4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
  • Cool on a baking rack. Serve warm or at room temperature.

1 lb plain white flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1 tablespoon sugar
3 ounces sultana raisins
1 cup buttermilk (or fresh milk soured with 1 tblsp of yoghurt)

Steps:

  • Preheat oven to 400 degrees F.
  • Sift flour, salt, soda and cream of tartar into a mixing bowl.
  • Stir in sugar and sultanas.
  • Add milk, mixing to form a firm, but not too stiff, dough.
  • Knead lightly on a floured surface and form into a slightly flattened round.
  • Cut a deep cross on the top of the round with a sharp knife and brush top of round with milk.
  • Place on a greased and lightly floured baking sheet and bake in center of oven for 25 minutes.
  • Turn the loaf upside-down on the baking sheet and return to oven for another 5 minutes.
  • The loaf is done when it sounds hollow when tapped on the base.
  • Wrap in a damp cloth and place on its side to cool.

1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 tablespoons sugar
6 tablespoons solid shortening (recommended: Crisco)
2/3 cup raisins, brown or golden or mixed
2 teaspoons caraway seeds
1 cup buttermilk

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl sift together the flour, baking soda, salt, nutmeg, and sugar. Using a pastry blender or fingertips, work the shortening into the flour until the consistency is the same as that of small peas. Stir in the raisins and caraway and mix to distribute evenly. Gradually stir in the buttermilk, 1/4 cup at a time, using only enough to allow the dough to come together. Knead the dough for 1 to 2 minutes. Shape the dough into a round loaf and place on a greased baking sheet. Cut an X on the top and over the sides of the loaf. Bake for 45 minutes or until the bread sounds hollow when tapped. Cool on a rack.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
3 tablespoons sugar, divided
1 cup warm buttermilk (110° to 115°)
2 tablespoons butter, softened
1/2 teaspoon salt
1/2 teaspoon baking soda
3-1/2 to 4 cups all-purpose flour
3/4 cup golden raisins

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Beat in the buttermilk, butter, salt, baking soda, 1 cup flour and remaining sugar until smooth. Stir in raisins and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 40 minutes., Punch dough down. Turn onto a lightly floured surface; knead for 2 minutes. Shape into a round loaf. Place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. With a sharp knife, cut a 1/4-in.-deep cross on top of loaf., Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to cool on a wire rack.

Authentic Irish soda bread does not contain raisins, but I like mine with raisins so I include them. This is a very easy and delicious recipe.

1 cup buttermilk, divided
1 ½ cups golden raisins
½ cup butter, melted - divided
4 cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 9-inch deep-dish pie plate.
  • Spoon 1 tablespoon of the buttermilk into a small bowl; place remainder of 1 cup buttermilk into a separate bowl.
  • Stir golden raisins into the larger amount of buttermilk and allow raisins to soak while you complete the remaining steps.
  • Spoon 1 tablespoon of the melted butter into the small bowl with the tablespoon of buttermilk; stir to combine and set aside. Set remaining melted butter aside.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
  • Make a well in the center of the dry ingredients, pour in reserved butter, and stir until the mixture resembles coarse crumbs.

  • Mix the soaked raisins with buttermilk into dough and shape dough into a ball.
  • Place the ball of dough into prepared pie dish and lightly pat dough down so top is slightly domed.
  • Use a sharp knife to cut two crisscrossing lines through the center of the loaf about 1/4 inch deep.
  • Thoroughly brush buttermilk and butter mixture over the loaf, getting the mixture into the crevices.
  • Bake in the preheated oven until loaf is golden brown and a toothpick inserted into the center comes out clean, 55 minutes to 1 hour.

Each St. Patrick's day, I bake this bread for my neighbor, who is Irish. Then I make another loaf for my family to enjoy. Sweet raisins contrast nicely with the caraway.

4 cups all-purpose flour
3 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
6 tablespoons cold butter or margarine
1-1/2 cups raisins
1 tablespoon caraway seeds
2 large eggs, beaten
1-1/2 cups buttermilk

Steps:

  • In a large bowl, combine the first five ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in the raisins and caraway seeds. Set aside 1 tablespoon beaten egg. In a bowl, combine buttermilk and remaining eggs; stir into crumb mixture just until flour is moistened (dough will be sticky). Turn onto a well-floured surface; knead about 10 times. Shape into a ball., Place in a greased 9-in. round baking pan. Cut a 4-in. X, 1/4-in. deep, in the center of the ball. Brush the top with reserved egg. Bake at 350° for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Cover loosely with foil during the last 20 minutes if top browns too quickly. Cool for 10 minutes before removing from pans to a wire rack to cool completely.
