Classic Iceberg Wedge Salad with Homemade Ranch Dressing and Bacon image

Iceberg lettuce with bacon and homemade ranch dressing - the perfect simple appetizer or side salad.

Provided by Natasha Bull

Categories     Salad

Time 25m

Number Of Ingredients 4

Ranch dressing (to taste)
Iceberg lettuce
4-6 strips bacon
Lemon slices (optional)

Steps:

  • Prepare the ranch dressing. It does taste better if you let it sit in the fridge for a few hours, but it's also fine to serve it right away.
  • Cut bacon into small pieces (I use kitchen shears) and fry until crispy. Once bacon is cooked, place onto a paper towel lined plate to soak up extra grease.
  • Cut iceberg lettuce into quarters.
  • Drizzle dressing over wedges and then sprinkle on the bacon. Garnish with a slice of lemon if desired.

Time 15m

Yield 8 serving(s)

Number Of Ingredients 15

1/4 teaspoon kosher salt
1 garlic clove, chopped
1 cup mayonnaise
1/2 cup sour cream
1/4-1/2 cup milk (depending on how thick you want the dressing) or 1/4-1/2 cup buttermilk (depending on how thick you want the dressing)
1/4 cup chopped flat leaf parsley
1 tablespoon chopped fresh chives
2 tablespoons chopped fresh dill
1/2 teaspoon distilled white vinegar
1/2 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/4 teaspoon paprika
1/2 teaspoon black pepper
1 dash hot sauce
2 heads iceberg lettuce

Steps:

  • Sprinkle salt over garlic and mash together to make a paste, the finer the better. Combine the paste with all ingredients except lettuce. Taste and adjust the seasoning, if needed. Chill for several hours before serving. When ready to serve, thin with more buttermilk if needed.
  • Wash and dry the lettuce. Cut into wedges.
  • To serve: place wedges on a platter or salad plates and drizzle dressing over wedges, making sure you have enough for all the lettuce leaves.

LETTUCE WEDGE WITH RANCH DRESSING

Lettuce Wedge With Ranch Dressing image

I love salads, and this is no exception. Enjoy it with homemade Ranch Dressing instead of Blue Cheese.

Categories     Salad Dressings

Time 15m

Yield 4 serving(s)

Number Of Ingredients 10

1 small head iceberg lettuce
1 small cucumber, sliced (thinly)
1/2 cup sour cream
1/4 cup plain yogurt
1/2 cup mayonnaise
1 garlic clove, pressed (or minced)
1 tablespoon white vinegar
1 tablespoon chopped chives
1/4 teaspoon salt (kosher)
1/4 teaspoon pepper, ground

Steps:

  • Trim the core even with the bottom of the lettuce and cut the lettuce into quarters through the core. If the quarters look too big for a single serving, either cut them in half or trim them to whatever size you feel is a good serving.
  • Combine the sour cream, yogurt, mayonnaise, garlic, vinegar, and chives in a bowl until well mixed. Season with salt and pepper. Cover and refrigerate until ready to use.
  • To serve, set the wedge of iceberg in the center of a salad plate, add cucumber, and spoon the dressing over and dash it with a good pinch of chives.
