GROUND GYROS PLATTER DELUXE

1 (10-ounce) package frozen spinach
1 sack waffle-cut frozen fries
2 pounds ground lamb
2 tablespoons grill seasoning, a couple of palm fulls
2 1/2 teaspoons ground cumin, divided
1 tablespoon chili powder, a palm full
1 tablespoon coriander, a palm full
1 teaspoon dried oregano, 1/3 palm full
2 to 3 pinches ground cinnamon
1 cup feta crumbles
2 tablespoons extra-virgin olive oil
1 cup Greek yogurt
1 small clove garlic, grated
1/4 cucumber, peeled and grated
1 lemon, juiced
2 vine ripe tomatoes, thinly sliced
1/2 cucumber, thinly sliced
Hot pepper rings, sliced banana peppers, for sandwich garnish
2 tablespoons butter
2 tablespoons all-purpose flour
2 teaspoons Worcestershire sauce
2 cups chicken stock
Salt and freshly ground black pepper
8 pita breads

Steps:

  • Preheat oven to 425 degrees F.
  • Defrost spinach in microwave.
  • Place fries in oven on a baking sheet.
  • Place lamb in a bowl. Add grill seasoning, 2 teaspoons cumin, chili powder, coriander, oregano, cinnamon and feta crumbles. Wring the spinach dry in a kitchen towel and add to lamb. Mix the lamb and form a long 3-inch roll on a baking sheet. Coat lamb with extra-virgin olive oil and bake 20 minutes.
  • Place fries and lamb in oven and roast 20 minutes.
  • Mix yogurt, a grated clove of garlic, cucumber, the juice of 1 lemon and 1/2 teaspoon cumin. Slice and reserve the tomatoes, cucumbers and drain hot peppers, chop and reserve.
  • In a small sauce pot, melt butter over medium heat. Whisk in flour and cook 1 minute. Add Worcestershire sauce and whisk in stock. Season gravy with salt and pepper and reduce 5 minutes.
  • Soften pita over open gas flame or under broiler.
  • Slice lamb loaf into 1/4-inch slices. Spread yogurt on pitas and top with a 2 slices of lamb, tomatoes, cucumbers and hot peppers. Serve 2 pitas per person. Serve fries with gravy for dipping alongside.

FOREST SPREAD AND PATE PLATTER WITH SLICED BAGUETTE

1/2 pound cremini mushrooms, coarsely chopped
1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 large shallot, finely chopped
1/2 teaspoon ground thyme
Salt and pepper
1/2 cup dry Sherry
1 loaf baguette, sliced at bread counter of market
8 ounces pate, available in specialty foods case of market, choose country or mousse-style, any flavor, ask for tastings, to choose
Cornichons, for garnish
Capers, for garnish
Chopped fresh parsley, for garnish

Steps:

  • Heat a skillet over moderate heat. Finely chop mushrooms in a food processor. Add the oil and butter to the skillet, then add the shallots and mushroom bits. Season mushroom with ground thyme, salt, and pepper.
  • Saute shallots and chopped mushrooms until mushrooms are deep brown and tender, about 6 minutes. Deglaze pan with Sherry. Transfer mushroom spread to a small bowl or other serving dish. Place mushroom dish on a platter alongside the store bought pate.
  • Garnish tray with sliced baguette, cornichons, capers, and a sprinkle of chopped parsley. Enjoy bread rounds with a slather of pate topped with mushrooms.

CHEESE PLATTER

1 block Gruyere
1 block Epoisse
1 block buttermilk blue cheese
2 apples, cored and sliced
2 small bunches grapes
Plum and Pear Chutney, recipe follows
1 tablespoon butter
1 cup onion, diced
1 tablespoon ginger, minced
1 large pear, diced
2 plums, diced
1/2 cup sugar
2 tablespoons white wine
2 tablespoons Worcestershire sauce
1 tablespoon white wine vinegar

Steps:

  • Arrange cheeses and fruit on a platter. Serve with chutney.;
  • In a medium heated saucepan add butter, onions, and ginger. Cook until onion softens, about 5 to 10 minutes. Once onion has slightly turned color and softened add the pear, plums, and sugar.
  • Give it a stir. Turn heat down a bit and add the white wine, Worcestershire sauce, and white wine vinegar. Stir well and let it reduce for about 20 minutes. Once a jam consistency occurs, remove from heat and let it cool. Serve with cheese platter.

