This is a no-cook sauce but must be refrigerated for 8 hours or up to 24 hours before using, I suggest to double this and freeze some, you may adjust all ingredients to suit taste, use this on pizzas or as dipping sauce, you will love this!

1 (15 ounce) can tomato sauce (you can use a 398-ml can)
0.5 (6 ounce) can tomato paste (can use the whole can if desired)
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon fresh minced garlic (or use 1/2 teaspoon garlic powder)
1 teaspoon paprika
1 -2 teaspoon white sugar (or to taste)
1 pinch salt (or to taste)
cayenne pepper (to taste) (optional)

Steps:

  • In a bowl mix together all ingredients until well blended, adjust the sugar and spices to taste if needed.
  • Cover and refrigerate for a minimum of 8 hours or more.

KITTENCAL'S MARINARA PASTA SAUCE (VEGETARIAN)

This is a basic simple marinara but big on flavor, it can be ready in 1 hour or you can cook it longer and even tastes better the next day that is why I strongly suggest to make this sauce 1-3 days ahead and refrigerate as the flavors will blend and intensify ---this freezes well so make a double recipe and freeze a batch for the next meal, you may omit the wine but I strongly suggest to add it in, it really adds flavor to the sauce --- please make certain to purchase only good-quality canned Italian Roma (plum) tomatoes for this it will make a huge difference to the flavor of the sauce --- all ingredients may be adjusted to suit taste, this sauce can also be simmered for a longer time in a crockpot, throw in some fresh mushrooms also if desired --- also see my recipe#71273

3 -4 tablespoons olive oil (I use enough oil to lightly coat the bottom of my pot)
1 large onion, chopped
4 -6 garlic cloves, minced (or to taste, the more the better I use 6 extra large cloves)
1 tablespoon dried basil (rubbed between fingers to release flavor)
2 teaspoons dried oregano (rubbed between fingers to release flavor)
1/2 teaspoon crushed red pepper flakes (optional or adjust to taste)
1 (6 ounce) can tomato paste (can use two cans for a thicker richer sauce if desired)
1 (28 ounce) can whole roma tomatoes, undrained (break up with a fork before cooking, go ahead and use two cans if desired!)
1/3-1/2 cup dry red wine (you may omit if desired but good to add in, can use white wine)
2 teaspoons sugar (optional or to taste)
1 teaspoon salt (or to taste, a good tomato sauce needs lots so don't be shy with the salt)
fresh ground black pepper (to taste)

Steps:

  • In a heavy-bottomed stockpot or Dutch oven heat oil over medium-high heat.
  • Add in onions, garlic and dried red pepper flakes, basil and oregano; saute for about 3-4 minutes.
  • Add in the tomato paste and stir for 2-3 minutes.
  • Add in the Roma tomatoes with juice and wine; simmer uncovered over low heat for 1-2 hours (I usually cook it for at least a couple of hours) stirring occasionally.
  • Season with salt and pepper and add in sugar if desired.
  • **NOTE** if you prefer a thinner sauce, then add in some water.

It doesn't get any easier than this. This is Nick's basic pizza sauce and the base for Pizza Margherita. Use the best quality tomato sauce and paste available. Normally I like to make this kind of thing starting with fresh tomatoes, but of course, it has to be summer and you have to get your hands on the tomatoes. I promise, you can't get this flavor from hot house tomatoes. Freeze what you don't need or use it to start spaghetti sauce.

3 -4 tablespoons vegetable oil or 3 -4 tablespoons canola oil
1 medium onion (finely chopped)
1 tablespoon minced fresh garlic (or use 1 teaspoon garlic powder or to taste)
3 -4 teaspoons dried Italian seasoning (or to taste, I use 1 tablespoon)
2 -4 teaspoons oregano
1/4 cup tomato paste
1 (28 ounce) can crushed tomatoes (can use tomato sauce in place of crushed tomatoes or use a combination of both if desired)
1 teaspoon salt (or to taste, I use seasoned salt)
black pepper (to taste) (optional)
1 -2 teaspoon sugar (add in only if needed at the end of cooking) (optional)

Steps:

  • In a saucepan, heat the olive oil; saute the onions, Italian seasoning and oregano for about 2-3 minutes, stirring until soft but not brown.
  • Add in garlic and saute for 2 minutes, stirring constantly.
  • Add in the tomato paste; stir and cook 1 minute.
  • Add in the remaining ingredients; cook and simmer on low heat for 1/2 to 3/4 hours, stirring occasionally, adding more salt if needed (the longer you cook this sauce the thicker and richer it will be!).
  • Cool slightly and use immediately or refrigerate up to 5 days or you may freeze.
  • *NOTE* freeze in plastic containers after cooled, I find that this sauce tastes even better if left in the fridge overnight to blend the flavors before using or freezing.
  • Delicious!

For those of us who don't like sauces laden with tomato chunks (much as I like tomato-based foods, tomato chunks just gross me out!) and also happen to be way too lazy to peel and cut tomatoes (that's what cans are for.) For some variation ideas try replacing one of the cans of tomato sauce with tomato paste if you like it thicker. Like it really spicy? Replace one plain can with one can of pre-seasoned tomato sauce. Yummy dipping sauce for mozzarella sticks, serve 1/4 cup in a ramekin. Recommended dishes to have with this sauce: Recipe #394477, Recipe #30977, and Recipe #91274 if making pretzel cheese logs!

I've tried several pizza sauce recipes with no luck finding anything my family likes. But then I came across this recipe from New Orleans restaurant critic, Tom Fitzmorris. Although the recipe calls for canned Italian tomatoes, I prefer sliced fresh Italian plum tomatoes. Yum! Canned is fine though if that's all you have on hand.

1 (28 ounce) can whole peeled Italian tomatoes
2 tablespoons extra virgin olive oil
2 teaspoons chopped garlic
6 leaves fresh basil
6 sprigs flat-leaf Italian parsley, chopped
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/4 teaspoon salt (I like Kosher salt)

Steps:

  • [Skip this step if you're using fresh tomatoes] Mix and semi-puree all ingredients in a food processor for about 20 seconds. 'It may seem a little too runny, but trust me--it works!'-Tom Fitzmorris.
  • If you're using fresh tomatoes, just slice and place evenly on top of crust, brush them with the olive oil, and sprinkle the next 6 ingredients over the tomatoes.
  • Now pile on your favorite toppings and bake. That's it!
