Grilled Stuffed French Bread image

Create an extraordinary cheesy pesto grilled bread thanks to a purchased French loaf. The do-ahead tip makes it even easier!

1 loaf (8 ounces) or 1/2 loaf (1-pound size) unsliced French bread
1/3 cup sun-dried tomato pesto or basil pesto
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • Heat coals or gas grill for direct heat. Spray 18-inch piece of heavy-duty foil with cooking spray.
  • Cut bread loaf diagonally into 12 slices to within 1/2 inch of bottom of loaf. Spread pesto on both sides of slices. Sprinkle slices with cheese. Securely wrap loaf in foil.
  • Grill bread uncovered 5 to 6 inches from medium heat about 10 minutes, turning once, until hot.

Helen's Sausage Stuffed French Bread image

2 (15-inch-long) French baguettes
1 pound bulk breakfast sausage
2 tablespoons chopped jalapenos
1 cup chopped green bell peppers
1/4 cup chopped green onions (green and white parts)
8 ounces cream cheese, at room temperature
8 ounces sour cream
8 ounces grated sharp Cheddar
1 teaspoon Emeril's Original Essence, recipe follows
Chopped fresh parsley leaves, for garnish
Corn or tortilla chips, for dipping, optional
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a serrated knife, trim the upper quarter off the length of the top of each loaf. Hollow out the center of the loaves, leaving a 1/2-inch-thick shell. Set aside.
  • Brown the sausage in a large skillet over medium-high heat for about 5 minutes, stirring to break up any clumps. Add the jalapenos, bell peppers, and green onions. Cook, stirring, until the vegetables are soft, 3 to 4 minutes. Add the cream cheese, sour cream, and Cheddar and stir until completely melted, about 2 minutes. Add the Essence and remove from the heat.
  • Fill the hollowed-out bread loaves with equal amounts of the sausage-cheese mixture and wrap each loaf in aluminum foil. Place the loaves on a baking sheet and bake for 1 hour. Remove from the oven, unwrap, and sprinkle with parsley.
  • Serve warm with chips for dipping, if desired, or cut the bread crosswise into 2-inch slices.
  • Combine all ingredients thoroughly.

hard salami (all your meats should be about equally thick)
pepperoni
ham
green pepper
onion
parmesan cheese
mozzarella cheese
frozen bread dough
cheese or vegetables

Steps:

  • Thaw out bread dough.
  • Dice a green pepper and onion (I make my pieces very small).
  • Roll out dough on a floured surface.
  • (your dough should be just wide enough to put your meats on) Stack the dough with a layer of each meat, cheese, and vegetable.
  • bring edges of dough together.
  • Using a little water will help the dough stick together.
  • Be sure you leave no cracks in the dough, or your cheese will run out when cooking.
  • Bake at 350 until golden brown (usually about 20-26 minutes depending on your oven and thickness of dough).

2 tablespoons olive oil
3 cloves garlic, minced
1 loaf Italian bread
12 ounces shredded Italian cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix melted butter, parsley, olive oil, and garlic together in a bowl.
  • Slice bread diagonally without cutting all the way through; do the same on the opposite diagonal to create cube-shaped sections still attached to the bottom crust.
  • Spoon butter mixture carefully between sections; stuff in shredded Italian cheese blend. Wrap loaf in aluminum foil.
  • Bake in the preheated oven for 15 minutes; unwrap and bake until cheese is melted, about 10 minutes more.

1 loaf of italian bread
1 stick of butter (melted)
1/8 cup of olive oil
3 tsp. minced onion
3 cloves of garlic, grated
1 tbsp. dijon mustard
1 tbsp. poppy seed
3 tsp. chopped parsley (or more if you like)
12 oz. grated cheese (white cheddar / monterrey jack

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Mix the melted butter, olive oil, onion, garlic, Dijon mustard, poppy seeds and parsley in a bowl.
  • 3. Cut the bread into cubes with X slices without cutting all the way through the bottom crust.
  • 4. Pour the butter-onion garlic mixture carefully into those X cracks using a small spoon and over the top of the bread. Fill those delicious cracks with the grated cheese. (It seems like a lot of work and trouble but it's all worth it. Yes.)
  • 5. Wrap the entire loaf with foil, sealing the sides properly and bake for 15-20 minutes. Remove from the oven and unwrap. Bake for another 10 minutes until the cheese is melted and gooey.

1 (1 pound) loaf frozen bread dough, thawed
1 tablespoon olive oil, or to taste
1 teaspoon dried oregano
1 teaspoon dried basil
16 slices mortadella
12 slices provolone cheese
12 thin slices capicola ham
12 slices Genoa salami
1 ½ cups sliced Roma tomatoes
1 ½ cups thinly sliced fresh mushrooms
1 egg, beaten
2 tablespoons sesame seeds

Steps:

  • Place dough in a large bowl. Cover with plastic wrap and let rise in a warm place until doubled, 45 minutes to 1 hour.
  • Roll dough into a 17x20-inch rectangle about 1/4-inch thick on a large piece of parchment paper. Brush olive oil over dough; sprinkle basil and oregano on top. Layer mortadella, provolone cheese, capicola ham, Genoa salami, tomatoes, and mushrooms over dough.
  • Roll dough lengthwise into a log. Brush the top with beaten egg; sprinkle sesame seeds on top. Transfer to a baking sheet. Cover with plastic wrap and let rise until puffy, about 30 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Bake in the preheated oven until golden brown, about 45 minutes. Let cool for 5 minutes before slicing.

This recipe came out of the newspaper when we lived on Cape Cod many years ago. A quick and easy addition to any meal.

1/4 cup butter or 1/4 cup margarine
2 tablespoons fresh parsley, snipped
1/2 teaspoon basil
1 large garlic clove, minced
1/4 cup parmesan cheese, grated
1 loaf French bread, unsliced

Steps:

  • In a microwave safe bowl, combine butter or margarine, parsley, basil and garlic. Heat in microwave until butter is melted. Stir in parmesan cheese. Cut bread in half lengthwise.
  • Place bread, cut side down on an uncovered grill directly over medium coals. Grill about 2 minutes or until lightly toasted. Turn cut side up. Brush with butter mixture. Grill for 1 to 2 minutes longer.
  • To serve, cut into 2 inch slices.
