Lots of holiday treats are sweet. For a change of pace, I fill goodie bags with my cheese crackers. The recipe has a large yield, but you can freeze the dough logs to bake later. -Heather Necessary, Shamokin Dan, Pennsylvania

2 cups unsalted butter, softened
4 cups shredded sharp cheddar cheese
4-1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 cup finely chopped pecans, toasted

Steps:

  • In a large bowl, cream butter and cheese until light and fluffy. In another bowl, whisk flour, salt, garlic powder and cayenne; gradually beat into creamed mixture. Stir in pecans., Shape into eight 10-in. long logs. Wrap in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake until edges are crisp and lightly browned, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Refrigerate in airtight containers. Freeze option: Place wrapped logs in resealable plastic freezer bags; place in freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand 15 minutes at room temperature before cutting. Bake as directed, increasing time by 1-2 minutes.

1 package (8 ounces) cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup crumbled blue cheese
1 tablespoon butter
1-1/2 teaspoons curry powder
1/2 cup finely chopped pecans
2 tablespoons minced fresh parsley
Assorted crackers

Steps:

  • Beat cream cheese until smooth. Fold in cheddar and blue cheeses. Refrigerate, covered, at least 2 hours., In a small skillet, heat butter over medium heat. Add curry powder; saute 1-2 minutes. Stir in pecans; cook and stir 1 minute. Stir in parsley. Cool slightly. Roll cheese mixture into 2 logs, each about 5 in. long. Roll logs in pecan mixture; refrigerate. Serve with crackers.

One of the best things about cheese it that it can easily be molded into log form -- and foods shaped like logs always mean that you're in for a good time. This version balances the nuttiness of Swiss and the pungency of blue with sweet dates and smoky bacon. If logs aren't your thing, you can always roll this into a ball; if you're absolutely no fun whatsoever, just serve it in a dip bowl.

5 slices thick-cut bacon
1/2 medium onion, chopped finely
Kosher salt
16 ounces cream cheese
1 cup crumbled blue cheese, preferably Stilton
1 cup shredded Swiss cheese
1/2 cup chopped dates
2 tablespoons port wine
3/4 cup finely chopped pecans
Serving suggestions: crackers and mini toasts

Steps:

  • Cut the bacon into 1/2-inch pieces and place in a cold skillet with 1/2 cup water. Turn the heat to high and cook, stirring occasionally, until the water has evaporated and the bacon bits are crispy. Pour the contents of the skillet into a bowl, reserving 2 tablespoons bacon grease in the skillet. Reduce the heat to medium, then add the onion and a pinch of salt and cook, stirring occasionally, until deep golden brown, 7 to 10 minutes. Turn off the heat and allow to cool completely.
  • Combine the cream cheese, blue cheese, Swiss cheese, chopped dates, port wine and onions in a food processor and pulse until smooth.
  • Lay two 18-inch pieces of plastic wrap side by side on the counter, overlapping by about 1 inch. Use a rubber spatula to scoop the cheese mixture into the center. Wet your hands slightly and shape into a rough log, then wrap firmly in plastic and roll a bit to firm up the shape. Twist the ends tightly closed and place in the refrigerator for at least 30 minutes.
  • Meanwhile, return the bacon and grease to the skillet over medium-low heat. Add the pecans and cook, stirring, until they become fragrant, then stir in a pinch of salt and remove from heat. Let cool completely.
  • Transfer the bacon/pecan mixture to a plate. Unwrap the cheese log and roll it in the bacon/pecan mixture to coat, pressing well to make the coating stick. Serve with crackers and mini toasts.

Three 8-ounce packages cream cheese, at room temperature
1 teaspoon minced garlic
1/2 teaspoon ground white pepper
1 1/2 cups shredded pizza blend cheese
1/4 cup smoked paprika
2 cups shredded Cheddar Jack cheese
1/3 cup dried parsley
2 cups shredded extra-sharp Cheddar
6 whole pecans plus 1/3 cup chopped pecans
Crackers, for serving

Steps:

