Chicken with Black Bean Sauce is a simple, quick stir-fry that takes just 5 minutes to cook! Fermented black beans have such a unique umami favor that you're going to want to make this every week.

2 chicken breasts ((about 12 ounces/340g, cut into 1/8-inch thick slices))
3 tablespoons water
3 teaspoons cornstarch
1 teaspoon oil
2 teaspoons light soy sauce
3 tablespoons oil ((divided))
3 slices ginger ((julienned))
3 cloves garlic ((smashed and chopped))
3 scallions ((chopped and separated into white and green parts))
3 tablespoons fermented black beans ((washed and drained))
1 green bell pepper ((cut into bite-sized pieces))
1 red bell pepper ((cut into bite-sized pieces))
½ teaspoon sugar
1 tablespoon Shaoxing wine
¼ teaspoon salt ((or to taste))
2 tablespoons water

Steps:

  • Combine the chicken and the marinade ingredients in a bowl, and mix until all the liquid is absorbed. Allow to marinate for 30 minutes.
  • Pre-heat your wok over high heat, until it starts to smoke. This step is essential, as it prevents the chicken from sticking to the wok. With your spatula, spread 2 tablespoons of oil over the bottom of the wok. Add the chicken, and quickly spread the pieces into a single layer. Let the chicken cook for about 30 seconds, flip, and cook the other side for another 30 seconds. The chicken is done once it turns opaque--be careful not to overcook it. Turn off the heat, transfer the chicken to a dish, and set aside.
  • Next, heat 1 tablespoon of oil in the wok over medium heat. Add the ginger, and let it cook for 15 seconds. Next, add the garlic, the white parts of the scallions, and the black beans. Stir for another 30 seconds. Now turn up the heat to high. Add the green and red peppers, and stir fry for about a minute. Add the sugar, Shaoxing wine, salt, the chicken, 2 tablespoons of water, and the green parts of the scallion. Quickly stir-fry everything well to coat in the sauce, and serve!

Greek flavors enliven these butterflied chicken breasts stuffed with spinach, tomato, and feta cheese and baked with a garlicky lemon herb sauce.

2 skinless, boneless chicken breast halves
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 (10 ounce) package spinach, roughly chopped
1 tomato, seeded and diced
½ onion, diced
¼ cup crumbled feta cheese, or more to taste
butcher's twine
2 tablespoons olive oil
1 tablespoon lemon juice, or more to taste
2 cloves garlic, minced
½ teaspoon dried oregano
¼ teaspoon chopped fresh rosemary
¼ teaspoon dried thyme
salt and ground black pepper to taste

Steps:

  • Place chicken breasts on a flat work surface. Slice each horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Place each one between 2 sheets of heavy plastic. Firmly pound chicken with the smooth side of a meat mallet to a 1/4-inch thickness.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Season insides of chicken with salt, pepper, and garlic powder. Layer spinach, tomato, onion, and feta cheese over chicken in that order. Roll chicken over the stuffing and tie ends with butcher's twine.
  • Mix olive oil, lemon juice, garlic, oregano, rosemary, thyme, salt, and pepper together to make the sauce.
  • Heat a cast iron skillet over high heat. Add chicken; cook until browned, about 5 minutes per side. Brush 1/2 of the sauce on top.
  • Bake in the preheated oven for 30 minutes. Pour the remaining sauce over chicken. Continue baking until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes more.
  • Remove chicken and let rest for 5 minutes. Slice into pinwheels and serve with pan juices.

Black Bean Sauce
4 boneless skinless chicken breast halves
1/2 cup grated Oaxaca or Monterey Jack cheese
1/4 cup crumbled or grated cotija or mild feta cheese
2 green onions, , finely chopped
1 jalapeño pepper, seeded, veins removed, and finely chopped
1 tablespoon finely chopped fresh oregano
1 tablespoon chopped cilantro, plus extra for garnish
1/2 teaspoon salt, or to taste
Freshly ground pepper, to taste
2 teaspoons vegetable oil or olive oil

Steps:

  • 1. Prepare the black bean sauce. Reserve in the pan off heat. Preheat oven to 450°. Trim excess fat from the chicken breasts. Using a sharp knife, cut each breast lengthwise making a pocket for stuffing as large as possible without cutting through the edges on the other sides. Set aside on a plate. 2. In a medium bowl, mix together the cheeses, onion, chile, oregano, and cilantro. Fill each chicken breast pocket equally with the mixture. Season the chicken with salt and pepper. Brush both sides with oil. 3. Heat a stovetop grill pan or large skillet over medium heat. (If using a skillet, pour in about 1 tablespoon cooking oil. Do not oil a grill pan.) Cook the stuffed breasts until lightly browned on both sides, 3 to 4 minutes per side. 4. Transfer the pan with the chicken to the oven and roast until the meat is white throughout, about 15 minutes. 4 boneless skinless chicken breast halves (6 ounces each)
Salt and pepper to taste
1 package (6 ounces) chicken stuffing mix
1/2 cup chopped pecans
2 tablespoons butter
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Steps:

  • Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. Prepare stuffing mix according to package directions. Meanwhile, in a small skillet, saute pecans in butter until lightly browned; add to the stuffing., Place 1/2 cup stuffing down the center of each chicken breast half; roll up and secure with a toothpick. Place seam side down in a greased shallow 1-qt. baking dish., Spoon soup over chicken; sprinkle with remaining stuffing. Cover and bake at 400° for 25-30 minutes or until chicken is no longer pink. Remove toothpicks.

4 boneless skinless chicken breasts
salt
pepper
1/4 cup soft margarine
1/8 teaspoon ground oregano
1 teaspoon dried parsley
6 ounces monterey jack cheese, cut into 4, 1/4 inch slices
1/4 cup flour
2 eggs, beaten
1 cup Italian style breadcrumbs
1/4 cup dry white wine

Steps:

  • Pound chicken breasts between wax paper until thin. Season with salt and pepper.
  • Combine margarine with herbs. Spread mixture on the inside of chicken. Place slice of cheese on each piece of chicken and roll. Secure with a toothpick.
  • Cover chicken with flour lightly and completely. Dip in egg. Roll in bread crumbs.
  • Place in a pan and bake at 375 degrees for 15 minutes. Pour wine over chicken and bake 20 to 25 minutes longer.
