"During college, I came across a chocolate biscotti recipe and played around with it until I came up with this one," relates Lori Hinze of McCook, Nebraska. "It's great with tea or coffee for dunking."

Number Of Ingredients 12

1/4 cup butter, softened
2/3 cup sugar
1 large egg
2 tablespoons beaten egg
1 ounce semisweet chocolate, melted and cooled
1/2 teaspoon instant coffee granules
1/2 teaspoon hot water
1-1/4 cups all-purpose flour
2 tablespoons baking cocoa
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup slivered almonds, toasted

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in eggs and semisweet chocolate until blended. Dissolve coffee granules in hot water; beat into chocolate mixture. Combine the flour, cocoa, baking powder and salt; gradually add to chocolate mixture. , Turn dough onto a floured surface; knead in almonds. On a baking sheet coated with cooking spray, shape dough into a 12-in. x 3-in. rectangle. Bake at 350° for 28-30 minutes or until lightly browned. Cool for 10 minutes. , Transfer to a cutting board; cut diagonally with a serrated knife into 13 slices. Place cut side down on a baking sheet coated with cooking spray. Bake for 20-25 minutes or until firm and crisp, turning once. Remove to a wire rack to cool., Drizzle white chocolate over biscotti; let stand until set. Store in an airtight container.

1 1/2 cups sliced almonds, toasted,divided
1 cup butter, softened
2 cups sugar
2/3 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 teaspoon almond extract
3 1/2 cups all-purpose flour
1/2 cup semi-sweet chocolate chips (optional)
1/2 cup white chocolate chips (optional)
2 teaspoons shortening (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a cookie sheet and set aside.
  • Place 3/4 cup of toasted almonds in a food processor and pulse until ground.
  • Beat butter in large bowl for 30 seconds, then add sugar, cocoa, baking powder, baking soda and salt; beat until combined.
  • Beat in eggs and almond extract.
  • Beat in as much of the flour as you can with mixer.
  • By Hand, stir in remaining flour, the ground almonds and the remaining 3/4 cup of sliced almonds.
  • On pieces of wax paper, shape dough into two 14 inch long rolls.
  • Place rolls on prepared cookie sheet at least 5 inches apart, flatten slightly.
  • Bake 25-30 minutes or until wooden pick inserted near centers comes out clean.
  • Cool on cookie sheet for 1 hour.
  • Cut each roll diagonally into 1/2 inch thick slices.
  • Place slices, cut sides down, on ungreased cookie sheets.
  • Bake 8 minutes.
  • Turn slices; bake 7 to 9 minutes more or until cookies are dry and begin to crisp (do not overbake).
  • Remove from cookie sheets to wire racks.
  • Cool completely.
  • If desired, to make glaze or drizzle, place semi sweet chips and white chips in separate small microwave safe bowls.
  • Add 1 teaspoon of shortening to each bowl.
  • Microwave on high for 1 minute, stirring once; stir.
  • If necessary, microwave an additional 15 seconds or until chips are melted and mixtures are smooth when stirred.
  • Dip biscotti into mixtures or drizzle over tops.

1 cup sugar
1/2 cup butter, melted
2 tablespoons Kahlua
1 teaspoon anise extract
3 eggs
1/2 cup almonds, chopped
2 1/4 cups flour
1 1/2 teaspoons baking powder

Steps:

  • In a large mixing bowl, mix sugar and melted butter.
  • Add Kahlua and anise extract.
  • Beat in the eggs and stir in the nuts.
  • Sift dry ingredients together in separate bowl.
  • Gently stir dry ingredients into sugar mixture until well blended.
  • Cover and chill about three hours.
  • Preheat oven to 375 F.
  • Shape dough into three loaves 2 inches wide and 1/2-inch thick.
  • Place loaves well spaced on greased cookie sheet.
  • Bake 20 minutes or until brown.
  • Cool 5 minutes, cut in diagonal slices 1/2-inch thick.
  • Arrange slices on cut sides.
  • Bake 8 minutes each side at 375F until lightly browned. Cool on wire racks.

