- In a medium saucepan, brown the ground beef; drain well.
- Add to the ground beef the finely chopped onion, chili powder, 1/2 teaspoon salt, allspice, ground mustard, garlic powder, cumin, cinnamon, black pepper, tomato paste, and water. Bring to a boil. Reduce heat and simmer for 1 to 2 hours.
- Top each hot dog with about 2 tablespoons of sauce.
- Optionally add 1 to 2 tablespoons of chopped onion over the ground beef mixture then add mustard. Top the hot dogs with shredded Cheddar cheese.

- Place the ground beef and onion in a large skillet over medium-high heat. Cook, stirring to crumble, until beef is browned. Drain. Transfer the beef and onion to a slow cooker and stir in the ketchup, sugar, vinegar and mustard. Season with celery seed, Worcestershire sauce, pepper and salt. Cover and simmer on Low setting for a few hours before serving.

- Combine everything except weiners and simmer until thick-do not brown meat first. I suggest using a potato masher to mix everything.
- Grind the weiners and add to pot.
- Stir and Cook on low for a few hours to let all the flavors soak into meat. If you want you can place sauce in a crock pot in morning and will be ready that evening. the longer it cooks the better it is!
- Serve over hot dogs on buns and enjoy!

After countless searches for a good Coney Island sauce, I stumbled on this one at another cooking website. Most recipes I had tried were just too sweet, this is a good Midwest-style Coney sauce. I didn't follow the measurements to the letter - just eyeballed it; and I added a couple dashes of hot sauce to kick up the heat a bit.

The story of how the Coney Island hog dog got to the Midwest is pretty straightforward, but no one really knows exactly how the wiener first came to be topped with what is basically a hot meat relish. I have no idea how authentic this is, and have never been to Detroit, or even Flint. I have had Nathan's® version, which I enjoyed, but the word on the street is that it's not nearly as good as the relatives it spawned.

- Combine ground beef, water, 1/2 cup diced onion, ketchup, butter, garlic, chili powder, salt, black pepper, cumin, celery salt, and cayenne pepper together in a pot. Mix with a potato masher or spatula over medium-high heat until mixture has a finely ground consistency and begins to bubble, about 10 minutes.
- Bring beef mixture to a simmer, reduce heat to medium-low, and cook, stirring occasionally, until sauce thickens and reduces, about 1 hour. Season with salt and pepper to taste.
- Bring a large pot of water to a boil. Cook hot dogs in boiling water until heated through, 5 to 7 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Arrange hot dog buns on a baking sheet.
- Cook buns in the preheated oven until soft and warm, 2 to 3 minutes.
- Place 1 bun on a plate. Place a hot dog in the bun and top with meat sauce. Drizzle yellow mustard and diced onion over the meat sauce. Repeat with remaining hot dogs.

FLINT CONEY ISLAND HOT DOG SAUCE
This was published in the Flint Journal some time after the death of the man who created it. His wife allowed it to be published. There was some discrepancy over the use of beef heart or hot dogs as a main ingredient. I use hot dogs but feel free to experiment with beef heart. This was the cornerstone recipe for several local restaurants in the Flint area where I grew up and is a favorite memory of many who were raised here.

- DO NOT brown ground beef before using. Combine ALL ingredients except hot dogs in a pot and simmer until thickened. Stir occasionally to ensure beef does not clump and cooks evenly.
- Grind the hot dogs very fine (or chop fine in food processor) stir into beef mixture and cook 15 minutes longer.
- Use over GOOD natural casing hot dogs (Koegel Vienna if possible) with chopped onion and mustard. The big secret in this recipe is the ground hot dogs. (Hint: Back home, I still used the Koegels' in the sauce, just the skinless ones).
