HAM 'N' CHEESE MELTS
These one-of-a-kind sandwiches are a new twist on traditional ham and cheese sandwiches without a lot of extra work. Prepared spaghetti sauce provides a tasty dipping sauce.

- On four slices of bread, layer with provolone cheese, ham, then cheese. Top with remaining bread. , In a shallow dish, beat eggs and milk. In another shallow dish, combine bread crumbs and Parmesan cheese. Dip sandwiches into egg mixture, then into crumb mixture. , In a large skillet over low heat, cook sandwiches in butter for 4 minutes on each side or until golden brown. Serve with spaghetti sauce for dipping.

- To assemble each sandwich, layer 1 slice bread, mustard-side up, with 2 slices ham, 2 slices cheese and second bread slice, mustard-side down. Lightly brush butter on top and bottom of each sandwich.
- Heat 10-inch skillet or griddle. Place sandwiches in skillet. Cook over medium-high heat, turning once, until golden brown (5 to 6 minutes).

- Place split croissant on a bakesheet and spread one half with mustard and the other with mayonnaise. Evenly layer bottom slices with ham, 6 oz. Parmesan and Swiss cheese. Turn over top half of croissant and sprinkle remaining Swiss cheese on top. Place bake sheet under broiler for 2-3 minutes or until cheese starts to turn brown and bubbly. Reassemble croissant halves into a sandwich and serve.
- **Notes** (1) Keep a watchful eye when broiling, the cheese goes from brown to burnt in a matter of seconds. (2) Feel free to use Gruyere in place of the Swiss cheese to streamline this for a traditional Croque Monsieur.

These delicious sandwiches make a simple lunch special or a quick dinner seem not so rushed. Perfect for leftover holiday ham and turkey; or you can use deli sliced ham. This recipe was inspired by a beautiful cool spring evening and left over Easter ham. Our 4 year old loved his - I used a mayo and mustard combo for his. - Preheat oven to 350 degrees.
- Mix the butter, mustard, horseradish, worcestershire, onions and poppy seeds in a small bowl.
- Lightly spread the mixture on both sides of the cut roll (do not use it all yet). Place ham on bottom slices, add a little more dressing to the top of the ham and top with mounds of grated cheese. Put the tops on each one.
- Wrap the sandwiches individully in foil and place in a 350 degree oven for 25-30 minutes or until cheese melts.
ASPARAGUS, HAM, AND CHEESE MELTS

- Preheat broiler.
- In a small bowl stir together Parmesan and mayonnaise. Trim asparagus to fit bread and arrange asparagus in a skillet just large enough to hold it in one layer. Add 1/2 inch salted cold water and cook asparagus, covered, over moderately high heat 5 minutes, or until just tender. In a colander drain asparagus well.
- Arrange bread on a baking sheet and butter top of each slice. Broil bread about 6 inches from heat until golden, about 2 minutes. Turn bread over and arrange ham on each slice, folding or trimming to fit if necessary. Arrange asparagus on ham and spread with Parmesan mixture. Broil sandwiches about 3 inches from heat until golden, 1 to 2 minutes.

- Preheat the waffle iron on low.
- Spread a thin, even layer of butter on one side of each piece of bread.
- Pile the cheese and ham on the unbuttered side of one slice of bread, and put the open-face sandwich in the waffle iron as far away from the hinge as possible. (This allows the lid to press down on the sandwich more evenly.) Place the second slice of bread on top, with the buttered side up, and close the waffle iron.
- Check the sandwich after 3 minutes. About halfway through, you may need to rotate the sandwich 180 degrees to ensure even pressure and cooking. If you'd like, you can press down on the lid of the waffle iron a bit to compact the sandwich, but do so carefully-the lid could be very hot. Remove the sandwich from the waffle iron when the bread is golden brown and the cheese is melted.
- Spread the Maple Butter on the outside of the sandwich. Slice in half diagonally and serve.
