1 pound ground beef
1 medium yellow onion
1 envelope taco seasoning
1 (7 Ounce) Can Dice Green Chilies, Undrained
1 (14.5 Ounce) can canned diced tomatoes (undrained)
1 cup frozen corn (thawed and drained)
1 (8 ounce) can tomato sauce
2 3/4 cups water
8 ounces dried spaghetti noodles (broken into thirds)
1 cup cheddar cheese (grated)

Steps:

  • In a large skillet over medium heat, brown beef, and onion until there is no longer any pink in the beef. Drain off any fat.
  • Stir in taco seasoning, green chilies, diced tomatoes, corn, tomato sauce, and water and bring to a boil. Stir in noodles. Reduce the heat and simmer, covered, for 20-25 minutes or until the pasta is al dente.
  • Sprinkle with cheese and serve.

12 ounces dry spaghetti, uncooked
1 pkg (1.25 oz each) 30% less sodium taco seasoning mix
1 pound ground sirloin beef or ground turkey
1 can (14.5 oz each) Hunt's® Diced Tomatoes in Sauce, undrained
2 cans (11 oz each) whole kernel corn with red and green peppers, undrained
1 can (7 oz each) diced green chilies, undrained
1/2 cup sliced green onions
1/2 cup shredded Mexican-style cheese blend (1/2 cup = 2 oz)

Steps:

  • Break pasta in half. Cook according to package directions.
  • Prepare taco seasoning mix with the meat in large skillet according to package directions. Stir in undrained tomatoes, undrained corn, green chilies and onions. Cook over medium heat 3 minutes or until hot, stirring occasionally.
  • Drain pasta; place in large bowl. Add meat mixture; mix lightly. Sprinkle with the cheese.

Mexican Spaghetti is a hearty pasta recipe loaded with ground beef, red peppers, green peppers, onions, Rotel diced tomatoes and green chilies, taco seasoning and shredded cheese.

10 oz spaghetti, uncooked
1 lb lean ground beef
1 cup diced yellow onions
1 cup diced red bell peppers
1 cup diced green peppers
10 oz mild Rotel diced tomatoes and green chilies
1 oz mild taco seasoning
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tbsp onion powder
28 oz tomato sauce
2 cups shredded Mexican cheese blend

Steps:

  • Cook the spaghetti according to the directions on the package and then drain.
  • While the spaghetti is cooking, dump the ground beef into a large saute pan over medium-high heat.
  • Add the diced onions to the pan.
  • Crumble the ground beef well as it cooks.
  • Once the ground beef is fully cooked, drain the grease from the pan.
  • Reduce the heat to medium-low and add the diced red peppers and diced green peppers to the pan.
  • Stir well.
  • Add the Rotel to the pan and stir well again.
  • Add the taco seasoning to the pan and stir until all of the ground beef is coated in it.
  • Add the salt, pepper, garlic powder and onion powder to the pan and stir.
  • Add the tomato sauce to the pan and stir.
  • Add the cooked spaghetti to the pan and stir until all of the noodles are coated in sauce.
  • Leave the pasta to cook for 3-4 minutes.
  • Remove the pan from the heat and add the shredded cheese to the pan.
  • Stir until the cheese is melted.
  • Serve and enjoy!

1 cup soft bread crumbs
1/2 teaspoon salt
1/2 teaspoon garlic powder

1 pound ground beef
SAUCE:
1 pound Italian sausage links, cut into 2-inch pieces
1 large onion, chopped
1 medium green pepper, chopped
2 cans (28 ounces each) diced tomatoes, drained
2 cans (8 ounces each) tomato sauce
1 can (14-1/2 ounces) beef broth
1 can (6 ounces) tomato paste
2 garlic cloves, minced
2 teaspoons each dried basil, oregano and parsley flakes
2 teaspoons sugar
Salt and pepper to taste
Hot cooked spaghetti
Grated Parmesan cheese

Steps:

  • In a bowl, combine the first six ingredients. add beef and mix well. Shape into eight meatballs. Brown in a Dutch oven over medium heat; drain and set meatballs aside. , In the same pan, cook sausage, onion and green pepper until vegetables are tender; drain. Add the tomatoes, tomato sauce, broth, tomato paste, garlic and seasonings. Add meatballs; stir gently. Bring to a boil. Reduce heat; cover and simmer for 2-3 hours. Serve over spaghetti; sprinkle with Parmesan cheese.

1/4 cup chopped green pepper

1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1/2 cup water
1 bay leaf
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
Hot cooked spaghetti
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain.
