MAZURKAS (POLAND)
We tasted cookies from all over Eastern Europe, and these bars really stood out - they were beautiful, satisfying, sweet and colorful, and the dried fruit really sings Christmas. They're usually made on Christmas Eve, but their portability would make them great for bake sales or cookie swaps.

Steps:
- Preheat oven to 375 degrees F. Coat a 9 by 13-inch baking pan with butter or nonstick spray. Line the bottom of the pan with parchment paper.
- For the cookie: Whisk the flour, baking powder and salt in a bowl.
- Beat the butter and sugar in a large bowl, with an electric mixer, at medium-high speed until creamy, about 2 minutes. Scrape down the sides and add the egg and vanilla extract. Beat well, and then scrape down the sides.
- While mixing on low speed, add the dry ingredients in 3 batches. Scrape down the bowl between each addition, and mix until just blended.
- Transfer the dough to the prepared pan and spread evenly with a spatula. Bake until light golden brown with spots of darker golden brown and darker edges, about 30 minutes. Cool completely, about 45 minutes.
- Meanwhile, prepare the fruit: Whisk the cornstarch and sugar together in a small saucepan. Whisk in orange juice until mixture dissolves. Stir in the fruits and candied orange peel. Bring to a simmer over medium, stirring often; continue to cook, stirring until thickened into a compote, about 3 minutes more. You should be able to draw the spoon along the bottom of pan and see the pan with no liquid seeping back. Remove from heat and transfer to a bowl. Stir in the nuts and lemon zest.
- Spread fruit evenly over the top of the cooled crust.
- Heat oven to 350 degrees F. Bake mazurkas until golden brown around edges and fruit sets but is still slightly glossy and jewel-like, about 10 minutes. Cool in pan on rack.
- Cut, using an oiled knife, into 24 bars. Serve.
PIG PICKIN SAUCE BY MEAN CHEF
Adopted recipe. Please note that this is not a sweet BBQ sauce at all. If you are looking for a "Memphis" or "Kansas City" style sauce, with tomatoes and molasses or brown sugar, please look elsewhere or you will be disappointed. Eastern North Carolina is where you would find the original inspiration for this. Traditionally, a whole hog is cooked and this style of sauce is used both for the mop and on the side. I really like this stuff, it's a nice change from sweet sauces and makes a dynamite mop, as well. Keeps in a covered container in the fridge almost indefinitely.

- Preheat oven to 350°F.
- Melt butter and cool.
- Combine all dry ingredients in mixer with paddle.
- Add melted butter until well combined.
- Press half of the mixture in a half sheet pan and roll to firm.
- Spread with jam to within 1/2-inch of edges.
- Spread remaining mixture evenly on top and press down lightly.
- Bake until golden brown.

MEAN CHEF'S ZUNI ROLLS WITH RASPBERRY CHIPOTLE SAUCE
I adopted this recipe from Mean Chef. This recipe I found on Epicurious. It is fabulous. The sauce itself has lots of possibilities on its own. It is great on pork tenderloin and roast chicken. When raspberries are in season, I make a whole bunch of the sauce and freeze it.

- Make chipotle sauce: In a small saucepan combine sauce ingredients and simmer, stirring occasionally, until sugar is dissolved.
- In a blender or food processor puree sauce and strain through a fine sieve into a bowl.
- Make Zuni rolls: Finely chop scallions.
- Arrange tortillas on a work surface and divide Havarti, turkey, bacon, and scallions evenly between them.
- Drizzle some chipotle sauce over filling and gently roll up tortillas.
- In a lightly oiled skillet toast rolls, starting with seam sides down, over moderately high heat, turning them, until golden on all sides, about 3 minutes.
- Diagonally halve tortillas crosswise and serve remaining sauce separately.
- Can also bake in 350 oven until cheese is melted and they are hot (I usually do them this way).
MEAN CHEF'S BAKED PRAWNS WITH FETA
I adpoted this recipe from the infamous Mean Chef, it had no intro as it really does not need one. An elegant and deep flavored dish sure to please.

Steps:
- Gently saute onion in oil until transparent.
- Add scallions and garlic, cook 2 minute.
- longer.
- Add tomatoes, wine, most of the parsley, oregano, and salt and pepper to taste.
- Cover and simmer gently for 30 minute.
- ,until thick.
- Spoon half of the tomato sauce into 6 individual oven dishes or 1 large oven dish.
- Add shrimp, and spoon remaining sauce on top.
- Crumble feta cheese and sprinkle on top.
- Heat oven to 500°F.
- Cook 10-12 minutes, until shrimp are pink and feta melted and lightly browned.
- Sprinkle with remaining parsley, and serve.
BOY SCOUT APPLES
I was a girl scout and we never had these delicious apples. So thanks to The Deen brothers for giving up the recipe! From their cookbook, Get Fired Up! You can substitute your favorite jam for the raspberry, just make sure it goes with apples. If using salted butter(or margarine) you can eliminate the salt in the ingredients.

- Core the apples and peel off a strip around the equator(middle) of each apple to prevent bursting.
- Mash together the butter, sugar or jam, cinnamon, and salt in a small bowl.
- Fill each apple cavity with some of the mixture and wrap each apple individually in aluminum foil.
- Preheat a grill to medium high heat.
- Place the apple packets on the grill. Close the cover and cook until the fruit is just tender, 8-10 minutes.
- Remove from grill, unwrap carefully, and enjoy!
