Coconut Pineapple Shrimp Skewers image

Grilled Pineapple Shrimp Kabobs with an easy citrus shrimp marinade. The best way to cook shrimp! Works for the oven, stovetop, and outdoor grill.

1/2 cup light coconut milk*
4 teaspoons Tabasco Original Red Sauce (or hot sauce of choice)
2 teaspoons soy sauce
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice (from about 2 large limes)
1 pound large shrimp (31-40 count, peeled and deveined (you can use fresh or frozen, thawed shrimp))
3/4 pound pineapple chunks (1 inch-cut)
Canola oil (for grilling)
Freshly chopped cilantro and/or green onion (for serving)

Steps:

  • In a medium bowl, combine the coconut milk, Tabasco sauce, soy sauce, orange juice, and lime juice. Add the shrimp and toss to coat. Cover and place in the refrigerator to marinate for 1-2 hours, tossing occasionally. If using wooden skewers, soak in warm water while the shrimp marinates. Meanwhile, prepare the pineapple if needed.
  • Preheat the grill to medium high heat. Remove the shrimp from the marinade, and reserve the marinade for grilling. Thread the shrimp onto a skewers, alternating with the pineapple.
  • Lightly brush the grill with canola oil, then place the shrimp on the grill. Grill the shrimp for 3 minutes, brushing with the marinade, then turn and cook for an additional 2-3 minutes, brushing with the marinade again, until the shrimp are just cooked through. Remove to a serving plate and garnish with cilantro and green onion. Serve hot.

Fried Shrimp tossed in a tangy-sweet homemade pineapple mango glaze

20 medium Shrimp
2 Eggs
4 tbsp Cornstarch
1/4 cup Sugar
1/4 cup Pineapple Juice
1/4 cup Mango Puree
1 tsp Tapioca Starch
1 tsp Chili Powder
1 tsp Lemon Juice
1 cup water (for the glaze)
Soda Water (to thin the slurry)
Black and White Sesame Seeds
Salt
Neutral Oil (for frying)

Steps:

  • The first thing to do will be to make the mango pineapple glaze. This can be pre-made and stored for up to 2 weeks. In a saucepan on medium heat, combine the Sugar, Water, Pineapple Juice, Pureed Mango, Chili Powder, and Lemon Juice. Stir to combine everything. When it starts to simmer add the tapioca (or potato or corn) starch and continue to stir. As it reduces it will start to thicken. If it is too thick, add some more pineapple juice, or a bit of water until your desired consistency. If it is too thin, add the starch, using just a little at a time. Once it is the perfect consistency, remove from the heat and place in a resealable airtight container and place in the fridge.
  • In another bowl, beat one egg and add the cornstarch. Thin it out with sparkling water until it about doubles in volume, or is a consistency just enough to coat the shrimp and not slide off.
  • Deep-fry these shrimp for about 2 minutes, or until lightly golden. If shallow-frying, about 1 minute per side.
  • Place all the now fried shrimp in a large bowl, add the mango pineapple sauce, and toss well to coat. Garnish with black and white sesame seeds, julliene cucumbers, and thinly sliced shallot.

1/4 cup orange juice
1 large lime (juiced (about 2 tablespoons))
4 cloves garlic (minced)
2 tablespoons chili powder
1 teaspoon honey
1/2 teaspoon hot sauce
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 pound colossal shrimp (12-15 count per pound, peeled and deveined, tail intact)
1 large mango (pitted and diced)
1 cup diced pineapple
1/2 cup finely chopped red onion
1 large jalapeno pepper (finely chopped)
1/4 cup chopped fresh cilantro
1-2 tablespoons honey
Lime juice (to taste)
1/4 teaspoon salt

Steps:

  • Combine marinade ingredients and shrimp in a non-reactive dish or a zipper-top bag. Marinate in the refrigerator for 1 hour.
  • Preheat grill. Grill shrimp 2-3 minutes per side or until firm and translucent, being careful not to overcook.
  • Combine all ingredients in a small bowl. Serve with shrimp.

Nonstick vegetable oil spray
36 uncooked large shrimp, peeled, deveined
4 tablespoons olive oil
4 tablespoons fresh lime juice
1/2 large pineapple, peeled, cut into 1/2-inch-thick slices, cored
3/4 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons chopped seeded jalapeño chili

Steps:

  • Spray grill with nonstick spray; preheat barbecue (medium-high heat). Thread shrimp on 6 skewers. Whisk 2 tablespoons oil and 2 tablespoons lime juice in small bowl to blend; brush mixture over shrimp. Sprinkle shrimp with salt and pepper; let marinate 15 minutes.
  • Sprinkle 12 pineapple slices with salt and pepper. Grill pineapple until just tender, about 4 minutes per side. Transfer to work surface; cut pineapple into 1/2-inch pieces. Place in bowl; mix in onion, cilantro, chili, remaining 2 tablespoons oil and 2 tablespoons lime juice. Season salsa with salt and pepper.
  • Grill shrimp until just opaque in center, about 5 minutes. Serve with salsa.

1 lb uncooked jumbo shrimp
1/2 fresh pineapple
6 tablespoons orange marmalade, divided
1/2 cup water
1 tablespoon soy sauce
couple dashes hot sauce (optional)
1 (6 ounce) box long grain and wild rice blend, prepared according to package directions
1/4 cup snipped fresh cilantro

Steps:

  • In a small saucepan combine 4 tablespoons of the marmalade, water, soy sauce and optional hot sauce; set aside.
  • If skewers are wooden, pre-soak approximately 30 minutes.
  • Cut pineapple into 4 crosswise slices; core and cut each slice in quarters to make 16 small wedges.
  • Peel and devein shrimp.
  • Thread on 4 skewers the shrimp alternating with pineapple wedges. Brush some of the marmalade-soy sauce mixture on shrimp and pineapple.
  • Place skewers on rack of an uncovered grill directly over medium heat. Grill 8 to 10 minutes, turning once, until shrimp are opaque and pineapple is heated through. Remove from heat; cover to keep warm.
  • Heat remaining marmalade-soy sauce mixture and bring to a full boil; remove from heat source.
  • Transfer prepared rice mixture to a serving bowl; stir in remaining 2 tablespoons marmalade and cilantro.
  • Serve kabobs with rice and boiled marmalade-soy sauce mixture.
