2/3 cup rotisserie-cooked chicken, shredded (not cold)
2/3 cup mozzarella cheese, shredded
3 tablespoons olives, sliced
3 tablespoons sun-dried tomatoes, chopped
3 tablespoons pepperoncini peppers, sliced
3 tablespoons roasted red peppers, chopped
1/4 cup parmesan cheese, shredded
4 slices sourdough bread

Steps:

  • Stir together chicken, mozzarella, olives, sun dried tomatoes, pepperoncini, and roasted red peppers.
  • Spray a large nonstick skillet with cooking spray (such as Pam) and place over medium-high heat. Divide Parmesan into 4 small piles (about 1 tablespoon each) spreading slightly. Top with 4 slices of bread.
  • Pile chicken mixture onto half the bread and cook for a minute or two until cheese is crusty. Close sandwiches and reduce heat ot medium. Cook for a minute or to two on each side or until bread is golden and filling is warm.

4 boneless skinless chicken breasts (about 1 1/4 lb)
1/2 cup Original Bisquick™ mix
1/2 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1/2 cup water
2 tablespoons butter or margarine
4 hoagie buns, split
Lettuce leaves, if desired
4 slices (1 oz each) mozzarella cheese
1 cup tomato pasta sauce or marinara sauce, heated

Steps:

  • Flatten each chicken breast to about 1/4-inch thickness between sheets of waxed paper or plastic wrap.
  • In medium bowl, mix Bisquick mix, Parmesan cheese and Italian seasoning. Dip chicken into water, then coat with Bisquick mixture.
  • In 12-inch nonstick skillet, melt butter over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until no longer pink in center. Fill buns with chicken, lettuce, mozzarella cheese and pasta sauce.

1 cup spaghetti sauce
2 cups diced chicken, cooked
1 small onion, diced
1 green pepper, diced
2 dashes hot sauce
salt
pepper
1/2 cup parmesan cheese
4 rolls

Steps:

  • Place 1st 7 ingredients into a sauce pan and heat slowly.
  • Add Parmesan cheese; stir.
  • Heat rolls or ciabatta bread, or french bread.
  • Top bread with chicken mixture a slice of mozzarella cheese and broil until cheese is bubbly and melted.

4 French rolls or 4 hamburger buns
1 cup marinara sauce
1/2 cup parmesan cheese

Steps:

  • Microwave frozen patties on high for 3 minutes.
  • Add cheese to each patty and microwave an additional 45 seconds or until cheese is melted.
  • Lightly toast french rolls or hamburger buns in toaster.

3 tablespoons all-purpose flour
1/2 teaspoon fresh ground black pepper
4 chicken breast halves, boneless and skinless
natural olive oil nonstick cooking spray
6 tablespoons fresh lemon juice
4 garlic cloves, minced
4 teaspoons Worcestershire sauce
1 teaspoon italian seasoning
1 dash hot pepper sauce
2 tablespoons walnuts, toasted and chopped
4 teaspoons grated parmigiano-reggiano cheese
4 wheat sandwich buns, sliced lengthwise
4 romaine lettuce leaves

Steps:

  • Combine flour and pepper. Coat chicken with flour mixture, shaking off excess.
  • Spray a 10-inch skillet with cooking spray for 2 seconds; over medium heat, lightly brown chicken on both sides.
  • Combine lemon juice, garlic, Worcestershire and hot pepper sauce and italian seasoning; pour over chicken.
  • Cover; simmer for 15 minutes or until chicken is done.

1 tablespoon olive oil, or as needed
2 slices Italian bread
1 tablespoon pesto
2 slices mozzarella cheese
¼ pound sliced cooked chicken breast

Steps:

  • Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
  • Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. Arrange chicken over the cheese and top with remaining mozzarella. Spread remaining pesto on the other slice of bread and place on top of the sandwich.
  • Close the grill and cook until cheese is melted and bread is golden brown and crispy, about 4 minutes.

8 slices French bread
1 cup shredded romaine lettuce
1 1/2 teaspoons shredded parmesan cheese

Steps:

  • combine chicken and dressing in ziploc bag, shake to coat.
  • chill 2 hours, turning occasionally.
  • remove chicken, discard marinade. grill in skillet over medium high heat 4 minutes each side or until chicken done.
  • grill bread slices in same pan.
  • combine lettuce and parmesan, arrange over 4 bread slices. top with chicken and remaining slices. serve immediately.
