ICE CREAM SODAS

Steps:

• Pour 3 tablespoons of Raspberry or Chocolate Syrup or 1 teaspoon vanilla plus 3 tablespoons heavy cream in a tall ice cream soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a straw.
• Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
• Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.

ON-THE-SPOT ICE CREAM SODAS

Steps:

• To make a chocolate soda, pour 3 tablespoons chocolate syrup into the bottom of a tall glass or plastic cup. Add soda 2/3 up glass and stir well. Drop in a few scoops of vanilla or chocolate ice cream and serve with a straw and a long handled spoon.
• To make a vanilla soda, mix 2 teaspoons vanilla extract with 1/2 cup cream in the bottom of a tall glass or plastic cup. Add soda 2/3 up glass and stir well. Drop in a few scoops of vanilla ice cream and serve with a straw and spoon. For a strawberry soda, use strawberry ice cream.
• For the "works", pour 3 tablespoons of chocolate syrup in the bottom of a tall glass or plastic cup, add 2 teaspoons vanilla and 1/2 cup cream, then pour in soda 2/3 up glass and stir well. Drop in a few scoops of ice cream of choice and serve with a straw and spoon.

ICE-CREAM SODAS

Steps:

• Place 1 to 2 tablespoons fruit or a peach half in a large soda glass. Add 2 scoops ice cream and 3 to 4 tablespoons cream. Shake seltzer bottle and squirt into glass. Top soda with cherries or strawberries.

FANTASTIC OLD FASHIONED ICE CREAM SODA

Steps:

• Pour the milk into one tall 16-ounce glass.
• Stir in syrup.
• Add in ice cream and enough soda water or selzer to fill almost to top of glass.
• Top with whipped cream if desired.
• Serve with a long spoon and a big straw.

OLD-FASHIONED ICE CREAM SODA

Steps:

• Pour 1/2 cup club soda into each of four tall glasses. Add 1/2 cup ice cream to each glass. Fill glasses with soda. Serve immediately.

OLD-FASHIONED ICE CREAM SODAS

Steps:

• Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.
