Jumbo Shrimp With Orange and Chili Glaze image

A perfect nibble with drinks. If you cannot find jumbo shrimp just use a larger quantity of smaller shrimp. Time does not include marinating.

16 jumbo shrimp
1 orange, zest (and 2 tbs of juice)
1 red chili pepper, finely sliced
1 tablespoon light soy sauce
1 tablespoon fresh chives, chopped
2/3 cup tomato sauce
2 garlic cloves, crushed

Steps:

  • Peel the shrimp, removing the shel and legs. Rinse well and place in the bottom of a shallow dish.
  • Combine the remaining ingredients and pour over the shrimp. Leave to marinate in the fridge for 2-3 hours.
  • Preheat a non stick griddle pan until hot. Place the shrimp in the pan and cook for 2-3 mins on each side, basting with the marinade during cooking.
  • Once cooked, press a toothpick into each shrimp and place on a serving dish.

1/2 cup freshly squeezed orange juice (about 2 oranges)
1/2 cup fresh cilantro
1 tablespoon Asian red chili paste
1/4 cup extra-virgin olive oil
2 garlic cloves
3 scallions, green parts only, cut into 1-inch pieces
1 chipotle chile in adobo sauce
1/2 teaspoon salt
2 pounds extra-large shrimp (16 to 20-count size), shelled and deveined

Steps:

  • 1. Put the orange juice, cilantro, chili paste, olive oil, garlic, scallion, chipotle, and salt in a blender or food processor fitted with the metal blade and blend until smooth.
  • 2. Place the shrimp in a resealable freezer bag and pour the orange juice mixture over the shrimp. Chill in a refrigerator or ice-filled cooler for 2 to 3 hours but no longer.
  • 3. Remove the shrimp from the marinade and discard the marinade.
  • 4. Grill the shrimp over medium-high heat until they are opaque in the centers, 3 to 4 minutes per side.
  • 5. Remove from heat and serve immediately - though they still rock at room temperature.

1 tablespoon cumin seeds
1 tablespoon whole peppercorns
1 tablespoon grated orange or tangerine zest
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 pound uncooked jumbo shrimp, peeled and deveined
4 teaspoons olive oil
3 cups orange juice
3 tablespoons rum or chicken broth
1 garlic clove, minced
1 large navel orange, peeled, sectioned and chopped
1/2 cup chopped sweet onion
1 cup cubed avocado
1/2 cup minced fresh cilantro, divided
1 teaspoon chopped seeded jalapeno pepper

Steps:

  • In a small dry skillet over medium heat, toast cumin seeds and peppercorns until aromatic, 1-2 minutes. Remove from skillet. Crush seeds using a spice grinder or mortar and pestle., In a small bowl, combine the orange zest, oregano, salt and crushed spices. Sprinkle 1 tablespoon spice mixture over shrimp., In a large skillet, cook shrimp in oil over medium-high heat 1 minute; turn shrimp. Add orange juice, rum, garlic and 1 tablespoon spice mixture. Cook and stir until shrimp turn pink, 1-2 minutes longer; remove and keep warm. , Bring liquid in skillet to a boil. Cook until reduced to 2/3 cup, about 35 minutes.
