3 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 teaspoon fine salt
1/2 teaspoon baking soda
3/4 cup (12 tablespoons) unsalted butter, frozen then grated, plus more for serving
1 cup whole milk
1/4 cup honey
1/2 teaspoon vanilla bean paste or vanilla powder
1/4 cup buttermilk, for brushing
Whipped sweet cream and berries, for serving

Steps:

  • Put the flour, baking powder, salt and soda in a mixing bowl and stir to combine. Add the butter to the flour mixture and toss with a very light hand until it looks like crumbly cornmeal. Put in the fridge for 15 minutes (this firms the butter back up).
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
  • Mix the milk, honey and vanilla in a small bowl.
  • Make a well in the middle of the flour mixture and pour in the milk mixture. With a light hand, mix just until combined. Flour a work surface and turn out the dough. Pat into a 3/4-inch-thick round or square. Dip a 2-inch biscuit cutter in flour and cut out rounds from the dough. Place on the prepared baking sheet and brush the tops with the buttermilk. Bake until golden brown, 12 to 14 minutes. Serve with butter, whipped sweet cream and berries.

HONEY "TREE BARK" BISCUITS

The trees of Hansel and Gretel's forest surely had bark like this, sparkling with sugar crystals and tasting of sylvan honey. Though the biscuits pair wonderfully with blueberries in gin syrup, they also make an excellent accompaniment to a cheese course-particularly with a nice triple-crème.

Yield Makes about 24 biscuits

Number Of Ingredients 15

1 3/4 cups all-purpose flour
1 cup walnut pieces
3 tablespoons granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 stick unsalted butter, cut into 1/2-inch cubes
1/2 cup honey
1 large egg
1/2 teaspoon pure vanilla extract
2 tablespoons turbinado sugar such as Sugar in the Raw
Equipment:
a large offset spatula
Accompaniment:
blueberries in gin syrup
3/4 pound triple-crème cheese such as St. André

Steps:

  • Preheat oven to 350°F with racks in upper and lower thirds.
  • Cut 2 sheets of parchment paper to line bottom of a large 4-sided sheet pan (17 by 13 by 1 inch).
  • Pulse together flour, walnuts, granulated sugar, baking soda, and salt in a food processor until nuts are finely ground. Add butter and pulse until mixture resembles coarse meal with some small (roughly pea-size) butter lumps.
  • Whisk together honey, egg, and vanilla, then add to flour mixture and pulse just until dough comes together. (Dough will be soft.)
  • Transfer dough to 1 sheet of trimmed parchment (not in pan) and cover with second sheet. Roll over with a rolling pin to spread dough evenly between sheets into a roughly 15- by 11-inch rectangle.
  • Transfer dough in parchment to pan and remove top sheet.
  • Using wet offset spatula, spread dough into corners of pan to cover parchment completely. Holding a paring knife sideways, drag tip over dough at roughly 1/2-inch intervals to create lines resembling those on tree bark.
  • Sprinkle dough evenly with turbinado sugar. Bake in upper third of oven until set and dry to the touch, 20 to 25 minutes. Cool in pan on a rack 5 minutes.
  • Reduce oven temperature to 300°F.
  • Run a knife around edge of pan, then invert bark onto a work surface. Discard parchment.
  • Fold bark in half lengthwise so that it breaks with uneven edges. Repeat with each piece. Tear each strip crosswise into 6 pieces.
  • Divide biscuits, sugar sides up, between 2 baking sheets (biscuits may touch). Bake, switching position of pans halfway through baking, until deep golden brown, 15 to 25 minutes. (Biscuits will crisp completely as they cool.) Transfer to racks to cool.

3/4 cup milk
1/2 cup shredded Monterey Jack cheese
1 tablespoon honey

Steps:

  • In a bowl, combine the flour, baking powder and salt. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Stir in milk and cheese until mixture forms a ball. , Turn onto a lightly floured surface; knead 5-6 times. Roll out to 1/2-in. thickness; cut with a floured 2-in. biscuit cutter. Place on an ungreased baking sheet. , In a small microwave-safe bowl, combine honey and remaining butter. Microwave on high until melted. Brush over biscuits. Bake at 450° for 10-12 minutes or until golden brown. Serve warm.

Honey Butter Biscuits are the best salty-sweet biscuits from scratch you'll ever make! This easy biscuit recipe calls for just six ingredients, and you probably already have them in your home already. They take less than 30 minutes, too!

2 cups unbleached all-purpose flour
1 tablespoon baking powder
½ teaspoon kosher salt
8 tablespoons salted butter, frozen
¼ cup honey
½ cup whole milk
2 tablespoons salted butter, melted, for brushing
1 tablespoon honey, for brushing

Steps:

  • One hour before making the biscuits, place the stick of butter and the bowl in the freezer.
  • DO NOT SKIP THIS STEP, as your biscuits might not rise if your ingredients are not cold.
  • Line a baking sheet with parchment paper or a nonstick baking sheet, and set aside.
  • Preheat the oven to 450°F. (Make sure that the oven completes its preheat before the biscuits go into it, as a hot enough oven is imperative for fluffy, tall biscuits!)
  • Grate the 8 tablespoons of frozen butter with a box grater. Transfer back to the freezer until it's time to use.
  • In the chilled bowl, combine the dry ingredients-the flour, baking powder and salt. Whisk until combined.
  • Add the frozen butter. Use a plastic spatula to fold the butter into the dry ingredients.
  • Pour in the honey and milk, and stir using the spatula until a shaggy dough forms.
  • Turn the batter out onto a floured surface, and press it together until combined. (We're basically gently kneading the ingredients until no scraps remain, moving quickly so the ingredients don't get warm, and shape into a 1" tall round.)
  • Using a biscuit cutter, cut the biscuits. (I like my 1 ½" biscuit cutter for these, but you can use any size you'd like.)
  • Place the biscuits onto the prepared baking sheet. When the round is just scraps, reshape the dough into another round and cut more.
  • Repeat until all the dough has been cut and placed on the baking sheet.
  • Bake for 10-13 minutes, or until the biscuits have risen and are golden brown.
  • Brush with melted honey butter right after the biscuits come out of the oven.
  • Let cool, then enjoy!

150 g butter, softened
225 g brown sugar
2 eggs, lightly beaten
350 g plain flour
1 tablespoon baking powder
4 teaspoons mixed spice, ground

Steps:

  • Combine the butter and sugar.
  • Slowly add the eggs and beat until the mixture is smooth.
  • Stir in the flour, baking powder and spice and mix thoroughly.
  • Cover and chill for about 1 hour minimum.
  • Preheat oven to 180 C / 350 F / Gas 4.
  • Carefully roll out the mixture on a floured surface and using Christmas biscuit cutters, cut out various shapes.
  • Using a skewer, make holes at the top of the shape to thread ribbons through.
  • Place on greased baking sheets and bake for about 10 minutes.
  • Cool on a wire rack.
