Make the infamous Hooter's Buffalo Wings at home with a few simple ingredients. Perfect for game day snacking too!

2 c. All-Purpose Flour
2 tsp. Salt
1 tsp. Cayenne Pepper
1 tsp. Paprika
2 1/2 lb. Chicken Wing Segments, (approximately 32 wing segments)
2 Sticks Butter, (salted)
1/4 c. Louisiana Hot Pepper Sauce
1/2 tsp. Black Pepper
1 tsp. Garlic Powder
1/2 tsp. Kosher Salt
Canola Oil, for frying

Steps:

  • Combine the flour, salt, pepper and paprika in a bowl.
  • Rinse the chicken, pat dry then coat the chicken in the flour mixture. Refrigerate wings for 1 hour; then coat the wings with the remaining flour mixture.
  • Heat butter, hot sauce, pepper, garlic powder and salt in a medium saucepan until the butter melts; then let simmer on low to keep warm.
  • Deep fry chicken in 375 degree oil for 13-15 minutes. (You can use a deep fryer or a pot on top of the stove). You may have to do this in batches to avoid overcrowding.
  • Immediately toss fried chicken in the butter mixture and remove with a slotted spoon.

20 chicken wings (separated at the drumette)
1/2 cup butter (melted)
1/2 cup hot sauce (like Tabasco, or Frank's)
3/4 cup flour
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Mix flour, cayenne, garlic and salt in a large zip-lock bag (or a bowl).
  • Coat wings in flour mixture and place on ungreased cookie sheet.
  • Place in refrigerator to cool and firm up the coating for an hour or so.
  • Preheat oven to 400°F.
  • Mix melted butter and hot sauce in a bowl.
  • Gently coat wings in sauce mixture and place back on cookie sheet in single uncrowded layer.
  • Bake for 45 min turning half way.
  • Serve with blue cheese dressing to dip.

1 cup flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
20 chicken wings or 20 chicken drumsticks
1/2 cup butter or 1/2 cup light butter
1/2 cup hot sauce
1/4 teaspoon black pepper
1/4 teaspoon garlic powder

Steps:

  • Combine flour, salt, cayenne pepper, and paprika in bowl.
  • Coat chicken pieces in dry mixture.
  • Reserve leftover mixture.
  • Refrigerate coated chicken at least 1 hour.
  • Coat chicken in leftover flour mixture.
  • In a saucepan, heat butter, hot sauce, pepper, and garlic powder just until butter melts, then keep warm.
  • Deep fry chicken, 10 pieces at a time, in 375 degree oil for 13 minutes.
  • Drain chicken on paper towels.
  • Immediately place chicken in Tupperware bowl.
  • Pour half the hot sauce mixture over chicken (first 10 pieces).
  • Cover and toss to coat.
  • Repeat with second batch of chicken.
  • Wings can be frozen and reheated in 400 degree oven for 10 minutes.
  • NOTES : Use ranch or blue cheese dressing as a dip for these fabulous wings.

This recipe is modified to be gluten free from Recipe #3603 which was from Top Secret Recipes http://www.topsecretrecipes.com. Even though the modification is very small, I had to post it so those of you who have to eat gluten free would be able to enjoy this as well!

20 chicken wings (frozen are fine)
vegetable oil, for frying in deep fryer
1/3 cup garbonzo bean flour (I also mix garfava & sorghum)
1/3 cup tapioca flour
1/3 cup cornstarch
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup butter (1 stick)
1/2 cup louisiana hot sauce (Texas Pete is GF)
1 dash pepper, Ground
1 dash garlic powder
bleu cheese salad dressing (Kraft is GF)
celery

Steps:

  • 90 MINS BEFORE GAME TIME:.
  • Combine the flour, paprika, cayenne pepper, and salt in a large bowl using a wire wisk to blend the flours well.
  • If the wings are frozen, defrost and dry them very well with paper towels.
  • Toss the wings with the flour mixture, coating each wing evenly.
  • Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.)
  • 30 MINS BEFORE GAME TIME:.
  • Heat oil in a deep fryer to 375 degrees.
  • Put as many wings into the hot oil as will fit comfortably so they are still covered entirely by the oil.
  • Fry for 10 to 15 minutes or until some parts of the wings begin to turn dark brown. (10 mins works for me).
  • Remove the wings from the oil to a paper towel to drain (just don't let them sit too long, because you want to serve the wings hot).
  • Repeat the frying process as needed until all wings are cooked.
  • While the wings are frying, melt butter in a small sauce pan and stir in hot sauce, ground pepper, and garlic powder. Simmer over very low heat just enough to keep warm until ready to use.
  • When wings are done put them in a large serving bowl and pour the warm sauce over them, coating evenly (if it has a lid you can cover and shake).
  • Serve with a small bowl of Bleu cheese dressing and celery sticks.

1 cup all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
20 chicken wing segments
1/2 cup butter OR margarine
1/2 cup hot sauce (see Notes, below)

Steps:

  • In a shallow dish, combine flour, salt, paprika, garlic powder, and peppers. Coat chicken entirely in the flour mixture; refrigerate coated wings for 1 hour; coat chicken again with remaining flour mixture. In a 2-quart saucepan, heat butter and hot sauce just until butter melts; turn heat to low and keep warm on stove top. Deep-fry chicken, 8 - 10 pieces at a time, in 375 degree oil (vegetable oil, canola oil, or peanut oil) for 13 minutes, turning once or twice. Drain chicken on a wire cooling rack for 30 seconds, then immediately toss fried chicken in buffalo sauce mixture and remove with a slotted spoon. Repeat with remaining chicken. Adjusting the spiciness of the sauce: As is, the recipe produces a medium sauce. To change the amount of spiciness, simply adjust the butter-to-hot sauce-ratio: Mild: Use 3/4 cup butter and 1/4 cup hot sauce. Hot: Use 1/4 cup butter and 3/4 cup hot sauce. Notes: I use Frank's® Buffalo Wing sauce in the recipe, as I enjoy the flavor of Buffalo sauce, but not the heat. If you like spice, you can use regular Frank's® Hot Sauce. I'm sure another hot sauce like Tabasco® would work fine, but Frank's® has a great flavor, not just heat.