1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 cup (1 stick) butter softened
1 1/4 cups sugar
2 eggs
1 tsp McCormick® Pure Almond Extract
4 oz semi-sweet baking chocolate melted
1 cup whole almonds coarsely chopped

Steps:

  • Preheat oven to 325°F. Mix flour, cocoa powder, baking powder and salt in medium bowl. Set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and almond extract; mix well. Add melted chocolate; beat until well blended. Gradually beat in flour mixture on low speed until well mixed. Stir in almonds.
  • Divide dough in half on lightly floured work surface. Roll each half into a log, about 12 inches long and 2 inches wide. Transfer logs to greased baking sheet. Flatten logs slightly.
  • Bake 40 minutes or until logs spring back when lightly touched. Cool logs on wire rack 20 minutes. Reduce oven temperature to 300°F. Transfer logs to cutting board. Using a sharp serrated knife, cut logs diagonally into 1/2-inch thick slices. Place slices, cut sides down, in single layer on baking sheets.
  • Bake 15 to 20 minutes or until crisp. Remove biscotti to wire racks; cool completely. Store in airtight container up to 1 week.

These twiced baked cookies are some of my favorite, there great as is or dunk them in your coffee or tea. These are my moms favorite cookies and she doesn't even drink coffee. I bake them on parchment paper nothing sticks to it.

1/2 cup butter or 1/2 cup margarine, softened
1 1/4 cups sugar
2 eggs
1 teaspoon almond extract
2 1/4 cups flour
1/4 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sliced almonds
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips

Steps:

  • Pfeheat oven to 350°F.
  • In large mixer, beat butter and sugar untill well mixed.Add eggs and almond extract; beat untill smooth. In seperate bowl mix together flour, cocoa, baking powder and salt; Blend butter and cocoa mixture together; mix untill smooth(dough will be very thick). remove bowl from mixer and stir in almonds. Divide dough in half and with lightly floured hands shape each half into rectangular logs about 11'' long. place about 2'' apart from each other. Bake 30 min or untill logs are set, remove from oven and let cool for 15 minute With a serated knife cut 3/4'' slices diagnally. return to cookie sheet, cut side down and continue baking for 8-9 min turn over and bake another 8-9 minute Remove from oven and allow to cool. melt semi-sweet chocolate and drizzle over cookies repeat with white chocolate.

I got this recipe many years ago when Nestle did a yearly calendar filled with recipes. You had to save up your chocolate chip bags and mail them in. This was one of my favorite recipes.

semisweet chocolate morsel, divided
2 cups all-purpose flour
1/4 cup baking cocoa
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup butter or 1/4 cup margarine, softened
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3 large eggs
1 cup slivered almonds, toasted
2 tablespoons vegetable shortening

Steps:

  • PREHEAT oven to 325°F Grease 1 large or 2 small baking sheet(s).
  • MICROWAVE 1 cup morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until smooth. Cool to room temperature.
  • COMBINE flour, cocoa, baking powder, baking soda and salt in medium bowl. Beat granulated sugar, brown sugar, butter, vanilla extract and almond extract until crumbly. Add eggs one at a time, beating well after each addition. Beat in melted chocolate. Gradually beat in flour mixture. Stir in nuts. Refrigerate for 15 minutes or until firm.
  • SHAPE dough with floured hands into two 9 x 3-inch logs on prepared baking sheet(s).
  • BAKE for 40 to 50 minutes or until wooden pick inserted in center of each log comes out clean. Cool on baking sheets for 15 minutes. Slide logs onto cutting board and cut diagonally into 3/4-inch slices. Return to baking sheet(s) cut side down. Bake turning biscotti over halfway through, for 20 minutes or until dry. Remove to wire racks to cool completely.
  • LINE baking sheet(s) with waxed paper.
  • DIP biscotti halfway into Chocolate Coating; shake off excess. Place on prepared baking sheet(s). Refrigerate for 10 minutes or until chocolate is set. Store in airtight containers in cool place or in refrigerator.
  • FOR CHOCOLATE COATING: MICROWAVE remaining 1 cup morsels and 2 tablespoons vegetable shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at 10- to 15-second intervals, stirring just until smooth.