1/2 pound deli sliced hot sopressata

2 cups good quality large olives, available in bulk bins near deli
2 cups giardiniera hot pickled vegetable salad, drained
2 cups marinated artichoke hearts
1 (16-ounce) jar roasted red peppers, drained and cut into pieces

Steps:

  • Arrange meats and cheeses on cutting board. Pile olives, giardiniera, artichokes and red peppers into small bowls and set along edge of board or serving tray. Place knives near cheeses and seafood forks in olives and veggies to serve. Place an extra ramekin out to collect pits from olives.

1 pound plus 1-ounce lean veal or chicken
8 ounces lean pork
14 ounces fatback
2 teaspoons salt
1 teaspoon white pepper
1/2 cup applejack, calvados, or brandy
1 tablespoon vegetable oil
4 ounces chicken livers, trimmed
1 tablespoon pureed garlic
1/4 cup brandy
2 1/2 bay leaves
1 slice day-old white bread, crusts removed
2 teaspoons ground allspice
1/2 teaspoon freshly grated nutmeg
3 small eggs
1/2 pound bacon, sliced
1/4 pound baked ham
1/4 pound pickled tongue
4 bay leaves for garnish
5 garlic cloves, peeled

Steps:

  • Trim veal or chicken and pork of excess fat and tendons. Skin fatback. Cut into 1 inch cubes and pass through largest hole of a meat grinder. Transfer to a large bowl. Stir in salt, pepper, and applejack. Cover with plastic wrap touching the mixture and refrigerate at least 1 day or as long as 3.
  • After marinating, heat oil in a medium skillet over high heat. Saute livers until well browned, about 1 minute per side. Remove from pan and set aside to cool. Add garlic and cook about 1/2 minute, being careful not to let it color. Reserve garlic with liver.
  • Add brandy and bay leaves to same skillet. Scrape bottom of pan to loosen brown bits and cook over low heat until warm, about 5 minutes. Set aside to cool and remove and discard bay leaves.
  • Dip white bread in warm water to soften. Squeeze out excess moisture. Add to the liver and garlic along with 2 cups marinated ground meat, allspice, nutmeg, and brandy. Stir to combine.
  • Transfer to a food processor, add eggs, and puree until a smooth paste is formed. This paste will bind the pate. Place puree in a large bowl, add remaining ground meat, and combine well. (We recommend using your hands, not a spoon, to combine this dense mixture.)
  • Preheat oven to 325 degrees F.
  • Line a 9 by 5 by 3 inch glass or ceramic loaf pan with bacon slices so they overhang lengthwise, about 3 inches on each end. Slice ham and tongue into 4 by 1/2 by 1/2 inch julienne strips.
  • Spread about a cup of pate evenly over the bacon to cover the bottom. Arrange alternating strips of ham and tongue lengthwise, over the pate. Repeat this procedure, alternating pate with strips
  • of ham and tongue, until pan is filled and top layer is pate. (When the loaf is sliced you will see a regular pattern of solids and pate.) Fold overhanging bacon over the top. (The pate may rise slightly over the top of the pan. That's OK.)
  • Tap pan against a counter to firmly pack. Garnish top with bay leaves and garlic cloves. Cover with 2 layers aluminum foil, tucking edges under to completely seal. Place inside a larger pan and pour in boiling water until it rises halfway up the sides of the pate. Bake 2 hours 15 minutes. Set aside to cool.
  • Place cooled pate on a baking sheet and cover with another baking sheet. Top with some 3 pounds of weights (canned goods or milk cartons are good) and refrigerate overnight or as long as 2 weeks. This compacts the pate and makes it easier to slice.
  • To serve, remove and discard the bay leaf and garlic garnish. To loosen, dip pan's bottom in warm water and run a knife along inside edges. Invert onto a serving platter. Cut into 1/2 inch slices and serve on lettuce leaves.
