It's easy to make THE BEST sirloin steak marinade with just a few simple ingredients. Quickly whisk the marinade ingredients together, marinate the steak, then toss it on the grill for the best flavor!

⅓ cup balsamic vinegar
⅓ cup low-sodium soy sauce
¼ cup olive oil
¼ cup worcestershire sauce
1 tablespoon honey
1 teaspoon Italian seasoning (click link for homemade recipe)
1 teaspoon dried mustard
2 pounds top sirloin steaks

Steps:

  • Combine the balsamic vinegar, low-sodium soy sauce, olive oil, Worcestershire sauce, honey, Italian seasoning and dried mustard in a gallon size zipper bag or large bowl.
  • Add the steaks and marinade for 20 minutes, or up to 8 hours.
  • Heat a grill over medium high heat, between 350-400 degrees Fahrenheit. Wait until the grill is hot before adding the steaks, to give them perfect sear marks.
  • Remove the steaks from the marinade and discard the marinade. Add the steaks to a hot grill.
  • For a perfect medium rare steak, grill a 1 inch thick steak for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.
  • Remove the steak from the grill and let it rest for 5-10 minutes. This ensures that the juices redistribute throughout the steak, leaving you with the most juicy steak possible!
  • Sprinkle coarse kosher salt or sea salt flakes over the steak and optionally garnish with fresh chopped parsley before serving.

4 boneless sirloin steaks (4 to 5 oz each)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 teaspoons extra-virgin olive oil
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
1 large shallot, finely chopped

Steps:

  • Season steaks on both sides with salt and pepper. Brush with 1 tsp oil. Grill for 3 to 4 minutes per side to make them medium rare.
  • Meanwhile, in a small bowl, whisk together the remaining ingredients.
  • Place steaks on plates and drizzle sauce on them.

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

1/4 cup soy sauce
1 teaspoon peeled and minced ginger
1/2 teaspoon peeled and minced garlic
1 tablespoon honey, molasses or hoisin sauce
Freshly ground black pepper to taste
Juice of 1/2 lime
1 16- to 24-ounce boneless steak (rib-eye, skirt or strip), or one 24- to 32-ounce bone-in steak (rib-eye or T-bone)

Steps:

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

  • Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see grilling procedure.
  • Discard marinade and pat steaks dry.
  • Oil grill rack, then grill steaks, covered only if using a gas grill, turning occasionally, 6 to 8 minutes total for medium-rare. Let rest on a plate, uncovered, 10 minutes.

  • In a small saucepan, combine the soy sauce with the rice vinegar, garlic, shallots, honey and black peppercorns and simmer over moderate heat until the sauce is reduced by one-third, about 15 minutes. Remove the pan from the heat and let the sauce cool to room temperature, then cover and refrigerate it overnight.
  • Strain the sauce into another small saucepan and add the lime juice, 4 tablespoons of the butter and 1 teaspoon of ground pepper. Simmer the sauce over moderate heat for 2 minutes, then remove the pan from the heat and keep the sauce warm.
  • In a large skillet, melt the remaining 2 tablespoons of butter over moderately high heat. When the foam subsides, add the mushrooms and ginger and cook, stirring occasionally, until the mushrooms are browned and almost tender, about 10 minutes. Remove the skillet from the heat, stir in the chives and season with salt and pepper.
  • Season the steaks with salt and pepper. Heat the oil in another large skillet. Add the steaks and cook over high heat until browned, about 2 minutes per side for medium-rare meat. Spoon 2 tablespoons of sauce onto each of 4 plates, set a steak on top and cover with the mushrooms. Pass the remaining sauce at the table.
