If you love garlic, parmesan, and cheeseburgers, these Garlic-Parmesan Cheeseburgers will be your new favorite burger! They are a quick fix on your grill.

1 pound ground beef
3-4 cloves garlic (minced)
1/2 cup shredded Parmesan cheese (look near the other packaged shredded cheese in your grocery store)
1 Tablespoon dried minced onion
1 Tablespoon Lea & Perrins Worcestershire sauce
4 hamburger buns
Optional: extra Parmesan cheese for topping

Steps:

  • In a medium bowl, combine beef, garlic, Parmesan cheese, minced onion, and Worcestershire sauce. Using your hands, mix until all ingredients are well-mixed.
  • Separate the beef mixture into 4 approximately equal portions.
  • Place one portion at a time into a burger press and form into patties. (Or, use your hands to form meat into patties.)
  • Heat your grill to high heat.
  • Grill burgers for 3-4 minutes per side, flipping once, until the internal temperature measures 160 degrees F with a meat thermometer.
  • If desired, lightly toast buns on the grill during last few minutes of cooking.
  • Top burgers with extra Parmesan cheese. Serve immediately.

1 pound lean ground beef (500 grams)
1 egg
8 tablespoons freshly grated parmesan cheese divided (40 grams)
3-4 sprigs freshly chopped Italian parsley
salt and pepper to taste
1 onion sliced
1 large firm ripe tomato sliced
oregano
basil
salt

Steps:

  • In a medium bowl combine ground beef, egg, 3 tablespoons parmesan cheese (15 grams), chopped parsley, salt and pepper, and form into 4 patties.
  • In a small dish add 5 tablespoons parmesan cheese (25 grams), and coat patties one at a time.
  • In a medium frying pan add 1 tablespoon olive oil heat and then add patties and cook until no long pink and browned.
  • On either an indoor pan grill or BBQ grill place tomato and onion slices, drizzle tomato slices with olive oil and sprinkle with salt, oregano and basil, do the same with the onions except no basil. Flip them over and repeat. Grill until cooked. (the onion slices will take longer than the tomatoes to cook). If you want place open hamburger buns on the grill to toast.
  • On every bun place a beef patty, a slice of tomato, onion, some lettuce and mayonnaise or even an extra slice of parmesan cheese if desired. Enjoy!

2 lbs lean ground beef
1 1/2 cups fresh breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley or 2 tbs dehydrated
1 1/2 tsp basil
1 tsp oregano
1/4 cup onions (finely chopped)
1 clove garlic (finely minced)
2 eggs
1 1/2 tsp salt
1 tsp pepper
2 cups shredded mozzarella
28 oz jar pasta sauce
2 tbs olive oil
1 cup regular plain breadcrumbs

Steps:

  • Preheat oven to 350F/180C. Lightly spray a large baking dish (3-4Q/L) with non-stick spray.
  • Mix the ground beef, fresh breadcrumbs, Parmesan, parsley, basil, oregano, onion, garlic, eggs, salt and pepper in a large bowl. Combine well. Divide into 6 equal portions and shape into patties.
  • Heat olive oil in a large skillet over medium heat.
  • Dredge patties in the regular dry breadcrumbs (I find this step stops a lot of shrinkage).
  • Brown patties on both sides then place in the prepared baking dish.
  • Pour sauce over the patties. Cover the baking dish with aluminum foil and bake for 20 minutes.
  • Remove foil and spread the shredded cheese over the patties. Return to the oven and bake for an additional 10 minutes--until cheese is melted.

1/2 cup water, plus more if needed
2 ounces (4 tablespoons) unsalted butter
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup all-purpose flour
2 large eggs, plus 1 large egg yolk, lightly beaten, for egg wash
3 tablespoons grated Parmesan cheese
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees. Heat water, butter, sugar, and salt in a medium saucepan over medium-high heat, stirring occasionally until butter is melted and mixture is boiling. Remove from heat. Using a wooden spoon, stir in flour. Return to medium heat, and cook, stirring constantly, until mixture pulls away from the sides and a film forms on the bottom of the pan, about 4 minutes.
  • Transfer to the bowl of a mixer, and beat on low speed until slightly cooled, about 2 minutes. Increase speed to medium, and add 2 eggs, one at a time, letting each incorporate before adding the next. Beat until dough is smooth and shiny, about 1 minute more. Test the dough by touching it with your finger and lifting to form a string. If string doesn't form, add water, 1 teaspoon at a time, until it does.
  • Transfer dough to a pastry bag fitted with a 1/2-inch plain tip. Pipe small dots at the corners of baking sheets, and lay parchment on top, pressing to secure. Pipe 1-inch rounds onto parchment, spacing 1 inch apart. Brush with egg wash, and sprinkle with Parmesan, salt, and pepper.
  • Bake until rounds are puffed and pale golden, about 10 minutes. Reduce oven temperature to 350 degrees, and bake until golden and dry in the center, 20 to 25 minutes.

