One-pan Moroccan Chicken Recipe by Tasty image

Here's what you need: chicken breasts, ground black pepper, ground cumin, onion, cherry tomato, water, chickpeas, zucchini, harissa paste, honey

2 chicken breasts
ground black pepper, to taste
ground cumin, to taste
½ onion, sliced
½ can cherry tomato
⅖ cup water
½ can chickpeas, drained and washed
1 zucchini, also known as courgette
1 tablespoon harissa paste
1 teaspoon honey

Steps:

  • Season the chicken with pepper and cumin powder to taste.
  • On a medium-low heat, cook the chicken in some oil with the onion for 3 to 4 minutes stirring and turning occasionally.
  • Add the cherry tomatoes, the water, the chickpeas, the harissa paste, the honey and the courgette.
  • Simmer for 15 minutes, stirring occasionally until the sauce slightly thickens.
  • Enjoy!

I got this recipe from my husbands Mens Health Magazine. I made a few tweaks, one of which was to use boneless skinless breasts rather than the boneless skinless thighs the recipe called for. By making these changes I was able to get the fat down from over 16 grams to a little over 5, and cut the calories by more than half! This went together quickly and was very delicious. The house smells heavenly while this is cooking! (This could easily be made vegetarian by omitting the chicken.)Would make an impressive dinner for guests with very little effort!

1 lb boneless skinless chicken breast
1 large zucchini, diced
1 (16 ounce) can garbanzo beans
1 (14 1/2 ounce) can diced tomatoes
1 cup water
1/2 tablespoon olive oil
1/2 teaspoon cayenne pepper
2 teaspoons ground cumin
1/2 teaspoon cinnamon
salt and pepper
1/2 cup cilantro, chopped

Steps:

  • Heat the oil in a deep saute pan over med-high heat. Salt and pepper the chicken place it in the pan. Cook chicken for 2-3 minutes each side until browned. Add zucchini and continue cooking, stirring occasionally.
  • When the zucchini begin to brown add the garbanzo beans, water, tomatoes, cayenne, cumin, and cinnamon. Lower the heat and simmer for 15-20 minutes until the chicken is tender and cooked through. (do not cover the pan).
  • Season to taste with more salt and pepper and sprinkle with cilantro.
  • Serve with steamed rice, or couscous.

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic
1 pound skinless, boneless chicken breast, cut into 1-inch cubes
1 cup crushed tomatoes, with liquid
2 medium carrots, chopped
2 stalks celery, sliced
½ cup water
¼ cup olives, or to taste
2 tablespoons raisins, or to taste
1 tablespoon minced fresh ginger root
2 teaspoons salt
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground turmeric
½ teaspoon dried oregano
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
1 tablespoon lemon juice
1 tablespoon finely chopped cilantro, or to taste

Steps:

  • Heat olive oil in a large pot over medium heat and cook onion until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Add chicken, tomatoes, carrots, celery, water, olives, raisins, ginger, salt, paprika, cumin, turmeric, oregano, cinnamon, and cayenne pepper; mix to combine. Bring to a boil, reduce heat, and simmer until chicken has cooked through and flavors have mingled, 25 to 35 minutes.
  • Stir in lemon juice and garnish with cilantro.

My husband came across this recipe in Men's Health magazine and asked me to make this. We just had this tonight for the first time, and we loved it! We appreciated its simplicity, its uniqueness, and the fact that it is a well-balanced dish - lean protein, veggies, beans, and whole grains - all in one pan (or almost all in one pan)! It has a wonderful flavor - that lovely sweet and spicy blend that is a mainstay of Indian/Moroccan food. I also loved that this was ready in under 30 minutes. Yummylicious!

1 lb boneless skinless chicken thighs
1 (16 ounce) can garbanzo beans, drained
1 (14 1/2 ounce) can diced tomatoes

1/2-1 teaspoon cilantro
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1 teaspoon cinnamon
1/2 tablespoon olive oil
1/2-1 cup chicken broth

cooked whole grain rice or cooked couscous

Steps:

  • Heat oil in large saute pan or electric skillet.
  • Sprinkle chicken thighs with salt and pepper.
  • Place thighs in pan and brown on each side (2-3 minutes per side).
  • Add the zucchini, stir and saute, until tender and lightly browned.
  • Add the garbanzo beans (drained), diced tomatoes, and chicken broth.
  • Sprinkle all with cumin, cayenne, and cinnamon.
  • Turn the heat to low, and simmer for 10 to 15 minutes, until the chicken is tender and cooked through.
  • Season with salt and pepper.
  • Sprinkle with cilantro.
  • Serve with whole grain rice or cooked couscous.
  • NOTE: If you decide to serve this with cooked couscous, it tastes extra special with 2 tbs raisins, 2 tbs pine nuts, and some additional cilantro mixed in with the couscous.
