Time 55m

Yield 4 servings

Number Of Ingredients 11

12 jumbo shrimp, peeled and deveined
1/2 cup canola oil
10 cloves garlic
1/4 teaspoon crushed red pepper flakes
1 teaspoon ground fennel seed
Salt and freshly ground black pepper
1 stick unsalted butter
1 large lemon, zested and juiced

1/4 cup chopped fresh Italian parsley leaves, plus extra for garnish

Steps:

  • Melt the butter in a large saute pan set over the grates of the grill. Add the lemon zest, lemon juice, tarragon and thyme leaves and cook for 30 seconds. CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Time 15m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp, shelled
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Steps:

  • In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  • Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.

  • Devein shrimp: Using a paring knife or a pair of kitchen shears, carefully make a shallow cut along the back of the shrimp (the curved side), in the middle, from the tip to where the tails begin. Use the tip of your knife or shears to remove the dark vein. Leave shells on the shrimp, loosening them just slightly so that the marinade can seep between the shells and meat.
  • In a medium bowl, whisk together extra virgin olive oil, lemon juice, garlic, shallots, parsley, salt, and pepper. Add shrimp and toss to coat. Cover with plastic wrap and marinate, refrigerated, 45 minutes. Remove from the refrigerator 15 minutes before grilling, and let stand at room temperature (approximately 70 degrees F), for a total marinating time of an hour.
  • When you remove the shrimp from the refrigerator, preheat grill over medium-high heat and lightly oil the grates.
  • In a small saucepan, melt together butter and extra virgin olive oil. Remove from heat, stir in garlic, stirring until fragrant, about 30 seconds. Add salt, lemon juice and zest, scallions, parsley, and red pepper flakes, if using. Keep warm until ready to serve.
