The deep hazelnut flavor and buttery goodness of these cookies belie their simplicity. With just five ingredients, these are some of the easiest cookies to make. Martha made this recipe on episode 704 of Martha Bakes.

1/2 cup blanched hazelnuts
1/2 cup (1 stick) unsalted butter, softened
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 375 degrees. Place hazelnuts on a baking sheet and toast until golden and fragrant, 10 to 15 minutes. Remove from oven and let cool completely. Reduce oven temperature to 350 degrees. Pulse in a food processor until just finely ground (do not grind into a paste).
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy, 2 to 3 minutes. Add flour, ground hazelnuts, and salt; beat until dough forms. If needed, drizzle in 1 to 2 tablespoons water, 1 tablespoon at a time, to help form a dough. Dough can be wrapped well in plastic and refrigerated up to 1 day or frozen up to 3 months (thaw in refrigerator before using).
  • Roll dough into 1-inch balls and transfer to parchment-lined baking sheets, spacing 2 inches apart. Press balls with tines of fork to flatten. Bake until edges are golden, rotating sheets halfway through, 12 to 15 minutes. Transfer sheets to a wire rack and let cookies cool completely. Cookies can be stored in an airtight container at room temperature up to 3 days.

1/2 cup hazelnuts (2 oz)
1/4 cup plus 3 tablespoons sugar
3/4 cup plus 2 tablespoons all-purpose flour
1 stick (1/2 cup) cold unsalted butter, cut into small pieces

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Toast hazelnuts in a shallow baking pan until fragrant and skins begin to loosen, about 6 minutes. Rub nuts in a kitchen towel to remove any loose skins (some skins may not come off) and cool to room temperature.
  • Pulse nuts and 1/4 cup sugar in a food processor until nuts are finely ground, then add flour and a pinch of salt, pulsing until combined. Add butter and pulse until dough just forms a ball. Divide dough in half, then roll dough on a work surface lightly dusted with sugar and flour into 2 (11-inch-long) logs (each about 1 inch wide). Chill, wrapped in plastic wrap, 1 hour.
  • Cut logs crosswise into 1/2-inch slices and arrange rounds 2 inches apart on 2 baking sheets.
  • Bake, 1 sheet at a time, until bottom edges just begin to turn pale golden, 12 to 15 minutes. Cool cookies on sheet 2 minutes. Place remaining 3 tablespoons sugar in a small dish and dip tops of cookies in it, then cool sugared cookies on a rack.

6 ounces unskinned lightly toasted hazelnuts
2 tablespoons vegetable oil
6 tablespoons unsalted butter, at room temperature
1/2 cup dark brown sugar, packed
1/3 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
Pinch of salt

Steps:

  • Preheat oven to 350 degrees.
  • Place the hazelnuts in a food processor and grind coarsely. Reserve 1/4 cup of the hazelnuts. Grind the remaining nuts fine and add the oil. Blend the mixture thoroughly into a hazelnut butter. Set aside.
  • Cream the butter and sugars together until light and fluffy (this can be done in the washed food processor or with an electric mixer in a bowl). Beat in the hazelnut butter, the egg and the vanilla. Mix thoroughly.
  • Sift the flour and add with the baking soda and the salt. Mix thoroughly and add the reserved hazelnuts. Using a teaspoon, form the dough into balls and arrange them 2 inches apart on baking sheets that have been greased or lined with parchment paper. Using the prongs of a fork that have been dipped into flour to prevent sticking, flatten the balls into 1 1/2 inch rounds (Tip: If you want a clearly visible criss-cross design on the cookies, chill dough for 30 minutes before doing so).
  • Bake in the middle of the oven for 8-to-9 minutes or until the cookies are golden. Cool on racks. The cookies will keep for about a week in a sealed jar.

1 cup chocolate-hazelnut spread
2/3 cup cake flour
1 tablespoon orange zest and 1 tablespoon orange juice (from 1 orange)
1 large egg
1/4 teaspoon kosher salt
1/2 cup hazelnuts, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F and line 2 rimmed baking sheets with parchment paper.
  • Add the chocolate-hazelnut spread, flour, orange zest, orange juice, egg and salt to a large bowl. Using a hand-mixer, beat on medium-high until thoroughly combined. Fold in the hazelnuts by hand.
  • Use a 1 tablespoon size ice cream scoop to scoop balls of the cookie dough straight onto the prepared baking sheets, keeping them 2-inches apart. Bake until the edges are set but the tops are still slightly soft, 13 to 15 minutes
  • Let the cookies cool for 10 minutes on the baking sheets before transferring them to a wire rack to cool completely.

HAZELNUT GELT COOKIES

Making homemade gelt, or chocolate coins, is one of my favorite Hanukkah activities, so this is just gelt on top of cookies!

