Steps:
- In a large bowl mix all together, soy sauce, vinegar, garlic and onions. Cut chicken into small pieces and then add it into the sauce mixture. Do not add the red pepper yet.
- Marinate the chicken for at least 30 minutes to an hour.
- Over medium heat add in marinate chicken into a large pot. Cook for an hour or until chicken is tender. If the chicken is still tough add water if need. Add red hot pepper and simmer for at least 10 minutes.
- Serve with white rice.

ROSE'S CHAMORRO CHICKEN KELAGUEN
A Chamorro favorite, especially at fiestas and barbeques!! Similar to a tangy grilled chicken salad; but with no mayo.

Steps:
- Prepare the bbq grill, either gas or charcoal. Lightly salt the split chicken. Grill the chicken until just done; do not overcook! Set aside to cool completely. Debone the chicken and then chop coarsely.
- Combine the rest of the ingredients in a large bowl and mix thoroughly. Adjust lemon juice and salt according to your taste. This can be eaten right away with warm corn tortillas. This dish is typically served as a side dish at chamorro fiestas and barbeques.
- The traditional way adds fresh shredded coconut (NOT the baking kind). I prefer not to add it just for personal taste.

Steps:
- Combine the water, vinegar, soy sauce, black pepper, garlic and hot peppers in a bowl-stirred and set aside.
- Note:You can eliminate the hot peppers without degrading taste.
- Brown the onion in a large frying pan with cooking oil.
- Add chicken and cook on medium heat until brown in color.
- then add the other ingredients.
- Cook at high heat until it comes to a boil, then turn down the heat to medium until fully cooked.
- Serve over hot rice and enjoy.

Steps:
- Spray large skillet with cooking spray and saute chicken on medium-high heat for about 5 minute or until cooked through.
- Drain liquid from tomatoes into a 2 cup liquid measuring cup and add enough hot water to measure 1-3/4 cups.
- Add macaroni, tomatoes and the tomato liquid mixture to the pan and mix well.
- Bring to boil and reduce heat to medium-low. Cover and simmer 9 to 10 minute or until macaroni is tender.
- Remove from heat and stir in cheese sauce from mac and cheese package and sour cream until well blended.
- Sprinkle with shredded cheese on top and cover.
- Let stand 1 to 2 minute or until cheese is melted.
- TIP: Reduced fat items can be used but I don't recommend nonfat.
