- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake until the top is dry and the center is set, 25-30 minutes. Cool completely in pan on a wire rack. If desired, dust with confectioners' sugar.

HEALTHY FUDGY BROWNIES
Moist, fudgy brownies using whole wheat flour and no butter! Yogurt is the key. These taste even better the next day.

Steps:
- Preheat oven to 350 degrees.
- Whisk together the yogurt and sugar to slightly dissolve the sugar.
- Add the eggs one at a time, mixing thoroughly.
- Stir in the vanilla, if using.
- Sift together the cocoa powder, flour and salt. (Sifting prevents lumps.) Add the nuts, if using, to the sifted mixture.
- Add half the dry mix to the wet mix and fold in with a wooden spoon. Fold in the rest. Do not over mix or the brownies will be cakey.
- Pour into a 9x9 non-stick loaf pan and bake for 30-40 minutes. Use a toothpick to test for doneness. The toothpick should have some moist crumbs sticking to it, not be totally dry.
- Cool on a wire rack, then store the brownies in an airtight container to retain moistness.

- Melt chocolate chips and butter in the microwave about 45 seconds; stirring occasionally until completely melted; set aside.
- Combine the dry ingredients, except for sugar, in a bowl.
- In another large bowl, beat egg whites with sugar and vanilla until slightly thick.
- Stir in chocolate mixture and then the dry ingredients.
- Spread into an 8-inch square baking dish sprayed with cooking spray.
- Bake at 350° for 25-30 minutes; until edges are firm and top is crisp.
- Cool completely before cutting into bars.

I tried the Jessica Seinfeld recipe for brownies and thought they were very dry so I made my own recipe inspired by her idea for a healthy brownie. They are very moist and fudgy in texture. Give them a try! :)

- Preheat the oven to 350 degrees Farenheit. Coat a 13x9 inch baking pan with grapeseed oil.
- Melt the chocolate in a double broiler in the microwave.
- In a large bowl, combine the melted chocolate, sweet potato puree, sugar, cocoa powder, grapeseed oil, and vanilla, and whisk until smooth and creamy, 1-2 minutes.
- (I use my Kitchen Aid mixer).
- Whisk in egg. Stir in flour, flaxseed meal, baking powder, and salt.
- Pour the batter and spread into the pan and bake 40 to 45 minutes. Cool completely and sprinkle with powdered sugar, cocoa powder, or frost with chocolate frosting if desired.
