GARLIC MASHED CAULIFLOWER

Garlic Mashed Cauliflower image

This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

Time 25m

Yield 4

Number Of Ingredients 7

1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
  • Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

  • If your cauliflower is not cut, then cut off the florets and then give them a rough chop to get to small pieces that can cook faster.
  • To a large Sheet pan, add cauliflower florets and whole garlic cloves (with skin is fine as you can remove later). Drizzle or Spray everything with 1 tbsp Olive Oil plus salt and pepper, then rub it all around with your hands. Spread out into a single layer. Put the pan in the oven center rack and roast for 20 minutes.
  • If the skins are still on the garlic, remove or squeeze the roasted garlic out. Discard the skins and then transfer the garlic and the cauliflower to a food processor. Add the milk, chicken base. Pulse to get going, then puree until smooth. Add the parmesan cheese and pulse to combine. Taste for salt and pepper and add as needed.

  • Preheat oven to 400°F. Slice the top off the head of garlic to expose the tops of the garlic cloves.
  • Drizzle the garlic generously with olive oil and wrap with foil. Bake garlic for 45 to 50 minutes, until garlic is nice and soft. Remove garlic from oven and set aside to cool.
  • Place cauliflower and a few tablespoons of water in a microwave safe bowl with a lid (I use a microwave steamer container, but you can also use a glass casserole dish if it has a microwave safe lid.)
  • Cook for 5 to 6 minutes on high, until just fork tender. You do not want to overcook your cauliflower, or your cauli mash will come out runny/soupy. Drain excess water from cauliflower.
