Fresh Kiwi Vinaigrette, easy to make with no added sugar of any kind, is a sweet, tangy vinaigrette perfect for topping your next salad.

Ingredients

1 Kiwi (peeled and quartered)
3 Tbsp. lemongrass mint white balsamic vinegar (or plain white balsamic vinegar)
1/4 to 1/2 tsp. Dijon mustard
1/2 Tbsp. thin sliced shallot (or red onion)
1/4 tsp. pepper
1/4 c. olive oil

Steps:

Place all ingredients in a small bowl and blend together with an immersion blender till smooth. Add more vinegar or oil if it seems too thick.
Serve immediately or refrigerate.

Ingredients

2 tablespoons raspberry vinegar
2 ½ tablespoons raspberry jam
⅓ cup vegetable oil
8 cups spinach, rinsed and torn into bite-size pieces
½ cup chopped walnuts
8 strawberries, quartered
2 kiwis, peeled and sliced

Steps:

Mix together raspberry vinegar, raspberry jam, and vegetable oil in a small container.
Combine spinach, nuts, strawberries, and kiwi in a salad bowl. Toss with raspberry dressing.

I love the sweet-tart flavor of this dressing over a bowl of mixed greens and veggies. It's such a "summertime" taste! This recipe makes enough vinaigrette for 4 medium-sized salads or 2 large ones. Be sure to use soft, ripe kiwi or it can be a bit tart.

2 kiwi fruit, peeled & coarsely chopped
3 Tbsp canola oil
2 Tbsp red wine vinegar or apple cider vinegar
1 Tbsp honey
1/4 tsp salt
1/4 tsp white pepper

Steps:

1. Combine all ingredients in a blender and process for 5-10 seconds or until smooth. Pour into a serving container and refrigerate. Serve over greens.
