QUICK OAT BRAN AND BANANA MUFFINS
A delicious way to add healthy oat bran to your diet. I like the chopped bananas in these, rather than the usual mashed, as I like running across the small bits of banana. This is a recipe from Bon Appetit that I have changed somewhat to suit my taste.

Steps:
- Preheat oven to 400F; grease 12 (1/3 cup) muffin cups or use muffin liners.
- Combine first 6 ingredients in a large bowl.
- Put milk, oil, egg and vanilla in medium bowl and whisk to blend.
- Add milk mixture to dry ingredients, stirring just until combined; mix in banana, being careful not to overmix.
- Divide batter evenly among muffin cups.
- Bake about 20 minutes, or until toothpick inserted into centers of muffins comes out clean.
- Transfer to rack to cool.
BLUEBERRY NUT OAT BRAN MUFFINS
This is a delicious and lighter version of a type of oat bran muffin. You could vary the fruit - blueberries, strawberries, canned peaches, etc. They are incredibly delicious served with fresh strawberries. Yum!

- Preheat oven to 400 degrees F (200 degrees C). Line a 12 cup muffin pan with paper muffin liners, and spray liners with cooking spray.
- In a large bowl, mix the oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, blend the applesauce, egg substitute, canola oil, and vanilla extract. Thoroughly mix the applesauce mixture into the flour mixture. Fold in the blueberries and pecans. Spoon the batter into the prepared muffin cups. Sprinkle batter with granola, and press granola lightly to make it stick.
- Bake 18 minutes in the preheated oven, or until a toothpick inserted into a muffin comes out clean. Cool on a wire rack.

HEALTHY BLUEBERRY BANANA BRAN MUFFINS
These muffins are perfect for quick and healthy breakfasts or snacks, especially on busy days! They'll keep for at least a week if stored in an airtight container in the refrigerator. To reheat, microwave individual muffins for 15-18 seconds.

- Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick spray.
- In a medium bowl, stir together the oat bran, mashed banana, milk, and vanilla. Let the mixture rest for at least 10 minutes while preparing the remaining ingredients.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. In a third bowl, whisk together the coconut oil and egg white. Stir in the molasses and maple syrup. Add the oat bran mixture, stirring until fully incorporated. Add the flour mixture, stirring until just incorporated. Fold in 1 ¼ cups of blueberries.
- Evenly divide the batter between the prepared muffin cups, and gently press the remaining blueberries into the tops. Bake at 350°F for 22-24 minutes or until the tops feel firm to the touch. Cool in the muffin cups for 5 minutes before carefully transferring to a wire rack.

Steps:
- Combine whole wheat flour, oat bran, wheat germ, brown sugar, lemon rind, baking powder, baking soda and salt in a large bowl. Mix well.
- In a measuring cup, combine eggs, buttermilk, vegetable oil and blueberries.
- Add batter to muffin cups and bake in a 400 oven for 20 minutes.

- Preheat oven to 400°F. Grease twelve 1/3-cup muffin cups or line with paper muffin cups. Combine first 5 ingredients in large bowl. Whisk milk, butter, egg whites and vanilla to blend in medium bowl. Add milk mixture to dry ingredients, stirring until just combined. Mix in bananas and 1/2 cup pecans. Divide batter among prepared muffin cups. Sprinkle remaining pecans over each muffin. Bake until toothpick inserted into centers of muffins comes out clean, about 20 minutes. HEALTHY BLUEBERRY OAT BRAN MUFFINS
This recipe was found on the Rogers Oat Bran package. I'm putting it on zaar so I won't lose it. I haven't made it yet. Oat bran and wheat bran are very good for you. UPDATE. Apr 8. I finally got around to making these. These are not a sweet muffin. I added 1/2 cup brown sugar instead of white. If you want a sweeter muffin increase the sugar. I used about 2 cups frozen blueberries as I like like a lot. I made 6 giant muffins and baked for 32 min.

- Preheat oven to 375°. Makes 12 muffins.
- Add buttermilk to oat bran and let stand.
- In another bowl combine flour, baking powder, baking soda and salt, set aside.
- In large bowl beat vegetable oil, egg, sugar and vanilla together.
- Add buttermilk-bran mixture to liquids and stir well.
- Add dry ingredients all at once and stir until ingredients are just blended.
- Gently stir in blueberries.
- Spoon into prepared muffins tins. Either paper lined or greased.
- Bake 20-25 minutes or until tops are golden.
- NOTE--1 1/2 tablespoons lemon juice with milk added to make 1 1/2 cups may be substituted.

- Preheat the oven to 400° and either grease 12 muffin cups or line with liners. They are even more moist when you use muffin liners.
- Mix buttermilk and wheat bran and set aside to soak. In another medium bowl mix together all the remaining dry ingredients.
- In a large bowl add egg, sugar, oil, banana and vanilla and mix until well combined. Gently stir the dry mixture and buttermilk mixture into the egg mixture and mix until just combine and a few lumps remain. Fold in the blueberries being careful not to over mix.
- Pour into prepared muffin cups and bake for 20 minutes or until a toothpick comes out a few crumbs clinging to it. Cool 5 minutes in tins and then turn out onto rack to cool completely.
