King Papas (Aka Copycat Que Papas) image

My DH loves Pizza Hut's Que Papas, so we had to find a way to make our own. These are patties, rather than a "tater tot" shape, but really good, nonetheless. My DS thought we were saying "king" instead of "que", thus the name.

4 cups frozen shredded hash browns, chopped into small pieces
3 eggs
1/4 cup finely diced jalapeno
1 cup shredded cheddar cheese
1/4-1/2 cup flour
Italian seasoned breadcrumbs, to coat
oil, to fry
salt (optional)

Steps:

  • In a large bowl, mix together hash browns, eggs, jalapenos, and cheese.
  • Add 1/4 cup of flour and mix well. If mixture is still too runny to hold together, gradually add more flour until it will (you should be able to form a patty with the mixture).
  • Heat 1/2 inch of oil in a large skillet over medium heat.
  • Take 1 heaping tablespoon of potato mixture and form into pattie. Place into a bowl of bread crumbs and turn to coat.
  • Gently place patty into hot oil and fry until golden brown. Drain on brown paper bag and sprinkle with salt, if desired.
  • Continue making patties as directed above until all mixture is used.

When we visited Costa Rica, I had these potatoes and fell in love with them. I have tried many many recipes but none was ever what I was looking for. These are the closests that I have gotten. They are not as good as Costa Rica's (of course) but they are still so good.

2 1/2 lbs red potatoes
1/4 cup butter
1/2 cup sour cream
1 jalapeno pepper
1 anaheim chili
1 teaspoon garlic powder
1 tablespoon salt
1 tablespoon pepper
16 ounces velvetta mexican cheese

Steps:

  • Roast jalapeno pepper & anaheim chili pepper on a grill pan on the stove. place peppers on the grill until they begin to blister, then turn them over. When blistered on both sides, remove from grill.
  • Allow peppers to cool until you can work with them with your hands. Peel peppers, remove seeds, and puree.
  • While peppers are roasting, peel potatoes, cut in small water, and boil until fork tender (12-15 minutes).
  • When potatoes are done, drain.
  • Put potatoes back in pot and add the butter.
  • Mash butter into potatoes with either a hand held masher or an immersion blender.
  • Add the sour cream, pureed peppers, salt, pepper, and garlic powder.
  • Melt the Velvetta Mexican Cheese in the microwave and then add to potatoes.
  • Mix all the ingredients together. You can add more salt, pepper, garlic, or hot pepper based on your tastes!

This is my version of queso that is familiar with Pappasito's in Houston, TX. I found this copycat from CopyKat.com with my adjustments of more onion, garlic, and tomato.. and this is fairly close..but not quite there.. it's really good all the same!! Hope you think so too!

1 1/2 lbs process American cheese (I use Land O' Lakes, not Velveeta)
1 (4 ounce) can green chilies, do not drain
1 tablespoon garlic (the kind from a jar)
3/4 cup diced white onion
1/3 cup milk
3/4 cup diced ripe tomatoes, seeds discarded
1/2 teaspoon garlic salt

Steps:

  • Melt cheese with milk and stir until blended.
  • Add chilies with liquid.
  • Add garlic, onion and stir until onions are transparent.
  • Remove from heat and add tomatoes before serving.
