1/2 cup semolina flour or cornmeal
All-purpose flour, for dusting
1 pound store-bought pizza dough, thawed if frozen and at room temperature
1 large egg
1/2 cup shredded Italian cheese blend
1/2 cup ricotta
1/2 cup grated Parmesan
4 scallions, thinly sliced
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
24 thin slices pepperoni (about 2 ounces)
2 cups roasted garlic tomato sauce, such as Classico® Roasted Garlic Pasta Sauce

Steps:

  • Position a rack in the middle of the oven and preheat to 450 degrees F. Sprinkle a baking sheet with the semolina and set aside.
  • Lightly flour a work surface and roll the dough into a round that is about 12 inches wide and 1/2 inch thick. Cut out 8 rounds with a 3 1/2- to 4-inch biscuit cutter or drinking glass. Dust with flour and cover with a clean kitchen towel or plastic wrap.
  • Beat the egg with 1 tablespoon water in a small bowl. Set aside.
  • Combine the cheese blend, ricotta, 1/4 cup Parmesan, scallions and garlic powder in a medium bowl. Season with salt and pepper to taste.
  • Place 3 slices of the pepperoni on one half of each round of dough, leaving a 1/4-inch border around the edges. Top each round with 2 tablespoons of the cheese mixture.
  • Brush the egg wash around the edges of one dough round using your finger or a pastry brush. Gently fold the dough over the filling to enclose and crimp the edges with a fork to seal. Repeat with the remaining dough rounds.
  • Brush the tops of the calzones with the egg wash and sprinkle with the remaining 1/4 cup Parmesan.
  • Place the calzones on the prepared baking sheet and bake on the middle rack until golden, 14 to 16 minutes, rotating the sheet halfway through for even baking.
  • While the calzones bake, heat the tomato sauce in a medium saucepan over medium heat until bubbling, 1 to 2 minutes. Transfer to a small bowl. Place the calzones on a platter with the sauce and serve immediately.

Individual Calzones With Three Fillings image

Here's a fun option when cooking for vegetarians, carnivores AND picky kids: calzones with cheese, calzones with spinach, and calzones with sausage. I used my bread machine to make pizza dough, but it's easy to find at the grocery pre-made. Same with red sauce: home made or store-bought work just fine.

1 quart whole milk ricotta cheese
1 lb whole milk mozzarella, shredded
1 cup parmesan cheese, shredded
1 cup romano cheese, shredded
1 bunch fresh basil, julienned
2 (8 ounce) bags baby spinach leaves, cooked and drained
1 large red bell pepper, roasted, seeded, peeled and diced
1 lb cooked italian sausage, 1/4 dice
8 ounces prosciutto ham, 1/4 dice
2 lbs recipe pizza dough
32 ounces pasta sauce, home-made or jarred, for dipping

Steps:

  • Preheat oven to 400°.
  • Combine cheese and basil in a large bowl until thoroughly mixed. Season to taste with black pepper, cover and refrigerate.
  • Squeeze as much liquid as possible out of the spinach and chop roughly. Combine with roasted red pepper, cover and refrigerate.
  • Combine diced meats, cover and refrigerate.
  • Divide pizza dough into 16 equal portions and roll each into a thin 6" circle, adding flour to the work surface as needed to prevent sticking. Place 1/3 to 1/2 cup cheese mixture in the center of each, using more for those which will be plain cheese. Divide meat and spinach fillings as will suit your vegetarian and carnivorous diners.
  • Bring dough from opposite sides of each circle to meet over the centered filling, taking care not to tear the dough. Seal by folding or pinching. Repeat until all calzones are closed.
  • Distribute calzones onto baking sheets covered in parchment paper. They should not touch. Prick the tops of each to vent steam.
  • Bake 10 - 15 minutes until golden. Serve with sauce for dipping.

1 tablespoon olive oil, plus more for the bowl
1 1/2 teaspoons instant dry yeast
1 teaspoon kosher salt
1/2 teaspoon sugar
2 1/4 to 2 1/2 cups bread flour, plus more for dusting
3/4 cup plus 2 tablespoons warm water
8 ounces shredded mozzarella
1 cup whole-milk ricotta
3 tablespoons grated Parmesan
1/2 cup Homemade Pizza Sauce, recipe follows, plus more for serving, optional
1/2 to 1 cup each of your favorite calzone/pizza toppings, such as pepperoni, cooked crumbled sausage, olives, sauteed onions, pickled jalapenos, chopped basil, roasted red peppers, etc.
Olive oil, for brushing
2 tablespoons olive oil
1/2 teaspoon dried oregano
3 cloves garlic, minced
1 pinch crushed red pepper flakes
One 32-ounce can crushed tomatoes
1 sprig fresh basil
Kosher salt

Steps:

  • For the dough: Lightly oil a large bowl. Combine the yeast, salt, sugar and 2 1/4 cups of the flour in the bowl of a stand mixer fitted with the paddle attachment and stir to combine. With the mixer running, add the water and oil. Beat until the dough comes together, about 2 minutes. If the dough is too wet, add more flour, 1 tablespoon at a time, until it is still soft and slightly sticky, but you can turn it out. Transfer the dough to the oiled bowl and cover with plastic wrap. Let stand until doubled in size, about 1 hour.
  • For the calzones: Preheat the oven to 500 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Mix together the mozzarella, ricotta and Parmesan in a medium bowl. Set aside.
  • Lightly flour a work surface. Turn out the dough and divide it into 4 pieces. Gently pull and stretch each piece of dough into a 7- to 8-inch round, trying to keep the thickness of the dough fairly even. Lay out the rounds and spoon one-quarter of the cheese mixture onto one side of each round (about 1/2 cup per round). Spoon about 2 tablespoons of the Homemade Pizza Sauce onto the cheese. Add up to 1/3 cup of your preferred topping onto each of the calzones, then fold the side of the dough over the fillings. Fold and crimp the edges to seal them completely.
  • Transfer the calzones to the prepared baking sheet and brush them lightly with oil. Use a sharp paring knife to cut 1 or 2 vents into each, then bake until deep golden brown, about 18 minutes.
  • Serve with additional Homemade Pizza Sauce on the side, if desired.
  • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

These air-fried calzones start with two-ingredient pizza dough, making it super easy to whip up from scratch. Feel free to experiment with other fillings instead of (or in addition to) the pepperoni, such as cooked and crumbled Italian sausage.

1 ½ cups self-rising flour, plus more for kneading
1 cup plain Greek yogurt
½ cup prepared pizza sauce
1 cup shredded mozzarella cheese
½ cup pepperoni

Steps:

  • Mix flour and Greek yogurt together in a bowl; transfer to a work surface floured with self-rising flour. Knead dough, adding more flour as needed to keep dough from being too sticky, 8 to 10 minutes.
  • Preheat an air fryer to 325 degrees F (165 degrees C) according to manufacturer's instructions. Spray the bottom of the basket with cooking spray.
  • Divide dough into 4 equal pieces. Roll each piece on a lightly floured work surface into a flat circle, about 1/8-inch thick. Spread 2 tablespoons of the pizza sauce over the bottom half of each dough circle. Top each with 1/4 cup of the mozzarella cheese and a quarter of the pepperoni. Fold dough over filling to form half circles and crimp edges to seal. Coat well with cooking spray.
  • Transfer calzones to the air fryer basket (you might need to work in batches). Cook for 4 minutes, then flip the calzone over and cook until golden brown, 4 to 5 minutes more.
