Recipe video above. Hands down, my favourite way to cook fresh prawns! Simple and fabulous, the 3 tips for top notch garlic prawns is to chop rather than use a mincer for the garlic (it splatters and burns on high heat), only marinate for 20 minutes and the splash of wine gives this a flavour edge as well as stopping the garlic from burning. Serves 2 as a main, 4 as a starter.

500g / 1lb prawns (shrimp) (, peeled and deveined, tail on (unpeeled weight 1kg/2lb, Note 1))
4 garlic cloves (, finely chopped (don't use crusher/mincer))
1 tbsp extra virgin olive oil ((separated))
1/2 tsp black pepper
1/2 tsp salt
1.5 tbsp olive oil
50g / 3.5 tbsp unsalted butter (, cut into 1.5cm / 1/2" cubes (Note 2))
1/4 cup dry white wine ((Note 3))
2 tbsp lemon juice
2 tbsp parsley, finely chopped ((garnish))
lemon wedges
Bread for mopping!

Steps:

  • Marinade: Place the prawns, garlic, olive oil and pepper in bowl. Gently toss then set aside for 20 minutes.
  • Salt: Add salt into prawns just before cooking and toss.

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

Juicy prawns (shrimp) cooked on the grill then coated in a spicy garlic lemon butter sauce. Served with rice or crusty bread, this is a showstopper meal.

1.5 kg (3lbs) shrimp (deveined but shell and head on)
2 tbsp cajun spice
1 tbsp lemon pepper
2 tsp salt
3 tbsp olive oil
250 g (2 sticks) butter
10 garlic cloves (crushed )
3-4 tbsp fresh lemon juice
2 tsp cajun spice
1 tsp chilli flakes
½ cup cream ((heavy or whipping) )

Steps:

  • If your prawns haven't been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein.
  • Place the prawns in a large bowl. Pour over the oil and season with the cajun spice, lemon pepper and salt. Mix well to ensure all the prawns are evenly coated.
  • To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked) and add the garlic, lemon juice and spices.
  • Allow to cook for a minute until fragrant then pour in the cream. Bring to a simmer and allow to cook for 5 minutes then remove from the heat.
  • Taste and adjust seasoning accordingly. The sauce needs to be a little too lemony and very well seasoned. Once the prawns are added, the sauce will mellow a bit.
  • Preheat the grill for 10-15 minutes. I prefer using an outdoor grill/braai/barbecue as the smoke adds incredible flavor to the shrimp once cooked but you can use a griddle pan too.
  • Add the prawns and cook for 2-3 minutes per side until they are coral/orange in color. As the prawns cook, add them to the pot with the sauce.
  • Once all the prawns have been added, toss to coat the prawns in the sauce.
  • Serve over rice or with crusty bread and extra lemon wedges.

  • Prep the herb butter. Melt butter in a small saucepan over medium heat. Once it's hot, add the minced shallot and garlic and allow to cook for about 5 minutes to infuse the butter, stirring occasionally. Remove from heat, add parsley, lemon juice, sea salt, pepper, and red pepper flakes. Set aside.
  • Prep the spot prawns right before you're ready to grill. Once they die they start to release an enzyme that can make the flesh mushy, so you want to cook them right away after you slice them in half. To humanely kill the spot prawn, place on a cutting board, hold the tail down, and quickly place the tip of a very sharp chef’s knife right in the middle of the head of the prawn, behind the eyes. In one fell swoop, press the knife down forcefully toward the nose, slicing the head down the middle between the eyes. This will kill the prawn instantly as you sever the brain. The prawn will continue to twitch afterward, but don’t worry, it is just the nervous system. Rotate the prawn around and finish slicing through the tail with your knife. You are cutting them in half lengthwise like you see in the photos above.
  • Brush the flesh side with a bit of avocado oil. When the grill is hot, place the prawn halves flesh side down on the grill.
