, 2 tablespoons of the lemon juice, the coarsely chopped jalapeño, 1 teaspoon of the chili powder and 1 teaspoon of the cumin and process until nearly smooth. Add 1/2 cup of the cilantro and pulse until very finely chopped. Season the salsa with salt and pepper, then transfer to a serving bowl.
  • Remove the vegetables from the oven. Turn the oven to broil and position a rack 6 to 8 inches from the heat source.
  • Combine the shrimp with the remaining 2 tablespoons oil, 1 teaspoon chili powder and 1/2 teaspoon cumin in a medium bowl. Season generously with salt and pepper and toss well. Scatter the shrimp over the vegetables and broil until the shrimp are just cooked through, 4 to 5 minutes.
  • Sprinkle the vegetables and shrimp with the remaining 2 tablespoons lemon juice and 1/2 cup cilantro. Serve with warm corn tortillas and the salsa.

PRAWN FAJITAS WITH AVOCADO CREAM

Mexican flavours of lime, garlic, chilli and coriander infuse these tasty tortilla wraps served with creamy guacamole

juice 2 lime , plus wedges to serve
1 red chilli , deseeded and chopped
2 garlic cloves , crushed
small bunch coriander , chopped
225g large raw peeled prawn
1 avocado , stoned and skinned
1 heaped tbsp soured cream , plus extra to serve
1 tbsp olive oil
1 red pepper , deseeded and sliced
4 flour tortillas and a good handful mixed salad leaves, to serve

Steps:

  • Mix half the lime juice, half the chilli, half the garlic and half the coriander with some seasoning in a shallow dish. Add the prawns and mix to coat them all. Leave to marinate while you prepare the avocado.
  • Roughly chop the avocado and pop it in a small food processor with the remaining lime juice, chilli, garlic, the soured cream and some seasoning. Whiz until smooth, then stir in the remaining coriander. (You could also use a stick blender for this.)
  • Heat the oil in a frying pan and cook the pepper for a few mins, until starting to soften. Add the prawns and fry, in a single layer, for 1-2 mins each side - you will know they are cooked when they turn pink and feel firm to the touch. Serve in warm tortillas with salad leaves, if you like, alongside the avocado cream, soured cream and some lime wedges.