Number Of Ingredients 13

3 1/2 cup (448 grams) all-purpose flour, plus more for dusting
1 1/3 cup (150 grams) ground toasted hazelnuts (see Cook's Note)
1 teaspoon baking powder
3/4 teaspoon kosher salt
1 cup (226 grams) unsalted butter, softened
2/3 cup (137 grams) granulated sugar
2/3 cup (80 grams) powdered sugar
Zest of 1 orange
2 large eggs
1 teaspoon vanilla extract
Gelt, recipe follows
6 ounces (168 grams) chopped white chocolate or white chocolate chips
Gold and blue sprinkles, for garnish

Steps:

  • In a medium mixing bowl, combine the flour, ground hazelnuts, baking powder, and salt and set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter, sugars, and orange zest on medium high until pale and fluffy, 3 to 4 minutes. Add the eggs, one at a time, beating after each, and then add the vanilla.
  • Reduce the speed to low and gradually add the flour mixture, mixing until blended. At this point you can wrap the dough in plastic wrap and refrigerate for an hour, or up to two days, or you can get going on rolling out your dough and cutting out your cookies immediately.
  • When ready to bake, set an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Line two baking sheets with parchment and set aside.
  • Working with half of the dough at a time, roll it out on a lightly floured surface to a thickness that's just under 1/2-inch-thick. Cut out 2 1/2-inch circles with a biscuit cutter and then transfer to a baking sheet, 1-inch apart. Re-roll scraps and cut out more shapes. Bake until they're lightly browned on the bottom; begin checking for doneness at 12 minutes. Let cool on the baking sheets for 5 minutes and then carefully transfer to a wire rack to cool completely.
  • Spoon a teaspoon of chocolate onto the top of each cookie, and spread it around with a spoon into a little Gelt-sized circle. Top with sprinkles and let set in the fridge or at room temperature. Enjoy!
  • To make the gelt, melt the chocolate in a double boiler or in a microwavable bowl in 30-second increments, stirring after each. Melt until it's just smooth and then remove from heat.

OATY HAZELNUT COOKIES

Soft and slightly chewy, these oaty cookies contain apple and maple syrup instead of sugar. They're packed with hazelnuts which are a good source of vitamins and minerals

50g butter , plus a little for greasing
2 tbsp maple syrup
1 dessert apple , unpeeled and coarsely grated (you need 85g)
1 tsp cinnamon
50g raisins
50g porridge oats
50g spelt flour
40g unblanched hazelnuts , cut into chunky slices
1 egg

Steps:

  • Heat oven to 180C/160C fan/gas 4 and lightly grease a non-stick baking tray (or line a normal baking tray with baking parchment). Tip the butter and syrup into a small non-stick pan and melt together, then add the apple and cook, stirring, over a medium heat until it softens, about 6-7 mins. Stir in the cinnamon and raisins.
  • Mix the oats, spelt flour, and hazelnuts in a bowl, pour in the apple mixture, then add the egg and beat everything together really well.
  • Spoon onto the baking tray, well spaced apart to make 9 mounds, then gently press into discs. Bake for 18-20 mins until golden, then cool on a wire rack. Will keep for 3 days in an airtight container or 6 weeks in the freezer.

Steps:

1/2 cup sugar
1/2 cup (packed) golden brown sugar
1 large egg
1 teaspoon vanilla extract
1 12-ounce package semisweet mini chocolate chips (2 cups)

Steps:

  • Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter, hazelnut butter, and both sugars in large bowl until light and fluffy. Beat in egg and vanilla. Beat in flour mixture. Stir in chocolate chips. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead. Keep refrigerated. Soften dough slightly at room temperature before shaping.)
  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Using 1 level tablespoon for each cookie, roll dough between palms of hands into 1-inch balls. Arrange 1 inch apart on prepared sheets. Bake 1 sheet at a time until cookies are golden brown, about 12 minutes. Let cool on sheets on racks 5 minutes. Transfer cookies to racks and cool. (Can be made 5 days ahead. Store airtight between sheets of waxed paper at room temperature.)

HAZELNUT BONBONS (COOKIES)

These are little, round, chocolate dipped butter cookies with a whole hazelnut (filbert) hidden in the center.

1 cup hazelnuts (filberts)
1 cup unsalted butter, at room temperature
1/2 cup confectioners' sugar (also called icing or powdered sugar)
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1/2 teaspoon salt
6 ounces white chocolate
2 teaspoons white vegetable shortening
6 ounces bittersweet chocolate or 6 ounces semisweet chocolate

Steps:

  • Preheat the oven to 350°F Lightly grease 2 baking sheets or cover with parchment paper.
  • Spread the nuts on an ungreased baking sheet and place in the oven. Toast for 8 to 10 minutes, shaking occasionally, or until aromatic. Remove from the oven ad turn onto a terry towel. Rub off the papery skins and set the nuts aside. Don't worry if all the skins don't rub off.
  • In a large bowl with an electric mixer, cream the butter with the sugar and vanilla. Stir in the flour and salt; mix until the dough is smooth and pliable. Wrap about 2 teaspoons of dough around each nut, shaping the cookie into a perfect round. Place on the prepared baking sheets, 2 inches apart. Bake for 10 to 12 minutes, until light brown. Cool. Slide the parchment onto a countertop to cool or remove the cookies and cool on a rack.
  • For dipping the cookies, chop the white chocolate and place in a small heatproof bowl with 1 teaspoon of the shortening. Chop the bittersweet chocolate and place in another small heatproof bowl with the remaining 1 teaspoon shortening. Place the bowls, one at a time, over a saucepan of simmering water until the chocolate is melted. Stir occasionally.
  • Dip the cookies halfway in one of the chocolates. Place on waxed paper to harden. Dip the second half in the other chocolate. When the chocolates have hardened, place the cookies into paper bonbon cups. Store in an airtight tin in a cool place until ready to serve. Makes about 48 bonbons.
