Steps:
- Preheat oven to 400 degrees.
- In a medium mixing bowl, mix the turkey, breadcrumbs, egg, salt, pepper, and olive oil.
- Form the meat into balls about 1 1/2 inches in diameter.
- Line a baking sheet with parchment paper. Place the meatballs on the baking sheet and cook in oven for 15-20 minutes, until lightly browned.

SAVORY TURKEY-RICOTTA MEATBALLS
I'm not one to usually do turkey in my meatballs, but I saw this recipe in the recent issue of Cooking Light and decided to try since they are lower in fat. These can be used in spaghetti, substitute for beef in Stroganoff, or serve as as appetizer with warmed marinara dip, as the magazine suggests. Ricotta helps keep the lean ground turkey breast moist. Prepare them in advance, if you like, and store in the freezer for up to three months.

Steps:
- Preheat oven to 375 degrees.
- Combine ground turkey breast with the other ingredients in a bowl and then shape mixture into about 18 meatballs.
- Heat a large nonstick skillet over medium-high heat.
- Coat pan with cooking spray.
- Add meatballs, and brown on all sides.
- Remove from skillet; transfer to a broiler pan coated with cooking spray, and bake for 15 minutes or until done.
- To freeze: Follow cooking directions, then allow meatballs to cool to room temperature.
- Place on a baking sheet, making sure they don't touch one another, and place in the freezer for an hour.
- Next, transfer hardened meatballs to an airtight container, and store in the freezer.
- Thaw meatballs in the refrigerator, then bake at 375 degrees for 20 minutes or untinl heated.

- Heat the oil in a large non-stick frying pan with a lid, then tip in the onion, carrots, celery, garlic and fennel, and stir well. Cover the pan and cook over a medium heat for 8 mins, stirring every now and then. Pour in the passata and stock, cover and leave to simmer for 20 mins.
- Meanwhile, tip the mince into a large bowl. Add the oats, fennel seeds and leaves, the garlic and plenty of black pepper, and mix in with your hands. Lightly shape into 25 meatballs about the size of a walnut. Spray or rub a non-stick pan with a little oil and gently cook the meatballs until they take on a little colour. Give the sauce a stir, then add the meatballs and parsley. Cover and cook for 10 mins until they are cooked through and the veg in the sauce is tender. Serve with broccoli and baby potatoes in their skins, or pasta and salad.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Mix turkey, ricotta cheese, bread crumbs, basil, egg, salt, and pepper together in a bowl until just combined.
- Scoop mixture using a 1-ounce measure onto the prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Flip meatballs and bake until browned and no longer pink in the centers, about 5 minutes more.

- Pre-heat the oven to 400 degrees.
- In a large bowl, combine the ground turkey with the bread crumbs. It may be easiest to mix this with your hands.
- Once combined, mix in the minced onion and garlic.
- Roll the ground turkey mixture into 1 inch balls.
- Heat stove to medium high heat.
- Pour your olive oil into a pan or skillet.
- Once the olive oil begins to bubble at the bottom, place your turkey meatballs in the pan or skillet.
- Let each side of the pan or skillet cook the meatball until it begins to brown on the outside.
- Brown the meatballs on all sides, then place them in a pan or baking dish and cook the meatballs at 400 degrees for about 20 minutes.
- While the meatballs are cooking make the sauce as directed by combining the brown sugar and water until they are fully combined and melted together.
- Add the orange marmalade, honey, barbecue sauce, buffalo sauce and mustard until it's fully combined.
- Continue whisking until all the ingredients are fully mixed together and it begins to bubble, but don't let it come to a full boil or your sauce will be too thick and sticky.
- Pour over the cooked meatballs immediately and serve warm.
