SIMPLE SAUTEED FISH WITH GARLIC

Steps:
- Rinse the fish fillets and blot dry with a paper towel. Season with salt and pepper.
- Heat butter in wide sauté pan over medium low heat. Once butter has begun to foam, place the fish into the pan.
- Add garlic. Sauté 1 minute without disturbing the fish.
- Tilt the pan toward you and using a spoon, ladle the garlic butter over the fish. Continue to sauté while basting the fish for 2-3 minutes.
- Using a spatula, gently flip fish. Reduce heat to low, cover pan and cook for 2 minutes.
- Uncover pan, and continue basting fish with butter until it is just cooked through, another minute or two.
- Add 3 tablespoons of parsley and turn off the heat.
- Transfer fish onto a platter or individual plates. Tilt pan and spoon butter sauce evenly over fillets.
- Sprinkle with remaining tablespoon parsley and lemon juice.
JACQUES-IMOS' BLACKENED GULF FISH

- Lightly sprinkle the fish with the Creole Seafood Seasoning.
- In a hot cast-iron skillet over medium heat, melt the butter. Sear the fish on both sides until the flesh is opaque about 3 minutes each side.
- Combine the Hollandaise Sauce with chili-garlic sauce, chipotle powder and crabmeat.
- Serve each fillet with 1/4 cup sauce.
- Combine all the ingredients and mix. Store in a sealed container.
- Melt the butter and margarine in a 1-quart saucepan over low heat. Raise the heat and bring to a rapid boil. Remove from the heat and cool, about 5 minutes. Skim the foam from the top and discard. Pour the butter into a large glass measuring cup and set aside.
- Meanwhile, in a medium stainless steel mixing bowl or in the top of a double boiler, combine all the remaining ingredients. Mix together with a metal whisk until blended.
- Place the bowl over a pan of slowly simmering, but not boiling, water. The bowl must never touch the water. Vigorously whisk the egg mixture, picking up the bowl frequently to let the steam escape. Whip until the egg mixture is very light and creamy and has a sheen, 6 to 8 minutes. This amount of beating is important so that the cooked eggs will better be able to hold the butter. Remove the bowl from the pan of hot water. Gradually ladle about 1/4 cup of the butter mixture (use the top butterfat, not the butter solids on the bottom) into the egg mixture while vigorously whipping the sauce. Make sure the butter you add is well mixed into the sauce before adding more. Continue gradually adding the surface butterfat until you've added about 1 cup.
- So that you can get to the butter solids, ladle out and reserve about 1/2 cup surface butterfat into the sauce, whisking well. Use any remaining bottom solids in another dish. Then, gradually whisk in enough of the reserved top butterfat to produce a fairly thick sauce. The butterfat thickens the sauce, so you may not need to use it all. Serve immediately (or as soon as possible, keeping the sauce in a warm place, such as on top of the stove, until ready to serve).
GULF COAST GARLIC /BUTTER /WINE FISH
I love seafood! This is a great simple alternative to frying! Remember to use FRESH fish, or it will be a little mushy!

Steps:
- Melt butter in skillet with oil. Add garlic, cook maybe 2 min on medium heat.
- Add the fillets, don't crowd them. Depending on your skillet and fillet size, I usually only do 2 at a time.
- Sprinkle seasonings on one side and add herbs to the butter. Add wine and lemon juice now. Cook maybe 5 minute.
- Now flip over and sprinkle other side with seasonings. cook 5 more minute or till flakes with a fork easily.
- Repeat with other fillets. Add more butter and wine if sauce looks like it is disappearing.
- Enjoy!

- In a skillet, melt butter over medium heat. Saute garlic 1 minute. Place fish over garlic, cover and cook over low heat 3 minutes. Carefully turn fish; sprinkle with onions. Cover and continue to cook until fish flakes easily with a fork, about 2-3 minutes. Squeeze lemon over fish. Serve immediately.

- Cut the fish into pieces, not to thin for easy pan-frying. Season the fish with salt, black pepper and cayenne pepper. Coat the fish with corn starch. Set aside.
- Heat up a skillet (preferably non-stick) on medium heat. Add the cooking oil and once the oil is heated, pan-fry the fish in a single layer until both sides turn crispy and golden brown. Use a wooden spatula or tong to gently flip the fish over. Try not to break the fish.
- Remove the fish from the skillet and drain on paper towels. Toss the fish with the Garlic Butter Sauce and serve immediately with lemon wedges.
