CREAMY GREEN BEANS PARMESAN
This is a really old recipe that I've had forever. They're simple but good. You can substitute 1 pound of asparagus for the beans if you'd like.

Steps:
- Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil. Cook uncovered until the beans are bright green and barely tender, about 6 minutes. Drain and set aside.
- Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter. Bring the mixture to a simmer. Gently stir the beans into the mixture to coat; season with salt and pepper. Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

- Step 1 - Prepare the green beans by snipping of the ends, boil in water until tender and drain off the water
- Step 2 - In a small sauce pan, melt the butter
- Step 3 - Stir in the flour, salt and pepper
- Step 4 - Whisk in the milk and stir until the mixture thickens
- Step 5 - Pour the cream over the green beans. Add more salt and pepper to taste and enjoy!

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.
EASY GREEN BEANS WITH CREAM CHEESE

- Drain most of the water from the green beans and add the beans to a saucepan over medium heat. Bring to a boil, reduce heat, and simmer 10 minutes.
- Add butter and cream cheese to the saucepan with the green beans. Stir until melted and well incorporated, 3 to 5 minutes. Season with salt and pepper.

MOM'S CREAMED GREEN BEANS
My mother never measured anything. When asked, it was always a dob of this some of that. She even used a coffee cup as a measuring cup.

Steps:
- 1. Drain water from cans of green beans and place in saucepan
- 2. cover beans with milk. I use 2%, but you can use whole milk
- 3. Add seasonings and margarine
- 4. bring to slow boil, stirring every few seconds
- 5. make a paste with 2 tbls. of flour and enough water to be almost gluelike.
- 6. Slowly add paste to bean mixture, making sure to whisk in with a fork. Boil for at least a minute.
- 7. For added flavor, you can use onions, and/or real bacon pieces.

- In a small saucepan, melt 1 tablespoon butter; stir in cornflakes and set aside. Melt remaining butter in a large saucepan. Stir in flour, salt, pepper, onion and sugar; heat and stir until bubbly. - Place bacon in a large pot and cook over medium heat, stirring occasionally, for 5 minutes. Add onion; cook until bacon just starts to brown a bit, 4 to 5 minutes. Add green beans and stir until coated in bacon grease. Add sugar, salt, seasoned salt, and just enough water to cover. Bring to a boil.
- Reduce heat, cover, and simmer until beans are soft, about 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
- Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
- Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.
