Yield Makes 8 servings

Number Of Ingredients 12

For coffee nut crisp:
1 large egg white
1/4 cup packed light brown sugar
1/2 teaspoon instant coffee granules, crushed
1 cup walnut pieces (3 1/2 ounces), coarsely chopped if desired
For sauce:
1 cup granulated sugar
1/4 cup water
6 Tablespoons Irish whiskey
1/4 cup heavy cream
1/4 teaspoon salt
2 pints good-quality coffee ice cream

Steps:

  • Make crisps:
  • Preheat oven to 325°F with rack in middle. Line a rimmed sheet pan with a nonstick baking liner, or line it with foil and lightly oil foil.
  • Whisk egg white with sugar, coffee powder, and a pinch of salt in a bowl until blended. Stir in walnuts until coated. Spread mixture into a 10- by 8-inch rectangle in pan.
  • Bake until crisp is dry to the touch, 20 to 25 minutes. Transfer pan to a rack to cool completely.
  • Loosen crisp with a metal spatula and break into small pieces.
  • Make sauce:
  • Bring sugar and water to a boil in a 2-quart heavy saucepan over medium-high heat, stirring until sugar is dissolved. Boil without stirring, but washing down any sugar crystals with a brush dipped in cold water, until syrup begins to turn golden, about 5 minutes. Continue to boil, swirling pan occasionally, until syrup is a deep golden caramel.
  • Remove pan from heat and carefully add whiskey, cream, and salt (mixture will bubble up and steam and caramel will harden).
  • Return pan to heat and simmer, stirring, until caramel is dissolved and sauce is smooth. Cool to warm.
  • Serve sauce over scoops of coffee ice cream then sprinkle with walnut crisp.

Beef Fillet With Irish Whiskey and Cream Pan Sauce image

Make and share this Beef Fillet With Irish Whiskey and Cream Pan Sauce recipe from Food.com.

Provided by KathyP53

Categories     Steak

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

4 (7 1/2 ounce) beef tenderloin (about 7 1/2 oz. each and 1 1/4 inches thick)
kosher salt & freshly ground black pepper
1 tablespoon vegetable oil (if not using a cast-iron pan)
1 tablespoon unsalted butter
3 tablespoons finely chopped shallots
1/4 cup Irish whiskey (like Jameson)
1/2 cup low sodium beef broth
1/2 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
1/2 cup heavy cream
1/2 teaspoon fresh lemon juice

Steps:

  • Season each steak generously with salt and pepper. Heat a heavy-based (preferably cast iron) skillet that's large enough to hold the steaks over high heat until quite hot. Add the vegetable oil if not using cast iron. Test pan by touching the edge of one steak to the pan surface; it will sizzle briskly when ready.
  • Immediately drop in the steaks and sear one side for 2 minutes. SNeak a peak to see if the first side is nicely browned. Flip the steaks and sear the other side for 2-3 minutes.
  • Reduce heat to medium high, cook for another 2 minutes, flip, and cook until a digital thermometer reads 120 degrees for rare, or 125 degrees for medium rare, another 1-2 minutes. Transfer steaks to a warm platter and let them rest, covered loosely with foil, while you make the sauce.
  • Return unwashed pan to medium heat. Add butter and let it melt. Add shallots and cook, stirring, until fragrant and just tender, 1-2 minutes. Add whiskey and stir with wooden spoon, scraping up any browned bits stuck to the pan. Add broth and Worcestershire sauce, raise the heat to medium high, and bring to a boil. WHisk in the mustard and then the cream. COntinue to cook at a boil, stirring, until reduced to a saucy consistency, 3-5 minutes. Taste the sauce and season with salt and pepper, and lemon juice. Serve steak with the sauce.

HOMEMADE IRISH (WHISKEY) CREAM

Homemade Irish (Whiskey) Cream image

This recipe turns out with the best flavour if you make it ahead and let it chill for 24 hours before serving. If you'd rather not serve it over crushed ice, chill the glass while you prepare the drink. Store leftovers in the refrigerator up to two months in an airtight container. If the Irish cream has been sitting in the refrigerator, shake it before serving.

  • Seasoning Pork Chops: Season generously with salt, pepper, garlic powder and Italian seasoning to prepare them for searing.
  • Cooking Pork Chops: Heat 1 tablespoon butter in a large skillet over medium-high heat.Once hot, add seasoned pork chops from Step 1 and sear them by cooking for 4-5 minutes per side for a total of 8-10 minutes. Remove pork from heat and transfer to a plate. If the pork chops are thick, they won't be cooked through at this point (hence the need for the oven later on).
  • Cooking Mushrooms: Return skillet to heat, add second tablespoon of butter, wait until it melts and then add mushrooms. Cook them for 5-6 minutes on medium heat. Remove them from the skillet and transfer to a plate.
  • Creamy Irish Whiskey Sauce: Add 3rd tablespoon butter to the pan, wait until melted and next add flour. Cook for about 1 minute on medium heat until well incorporated into the butter mixture. Next start pouring in whiskey while still on medium heat - about 1 minute. Next add beef broth and heavy cream, followed by Worcestershire Sauce and Italian seasoning. Add salt to taste and taste it to make sure it's to your liking. Simmer the sauce for 2-3 minutes only.
