SHRIMP BISQUE

1 pound large shrimp, peeled and deveined, shells reserved
4 cups seafood stock
3 tablespoons good olive oil
2 cups chopped leeks, white and light green parts (3 leeks)
1 tablespoon chopped garlic (3 cloves)
Pinch cayenne pepper
1/4 cup Cognac or brandy
1/4 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes. Strain and reserve the stock. Add enough water to make 3 3/4 cups. Meanwhile, heat the olive oil in a large pot or Dutch oven. Add the leeks and cook them for 10 minutes over medium-low heat, or until the leeks are tender but not browned. Add the garlic and cook 1 more minute. Add the cayenne pepper and shrimp and cook over medium to low heat for 3 minutes, stirring occasionally. Add the Cognac and cook for 1 minute, then the sherry and cook for 3 minutes longer. Transfer the shrimp and leeks to a food processor fitted with a steel blade and process until coarsely pureed. In the same pot, melt the butter. Add the flour and cook over medium-low heat for 1 minute, stirring with a wooden spoon. Add the half-and-half and cook, stirring with a whisk, until thickened, about 3 minutes. Stir in the pureed shrimp, the stock, tomato paste, salt, and pepper and heat gently until hot but not boiling. Season, to taste, and serve hot. ;

1 tablespoon olive oil
2 garlic cloves, minced

1 cup water
1/2 cup heavy whipping cream
1 tablespoon chili powder
2 teaspoons sodium-free chicken bouillon granules
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 pound uncooked medium shrimp, peeled and deveined
1/2 cup sour cream
Fresh cilantro, cubed avocado and additonal shrimp, optional

Steps:

  • In a small saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Stir in the water, cream, chili powder, bouillon, cumin and coriander; bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Cut shrimp into bite-size pieces; add to soup. Simmer 5 minutes longer or until shrimp turn pink. Gradually stir 1/2 cup hot soup into sour cream; return all to the pan, stirring constantly. Heat through (do not boil). Garnish with cilantro, avocado and additional shrimp if desired.

1 salmon fillet (8 ounces)
1/2 cup finely chopped carrot
1 tablespoon chopped shallot

2 cups 2% milk
1 teaspoon seafood seasoning

  • Broil red pepper 4 in. from the heat until skin blisters, about 5 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Remove stems and seeds. Set roasted pepper aside., Broil salmon 4 in. from the heat for 8-12 minutes or until fish flakes easily with a fork. Break salmon into small pieces; set aside. , In a large saucepan, saute carrot and shallot in oil until tender. Add garlic; saute 1 minute longer. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Transfer to a blender; add roasted pepper. Cover and puree until smooth. Return to the pan. Stir in the milk, seafood seasoning, Liquid Smoke if desired and salmon; heat through.

1/2 cup onion, chopped
1/2 cup celery, chopped
2 tablespoons butter
3 tablespoons flour
3 tablespoons fresh dill weed or 1 teaspoon dried dill
1/2 teaspoon salt
1 garlic cloves, crushed or 1/4 teaspoon garlic powder
1/4 teaspoon Worcestershire sauce
1/8 teaspoon pepper
4 cups whole milk or 4 cups 2% low-fat milk
1 (8 ounce) can salmon, drained, skinned and deboned
1/2 lb shrimp (frozen or fresh but not canned)
8 slices fresh lemon, thin

Steps:

  • Saute the onion& celery in the butter until the onion is translucent.
  • Stir in the flour, dill, salt, garlic, Worcestershire sauce, and pepper.
  • Add milk, stir until mixed well, cook until thickened.
  • Flake the salmon and stir into the bisque, add shrimp.
  • Heat through.
  • Season to taste.
  • Serve with two slices of lemon floating on top.

1/2 cup butter, divided
1 lb medium shrimp, peeled,deveined and chopped
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup all-purpose flour
3 cups water
1 tablespoon ketchup
1 chicken bouillon
1 bay leaf
1 tablespoon seasoning salt
1/8 teaspoon cayenne pepper
1 (12 ounce) can evaporated milk
2 tablespoons dry white wine or 2 tablespoons water

Steps:

  • To start, melt 2 tablespoons butter in a medium saucepan over medium heat.
  • Add shrimp, onion and celery and cook, stirring occasionally, until shrimp turn pink.
  • Remove from saucepan; set aside.
  • Next, melt remaining butter in same saucepan over medium heat.
  • Stir in flour.
  • Gradually stir in water, ketchup, bouillon, bay leaf, seasoned salt and cayenne pepper.
  • Boil, stirring occasionally; reduce heat to low.
  • Cook, stirring occasionally, for 5 minutes.
  • Add shrimp mixture; cook, stirring occasionally, for 2 minutes.
  • Discard bay leaf.
  • Stir in evaporated milk and wine.
  • Heat through, but PLEASE-- do not boil.