When chicken Parmesan is refashioned into a quicker affair as a burger for sunny days and warm nights, it avoids the downfalls of many chicken burgers. This chicken patty is both juicy and flavorful thanks to the addition of Parmesan, herbs, garlic and tomato paste. It cooks over a lower-than-usual temperature, which maintains moisture while still browning, thanks to the sugars in the tomato paste. The burgers are assembled with tomato and arugula for freshness, and they wouldn't properly nod to chicken Parm without a blanket of gooey, sweet mozzarella.

1 tablespoon plus 1/2 teaspoon olive oil, plus more as needed
1 pound ground chicken or turkey
1/2 cup plus 2 tablespoons finely grated Parmesan
1/4 cup chopped basil or parsley leaves
2 tablespoons tomato paste
2 garlic cloves, finely grated
Kosher salt (such as Diamond Crystal)
4 (1/4-inch-thick) slices from a large ripe tomato
1/2 cup grated fresh or low-moisture mozzarella
4 burger buns or ciabatta rolls
Arugula, for serving

Steps:

  • Lightly grease a large plate with oil and set aside. In a medium bowl, combine the ground chicken with 1/2 cup Parmesan, the basil, tomato paste, garlic and 1 teaspoon salt. Working the meat as little as possible, form 4 patties that are each about 4 1/2 inches wide and about 1/2 cup or 135 grams. Transfer to the greased plate and refrigerate until Step 3. (This helps prevent the juices and fat from leaking.)
  • On a rimmed plate, sprinkle the tomato slices with salt. In a bowl, stir together the mozzarella and the remaining 2 tablespoons Parmesan.
  • Heat 1/2 teaspoon olive oil in a large skillet over medium. Add the buns, cut sides down, and toast until golden brown, 2 to 3 minutes. Transfer to serving plates.
  • Heat 1 tablespoon olive oil in the skillet over medium. Working in batches if necessary, add the patties and cook until browned underneath, 3 to 5 minutes. (Reduce heat if the patties are burning.) Flip the patties, top with the cheese mixture, cover the skillet with a lid or baking sheet, and cook until the cheese is melted and the patties are cooked through, 3 to 5 minutes. Turn off the heat.
  • Pat the tomatoes dry. To each bottom bun, add a handful of arugula, followed by a slice of tomato, a chicken patty and its top bun. Serve hot.

3 cups marinara sauce (page 108)
1 pound ground veal
1/2 cup grated Grana Padano or Parmigiano-Reggiano
2 tablespoons chopped fresh Italian parsley
1/2 teaspoon kosher salt
All-purpose flour, for dredging
1 cup dry bread crumbs
2 large eggs
Vegetable oil, for frying
4 oblong Italian rolls, about 3 to 4 inches long, split open
8 large fresh basil leaves
8 ounces low-moisture mozzarella, thinly sliced

Steps:

  • Preheat oven to 400 degrees F. Warm the marinara sauce in a small pot over low heat. Combine the veal, 1/4 cup of the grated cheese, the parsley, and 1/4 teaspoon of the salt in a small bowl. Mix with your hands, and shape into four oblong patties (that will fit on your rolls) about 1 inch thick. Spread the flour and bread crumbs on two shallow, rimmed plates, and beat the eggs with the remaining salt in a shallow bowl.
  • Pour 1/2 inch vegetable oil into a large skillet over medium heat. Dredge the patties in flour, shaking off the excess, then dip in the beaten egg, letting the excess drip back in the bowl. Press the patties into the bread crumbs to coat both sides. When the oil is hot, carefully slide the patties into the oil. Fry, turning once, until golden brown and just cooked through, about 8 to 10 minutes. (You will know the patties are cooked through when you press on one and no more juice comes out.) Drain the cooked patties on paper towels.
  • Lay the rolls open on a large baking sheet while still hot. Place a patty on the bottom half of each roll, and spread each patty with about 1/3 cup marinara, keeping the remaining marinara warm for serving.
  • Sprinkle remaining 1/4 cup grated cheese over the marinara on the patties, then top each with 2 basil leaves. Evenly distribute the sliced mozzarella over the leaves. Bake until bread is toasted and cheese is melted and browned on top, about 10 minutes. Serve with additional warm marinara for dipping.
