Make a batch of these breakfast cookies loaded with oats, peanut butter, and chocolate chips to eat on the go and have you feeling full all morning.

Yield 12 cookies

Number Of Ingredients 9

2 cups quick oats
3/4 cup peanut butter
1/2 teaspoon cinnamon
1/4 cup honey
1/4 cup applesauce
1/2 cup mashed banana (about 1 medium banana, mashed)
1/4 cup shredded coconut
1 1/2 Tablespoons chia seeds
1/4 cup mini chocolate chips

Steps:

  • Preheat oven to 325 degrees.
  • In a large mixing bowl or mixer, mix together all the ingredients.
  • Using a large cookie scoop, drop 12 scoops of dough onto a parchment-lined baking sheet. Flatted the cookie slightly with your hand (they won't flatten while they bake).
  • Bake for 15 minutes, until cookies start to brown on the bottom and edges.

1/2 cup oats
1/4 cup pasteurized liquid egg-whites
1 1/2 tablespoons brown sugar
1 1/2 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
2 tablespoons raisins (optional)
cinnamon, to taste

Steps:

  • In a microwave-safe bowl, combine oats, liquid egg whites, brown sugar, all-purpose flour, vanilla extract, baking powder, raisins, and cinnamon.
  • Flatten half the mixture into the bottom of the bowl and microwave for 45 seconds.
  • Pop cookie out of the bowl and repeat with second half of mixture.

  • Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Combine all of the ingredients into a large bowl of a stand mixer (or use a hand mixer). Mix until all of the ingredients are combined. The dough is thick and heavy.
  • Using a 1/4 cup measuring cup, portion 1/4 cup mounds of cookie dough onto prepared cookie sheet. Use the back of a spoon to slightly flatten out into a cookie shape. (The cookies will not spread in the oven.)
  • Bake for 16-18 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
