KATHY #1 - CHICKEN CORN SOUP (ZWT - ASIA)
My sister, Kathy, gained her Asian cooking expertise 1st-hand when she, her DH & her in-laws lived in Taiwan for a time. This is the 1st of several recipes she considers her favorites. Her source for this so tasty & easy to fix soup was "Wei-Chuan Cookbook" by Huang Su Huei.

Steps:
- Finely chop chicken breast. Mix w/1 egg white & 1/2 cup water. Set aside.
- Heat stock & next 5 ingredients.
- Add chicken mixture & bring to a boil.
- Add cornstarch mixed with 1/4 cup water.
- Slowly add beaten egg whites while stirring soup constantly. Add ham if desired & serve.

KATHY #4 - MA-PO'S BEAN CURD W/PORK (ZWT II - ASIA)
My sister again & this time with what she describes as "the best dish I make". I've luckily eaten a lot of her oriental dishes. If she says this is the best she makes, then take it to the bank! As with the past 3, her source is her "Wei-Chuan Cookbook" by Huang Su Huei.

Steps:
- Stir fry ginger, garlic & minced green onion for 1 min in sml amt of oil.
- Add pork & bean paste. Cook till pork is done.
- Add bean curd, 1 cup of water & next 4 ingredients. Simmer covered for 3 minutes.
- Mix cornstarch w/2 tbsp water & add to pan. Cook briefly till thickened & put in serving dish.
- Sprinkle w/black pepper, sectioned green onions & sesame oil. Serve w/rice.

BOOZY BAKED CARAMELISED BANANAS
Use up your bananas and transform them into our boozy baked caramelised dessert with the help of rum, maple syrup and pecans

Steps:
- Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
- Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

BAKED BANANAS

Steps:
- Preheat the oven to 190°C/Gas Mark 5.
- Poor the melted butter into a roasting dish. Peel the bananas and place in the dish. Pour the orange juice over the bananas and sprinkle the sugar. Bake for 15 minutes.
- Sprinkle the almonds or desiccated coconut on top. Serve with some whipped cream or ice cream.
KATHY #2 - BEAN SPROUT SALAD (ZWT II - ASIA)
Another of my sister's favorite recipes from her "Wei-Chuan Cookbook" by Huang Su Huei she originally found this when she lived in Taiwan. Like the last, this is so easy to fix.

Steps:
- Put sprouts on serving dish. Top w/shrimp & green onions.
- Mix remaining ingredients in sml bowl & drizzle over top or toss like a salad.
KATHY'S BANANA BREAD
Steps:
- 1. Cream butter. Add sugar and cream together well.
- 2. Beat eggs well in a separate bowl and add butter and sugar mixture; mix well. Sift flour, soda and salt together and add to wet mixture.
- 3. Fold in mashed bananas and add nuts.
- 4. Bake at 350 for 50-60 minutes. Test for doneness with toothpick. Makes 2 loaves.
