A smooth and delicious Vanilla Ice Cream, generously sprinkled with Milk Chocolate Chips. I found this on the 'Real Simple' website, and couldn't resist trying it to test my new Ice Cream Maker.

Yield 1 quart ice cream

Number Of Ingredients 5

2 cups whipping cream
1 cup milk
1/2 cup sugar
1 teaspoon vanilla extract
2/3 cup chocolate chips

Steps:

  • In a large bowl, combine the Cream, Milk, Sugar, and Vanilla Extract. Stir till sugar is dissolved.
  • Turn on the Ice Cream maker, and pour in the mixture, following the Manufacturer's instructions for freezing.
  • Add Chocolate Chips when desired consistency is reached.
  • Serve immediately or store in the freezer in an airtight container.

1 quart half-and-half
1 quart fat-free half-and-half
2 cups unbleached cane sugar
2 vanilla beans, split and scraped
12 large egg yolks
16 ounces chocolate chips

Steps:

  • In a saucepan, over medium heat, combine the half-and-half, sugar, and vanilla bean with pulp. Bring to a simmer.
  • In a small mixing bowl, whisk the egg yolks until smooth. Add 1 cup of the hot liquid to the egg yolks in a slow stream, gradually whisking to combine, until smooth.
  • Add the yolk mixture to the saucepan of liquid and whisk until incorporated. Bring the liquid back to simmer and continue to cook for about 5 minutes or until the mixture coats the back of a spoon.
  • Pour the mixture into a bowl and place a piece of plastic wrap directly on top of the mixture. This will prevent a skin from forming while cooling.
  • Cool the mixture completely. Process the mixture according the ice cream machine's instructions. Half-way through the churn, slowly pour the chocolate chips inches If the freezer bowl is too small for the entire batch, then split the chips and custard up evenly.

12 ounces milk chocolate, melted
2 2/3 cups cream
8 ounces best-quality dark chocolate, finely chopped

Steps:

  • Place eggs and sugar in bowl; set into the top of a double-boiler or a heatproof bowl set over a pan of simmering water; beat or whisk until it is fluffy, pale and increased in volume; add milk chocolate and mix well; remove from heat, place plastic wrap directly onto surface and cool.
  • Beat cream until soft peaks form; fold into egg mixture; add dark chocolate, mix well; pour into ice cream maker and freeze according to ice cream manufacturer’s instructions.

1 quart strawberries, hulled and sliced
1 cup white sugar, divided
1 tablespoon lemon juice
2 cups heavy whipping cream, divided
1 cup whole milk
6 egg yolks
1 teaspoon vanilla extract
1 pinch salt
8 ounces dark chocolate chips
ice cubes

Steps:

  • Blend strawberries, 1/4 cup sugar, and lemon juice in a food processor until strawberries are coarsely chopped. Transfer mixture to a bowl and refrigerate until chilled, about 1 hour.
  • Heat 1 cup heavy cream, milk, and 3/4 cup sugar in a saucepan over medium-low heat until warmed through and sugar is dissolved, about 5 minutes; remove from heat, cover, and allow cream mixture to cool for 30 minutes.
  • Whisk egg yolks together in a bowl. Slowly pour the warm cream mixture into the egg yolks, whisking constantly. Transfer warmed egg mixture back to the saucepan.
  • Heat egg yolk mixture over medium heat, constantly stirring and scraping the bottom of the saucepan, until custard thickens enough to coat the back of a spatula, about 5 minutes.
  • Pour remaining 1 cup heavy cream into a large bowl and set a strainer atop the bowl. Slowly pour custard through strainer and stir. Add vanilla extract and salt. Stir chilled strawberry mixture and chocolate chips into custard.
  • Place ice cubes into a large bowl and add water; stir. Place the bowl of strawberry-chocolate mixture into the ice bath and allow mixture to cool to room temperature, stirring occasionally, about 10 minutes; remove bowl from ice bath and cover with plastic wrap. Refrigerate until well chilled, 8 hours to overnight.
  • Pour chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer ice cream to a lidded container. Cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

2 cups heavy cream
1 cup sugar
½ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3 drops green food coloring
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.

¼ cup ground coffee
4 pods cardamom, ground
1 ½ cups white sugar
3 cups heavy cream
1 teaspoon vanilla extract
1 cup chocolate chips

Steps:

  • Warm milk, coffee, and cardamom together in a saucepan over low heat. Stir in sugar until dissolved. Make sure milk does not come to a boil.
  • Remove saucepan from heat and stir in cream and vanilla extract. Chill until completely cold, at least 1 hour.
  • Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Add chocolate chips in the last few minutes of churning. Transfer to an airtight container and freeze until firm, about 4 hours.
