If you like greens you will love this recipe. The bacon and onions give them a wonderful flavor. Add more red pepper for a little more spice.

1 tablespoon olive oil
3 slices bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth
1 pinch red pepper flakes
1 pound fresh collard greens, cut into 2-inch pieces

Steps:

  • Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  • Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

Corn bread, black eyed peas, and collards are a New Year's Day tradition in the South - the corn bread represents gold, black-eyed peas coins, and collards match the green of US paper currency. Since leaving the South, where I grew up, for the Pacific NW, I've begun a tradition of hosting an open house-style brunch on New Year's day and this is my go-to recipe for this fun occasion.

1 tablespoon olive oil
1 tablespoon butter
1 large onion, halved and thinly sliced
4 cloves garlic, thinly sliced
2 sprigs fresh thyme, leaves stripped
2 bay leaves
2 (14 ounce) cans chopped tomatoes
1 cup vegetable broth
1 tablespoon brown sugar
1 tablespoon molasses
1 tablespoon liquid smoke flavoring
2 pounds collard greens, chopped
1 ½ cups cooked white beans

Steps:

  • Heat olive oil and butter in a large pot over medium heat until butter melts and starts to brown, 1 to 2 minutes. Add onion and garlic; cook and stir until onion turns translucent, about 5 minutes. Stir in thyme and bay leaves.
  • Pour chopped tomatoes, vegetable broth, brown sugar, molasses, and liquid smoke into the pot; bring to a simmer. Stir in collard greens gently. Reduce heat to low and simmer, covered, until tender, about 30 minutes.

2 bunch collard greens, roughly choppd
6 slice bacon, choppd
1 large onion, choppd
4 clove garlic, mincd
1 1/2 c chicken broth
1/4 tsp crushd red pepper
1 Tbsp brown sugar
olive oil
1 tsp salt
1/2 tsp black pepper

Steps:

  • 1. IN A VERY LARGE DEEP PAN (I USED MY WOK) IN 2TABLESPOONS OF OLIVE OIL SAUTÉ CHOPPD BACON TILL ALMOST COOKED...THEN ADD CHOPPD ONION COOK FOR 5 MINUTES THEN ADD GARLIC UNTIL FRAGRANT... OVER MED HEAT.
  • 2. ADD CHOPPD COLLARD GREENS n COOK UNTIL THEY WILT ...I DID HALF OF THE COLLARD GREENS AND THEN ADDED THE REST.
  • 3. WHILE COOKN TURN COLLARD GREENS WITH TONGS SO ALL CAN WILT :)
  • 4. POUR IN CHICKEN BROTH, RED PEPPER, S n P AND BROWN SUGAR. STIR N COVER THEN COOK FOR 30 MINUTES...ENJOY :)