  • Put the cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Add the garlic and white pepper and mix until well combined. Divide the mixture into 3 even portions; return one portion to the mixer.
  • For the pizza cheese log: Add the pizza blend cheese to the cream cheese mixture and mix well until combined. Remove to a work surface and roll into a log with your palms. (The mixture should be slightly sticky but thick enough to easily roll.) Put the smoked paprika on a shallow dish; roll the log in the paprika until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the Cheddar Jack and parsley cheese log: Put a second portion of the cream cheese mixture in the mixer bowl. Add the Cheddar Jack cheese and mix well. Remove to a work surface and roll into a log with your palms. Put the dried parsley on a shallow dish and roll the cheese log in the parsley until completely coated. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour. Clean the mixer bowl and paddle.
  • For the sharp Cheddar pecan cheese log: Put the last portion of the cream cheese mixture in the mixer bowl and add the extra-sharp Cheddar. Mix well. Remove to a work surface and roll into a log with your palms. Place the whole pecans down the length of the cheese log. Put the chopped pecans on a shallow dish, then roll the log in the pecans. Use your fingers to press the pecans more firmly into the cheese. Roll the cheese log in a sheet of plastic wrap and refrigerate until firm, about 1 hour.
  • Unwrap the cheese logs and present on a large platter surrounded by plenty of crackers and cheese knives for easy self-service.

3 shallots, finely chopped
2 teaspoons butter
2 cups (8 ounces) crumbled blue cheese
2 packages (8 ounces each) cream cheese, softened
1/2 cup sour cream
2 tablespoons Cognac or brandy
1/4 teaspoon salt
1/4 teaspoon white pepper
1/2 cup chopped walnuts, toasted
Assorted crackers

Steps:

  • In a small skillet, saute shallots in butter until tender. Remove from the heat; cool. , Meanwhile, in a large bowl, combine the cheeses, sour cream, Cognac, salt and pepper. Add shallots and mix well. Line a 3-cup bowl with plastic wrap. Spread cheese mixture into prepared bowl. Cover and refrigerate for at least 1 hour., Unmold onto a serving plate; garnish with walnuts. Serve with crackers.

This is perfect for the Christmas & New Year's Season. Cheese logs can be prepared ahead & frozen. Thaw in the refrigerator overnight and voila you have a wonderful appetizer, already made! This is originally from Southern Living, March 2004. However, I took the liberty to make some changes, for the good, I hope.

2 (8 ounce) packages cream cheese, softened
8 ounces Cracker Barrel sharp cheddar cheese, cubed
2 (4 ounce) packages blue cheese, crumbled
1/2 small onion, grated
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon ground red pepper
1/4 cup brandy
2 cups pecans, finely chopped, toasted, divided
2 cups finely chopped fresh parsley, divided
pumpernickel cocktail bread or cracker

Steps:

  • Process cream cheese, Cheddar cheese, blue cheese, grated onion, Worcestershire sauce, red pepper & brandy in a food processor 1-2 minutes until combined, stopping to scrape down sides.
  • Stir together cheese mixture, 1 cup pecans and 1/2 cup parsley.
  • Cover and chill for 1 hour.
  • Shape cheese mixture into 4 (7-inch) logs.
  • Combine remaining 1 cup of pecans and 1-1/2 cups parsley.
  • Roll logs in parsley mixture; cover and chill until ready to serve.
  • Serve with cocktail breads or crackers.

1 (10 ounce) package old cheddar cheese, shredded (use Cracker Barrel extra-sharp cheese if possible for this)
1 (8 ounce) package monterey jack pepper cheese, shredded
1 (8 ounce) package cream cheese, softened
1 -2 teaspoon fresh minced garlic
1 -2 teaspoon Worcestershire sauce
Tabasco sauce or cayenne pepper
2 tablespoons finely chopped pimientos (to taste) (optional)
2 cups finely chopped walnuts (can use more if desired) or 2 cups pecans (can use more if desired)
1/4-1/2 cup finely chopped fresh parsley

Steps:

  • In a bowl mix together the first 7 ingredients until well blended.
  • Divide the mixture in half and shape into logs.
  • In a bowl mix together the nuts with the chopped parsley, then divide mixture evenly in half.
  • Roll each log into the nut/parsley mixture (can use more than 1 cup nuts if desired).
  • Cover with plastic wrap and chill for a minimum of 8-24 hours.
  • To freeze; chill the logs for 8-24 hours, then place in the freezer to freeze until firm, remove then wrap in plastic wrap then tightly in foil, place back into the freezer for up to 1 month.
  • Defrost overnight in fridge before serving.
