5 BEAN SALAD WITH HONEY MUSTARD DRESSING image

Need something FAST,EASY,HEALTHY and DELICIOUS as a side dish or to bring to a barbeque...then this is it. I have even had bean haters(can you believe there is such a thing?) eating and liking this :o)

1 can(s) garbanzo beans(chick peas) i use the medium cans for all the beans...i think 15oz
1 can(s) black beans
1 can(s) white beans
1 can(s) small red beans
1 can(s) small pink beans or maybe even pinto beans
1 medium red bell pepper,diced small
1/2 medium green bell pepper,diced small(if you are not a fan of green pepper and still want the color you can add chopped parsley or scallions)
1 medium vidalia onion,diced small(or any sweet/mild onion)
1 bottle honey mustard dressing...i use the low fat or fat free wishbone or newmans

Steps:

  • 1. open all the cans into a collander and rinse well with cold water...gently mixing with your hand until the water runs clear(until all the starchy liquid is removed).
  • 2. empty into large bowl, add diced peppers,onion and dressing and stir gently to combine all the ingredients.
  • 3. You can serve this right away but I will tell you if you refrigerate it for a few hours you will be very pleased as the peppers and onion marinade in the dressing it becomes so much better. ENJOY
  • 4. @ As you can tell this recipe is easy to change around with your favorite beans,even green beans. I don't recommend the larger softer beans only because they break up while rinsing/mixing. If you like a zestier salad you can add red onion,chopped jalapeno.

I used this recipe as an occasion to get my kids involved in cooking. They had fun snapping ends off the beans and they delighted in whisking together the dressing ingredients. In addition I was surprised how much they liked the green beans with this hint of sweetness.

1/2 pound fresh green beans, trimmed
1 teaspoon cider vinegar
1 teaspoon olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
1/8 teaspoon salt

Steps:

  • Place beans in a small saucepan and cover with water. Bring to a boil. Cover and cook for 4-7 minutes or until crisp-tender., Meanwhile, in a small bowl, combine the vinegar, oil, mustard, honey and salt. Drain beans; add to vinegar mixture and toss to coat.

This is such a tasty, fresh way to serve green beans! Very quick and simple; it can even be made a day ahead. The kiddos will eat it up! I have an aunt who requests that I bring this every Thanksgiving. I originally got this recipe from Parenting magazine. If you want to prepare ahead of time, just fully prepare as directed then cover and refrigerate. Bring it to room temperature before serving.

4 teaspoons honey
4 teaspoons Dijon mustard
4 teaspoons apple cider vinegar
1 tablespoon olive oil
3/4 teaspoon salt
2 lbs green beans, trimmed

Steps:

  • In a large bowl, whisk together honey, mustard, vinegar, olive oil and salt; set aside.
  • Bring a large pot of water to a boil. Add green beans and cook until just tender, about 5 minutes. (You could steam them instead if desired.) Drain well and pat dry with paper towels.
  • Toss green beans in honey-mustard mixture and serve warm or at room temperature.

I have never been a fan of any honey mustard dressing I have tasted in a bottle. This made-from-scratch version is divine! Besides making a wonderful stand-alone salad, this is also great topped with chunks or slices of Recipe #145068. This recipe is from Cuisine at Home magazine.

1/4 cup honey
3 tablespoons Dijon mustard
3 tablespoons extra virgin olive oil
1 tablespoon shallot, minced
1 tablespoon apple cider vinegar
1/2 lemon, juice of
salt and pepper
8 cups romaine lettuce or 8 cups lettuce
1/2 cup red onion, thinly sliced
4 ounces mild goat cheese, crumbled

Steps:

  • For the dressing, combine all ingredients until blended.
  • Toss dressing with greens, onion, and goat cheese (you won't need all the dressing).
  • Serve with extra dressing on the side.

1 lb green beans, cleaned, sliced in half diagonally
1 tablespoon yellow mustard (or your favorite mustard)
3 tablespoons honey
1/4 cup apple cider vinegar
salt
fresh ground black pepper
3/4-1 cup extra virgin olive oil
6 scallions, sliced thin diagonally
1 bunch radish, sliced into thin rounds

Steps:

  • Steam the green beans in a covered pot with half an inch of boiling water for 3-5 minutes. Shock them by running them under cold water and drain well.
  • In a large mixing bowl, mix the mustard, honey, vinegar, salt and black pepper with a whisk.
  • When the ingredients are well combined, drizzle the olive oil in a slow and steady stream while continuously whisking.
  • Add the green beans to the bowl with the dressing along with the scallions and radishes, and toss to coat.
  • Serve and enjoy!