4 (8 ounce) bottles clam juice (or 1 qt fish stock or water)
1 lb fresh medium shrimp
2 tablespoons olive oil or 2 tablespoons butter
1 large onion, chopped
2 garlic cloves, chopped
1 carrot, chopped
2 tomatoes, peeled and chopped
1/2 cup white wine
1 tablespoon brandy or 1 tablespoon port wine
1/4 cup raw rice
salt and pepper
1 tablespoon fresh parsley, chopped

Steps:

  • Bring clam juice to a boil, add shrimp and simmer until shrimp are pink.
  • Remove shrimp to cool, reserve broth In a saute pan, cook onion, garlic, carrot and tomatoes in 1 tbsp of oil over moderate heat until onions turn transparent.
  • Add vegetables, wine and brandy to reserved broth and bring to a boil.
  • Add rice,salt and pepper, cover and simmer Meanwhile, shell the shrimp, slice into 1/2" pieces.
  • Reserve 1/4 of the shrimp, add the rest to the pot and simmer until rice is soft.
  • Puree the soup mixture in a blender or food processor.
  • Reheat the soup, adding the remaining shrimp and oil.
  • Stir in the parsley and serve.

My husband's amazing creation... Shrimp, cream, sherry - how can you go wrong with that combo? Warning this is HIGHLY addictive, especially when paired with homemade Cuban bread.

4 lbs shrimp (with heads on)
4 quarts half-and-half
1/4 lb butter
3 large shallots
5 garlic cloves
4 tablespoons Old Bay Seasoning
1 teaspoon salt
1/2 teaspoon thyme
1 teaspoon basil
1 teaspoon black pepper
2 (14 1/2 ounce) cans chicken broth
1 cup sherry wine

Steps:

  • Pull heads off shrimp.
  • In 4 quart saucepan put 2 cans chicken broth.
  • Put shrimp heads in saucepan with broth.
  • Bring to a boil.
  • Reduce heat and simmer for 30 minute.
  • Remove shrimp heads and discard.
  • Reduce liquid (to aprox 12 oz).
  • In frying pan saute thinly sliced shallots and crushed garlic with 1 tbsp butter then turn off heat.
  • Pour reduced chicken stock (from #7) in 8 quart stock pot then add shallots & garlic and stir, then slowly add sherry and stir, then add half and half while stirring and remaining butter.
  • Add all spices and turn burner on low.
  • Clean and de-vein shrimp then cut shrimp in half.
  • Add shrimp to soup.
  • Turn heat up a little (no more than 170 degrees - will curdle if heat is too high. If it does curdle strain out shrimp and put soup in blender and blend on high until re-mixed and smooth then pour back in pot and add shrimp again) and cook for 1 hour stirring occasionally.
  • Serve and enjoy!

This is a wonderful dish and well worth the time it takes to make. You can certainly make your stock one day and refrigerate it overnight. The next day let your stock come to room temperature and put your Bisque together. I listed cornstarch as an optional ingredient because I like my Bisque to be a little thicker than a thin soup. If it comes out thin just simply mix about 4-5 tbsp cornstarch in cold water and add to the Bisque at the end. Cook until slightly thickened. If you don't care for spicy you may want to start out using only 1/8 tsp cayenne pepper. You can always add more late if you wish. If you add a salad and hot bread you have a wonderful dinner. This will serve 12 as an appetizer and 6 as a main course.

Steps:

  • Stock:.
  • In a large stockpot over medium-high heat heat the olive oil.
  • Add the chopped onions, celery, carrots, salt and black pepper.
  • Saute the vegetables for about 30 minutes or until soft.
  • Squeeze the lemon halves in the vegetables and add lemon rinds to pot.
  • Add all remaining stock ingredients.
  • Bring stock to a boil and reduce heat to medium and simmer uncovered for 1 hour.
  • Remove from heat and strain stock using a cheesecloth or a fine-mesh strainer and set aside.
  • This will make about 3 quarts.
  • Bisque:.
  • In a large heavy Dutch oven heat the olive oil over medium high heat.
  • Add the onions, celery, carrots, salt and cayenne pepper.
  • Saute until vegetables are soft about 20 minutes.
  • Add the herbs, tomato paste and brandy.
  • Cook and stir vegetable mixture for about 5 minutes.
  • Add the shrimp stock and bring to a boil.
  • Reduce heat to medium and simmer for 1 hour.
  • Make a beurre manie' by combining the softened butter and flour in a small bowl and mix until have have a smooth paste.
  • Add the mixture one tablespoon at a time whisking well after each addition.
  • Cook for 5 minutes.
  • Slowly add the cream and shrimp and stir to mix.
  • Bring to a gentle simmer and cook for 15 minutes.

  • add salmon, cook 4-5 minutes until salmon flakes easily.

1 medium red bell pepper, chopped
½ cup chopped yellow onion
½ pound cooked or raw shrimp, tails removed, cut in pieces
2 cups fat-free half-and-half
1 cup no-salt-added tomato sauce
¼ teaspoon hot chile sauce, or to taste
salt and freshly ground black pepper to taste
1 teaspoon butter
¼ cup grated fresh Parmesan cheese

Steps:

  • In saucepan, heat olive oil. Add red pepper and onion; saute on low heat until soft, 15 to 20 minutes, stirring occasionally. Add shrimp, half-and-half, tomato sauce, hot sauce, salt and pepper. Bring to a boil, reduce heat and simmer 5 minutes. Add butter.
  • Put 1/2 hot mixture in a blender and carefully process at high speed about 10 to 15 seconds, or until no large pieces remain. Transfer bisque into soup bowls.
